2 cups (300g) flour (, plain/all purpose)
1/2 cup (100g) white sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1/3 cup (30g) rolled oats (Note 1)
3 - 4 large granny smith apples (, cut into 0.7cm / 1/3" dice(~4 cups))
1/4 cup (35g) plain flour ((all purpose flour))
1/4 cup (50g) white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
Salted caramel sauce
Ice cream!

Steps:

  • Preheat oven to 180C/350.
  • Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
  • Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.
  • Add egg and mix.
  • Lightly press 2/3 of the mixture into the bottom of the pan.
  • Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.
  • Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.

2 large apples, diced for 2 cups (keep the cores and any leftover apple pieces)
1 ½ cups whole grain flour (I used whole grain einkorn)
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
1 ½ tsp ground cinnamon
8 Tbsp butter
1 cup rolled oats
¼ cup honey
1 tsp lemon juice
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350F. Line a 9" x 9" glass baking dish with parchment paper.
  • In a large bowl or the bowl of a stand mixer, combine the flour, salt, baking powder, baking soda, and cinnamon. Cut in the butter using two knives, your fingers, or the paddle blade. The mixture should resemble coarse breadcrumbs. Scoop out 1 cup and set aside.
  • Add the oats and honey to the mixture in the bowl and use your fingers to mix together without creating a paste.
  • Pour this mixture into the prepared pan and press down firmly and evenly to create a crust.
  • Add apple cores and leftover apple pieces (if any) plus lemon juice and vanilla extract to a food processor blender and process until the mixture looks like thick applesauce. You will need about ¼ cup of this mixture, so add additional apple pieces if necessary.
  • In a medium bowl, combine the pureed apple mixture with the diced apples and stir well. Pour evenly over the crust.
  • Sprinkle the reserved crumb topping over the apples, pressing down lightly.
  • Bake for 25-30 minutes, or until the topping is golden brown. Remove the bars from the oven and let them cool completely at room temperature, about 2 hours.
  • For best results, place in the refrigerator for 2 hours before cutting.
  • Makes 16 bars.

1 and 1/2 cups old fashioned oats

Steps:

  • Preheat oven to 350 degrees (F). Line a 9x13-inch pan with parchment paper, allowing paper to overhang on two of the ends. Spray with non-stick baking spray and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld electric mixer, beat together the butter and both sugars until light and fluffy, about 2-3 minutes. On low speed, add flour and mix until combined. The dough will be crumbly.
  • Press dough evenly into the bottom of the prepared pan. Bake for 16 minutes. Remove from oven and set on a cooling rack to cool as you prepare the filling. Keep oven temperature at 350.
  • In a large bowl, combine apples and lemon juice and toss to coat. Add in the cinnamon, flour, sugar, and salt. Toss until apples are evenly coated. Arrange apples in an even layer on top of the partially baked crust.
  • Cut the butter into small cubes.
  • In a large bowl, combine the oats, both sugars, cinnamon, and flour. Add in the cubed butter and, using two forks or a pastry blender, cut the butter into the dry ingredients until mixture resembles a coarse meal.
  • Sprinkle the topping evenly over the apples.
  • Place the pan in the oven and bake for 45 to 50 minutes, or until the top is golden brown and the apples are bubbling.
  • Remove from the oven and place the pan on a cooling rack. Cool for at least 1 hour before serving.

Steps:

Steps:

  • Preheat oven to 350 degrees. Prepare a 9 by 9 inch baking dish by spraying it with nonstick spray and lining it with parchment paper, leaving excess hanging over the sides for easy removal later.

  • Pre-heat oven to 350 degrees. Line 13 x 9 baking dish with foil and lightly coat with cooking spray
  • Combine flour, oats, brown sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl
  • Cut in 1 cup of butter (2 sticks, softened) and mix until nice and crumbly
  • Spread 1/2 of the crumb mixture onto the bottom of your foil-lined baking dish, press lightly to cover the entire bottom

Steps:

  • Preheat oven to 375 degrees. Line an 8 x 8 baking dish with parchment so the paper hangs over all four sides. Set aside.
  • Stir together oats, 3/4 cup flour, brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon cloves, salt and baking soda in a medium bowl. Pour melted butter into oat mixture and stir to combine. Place 1 cup oat mixture aside and press remaining into bottom of baking dish.
  • Combine apples, granulated sugar, lemon juice, remaining 1 tablespoon flour, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves. Stir to evenly coat. Dump apples on top of crust in baking dish and gently even them out. Crumble remaining 1 cup oat mixture on top of apples. Cover foil and bake for 30 minutes. Remove foil and bake for another 25-30 minutes or until crumb is golden brown. Cool on a wire rack.
  • Slice bars once completely cool and cover loosely until ready to serve.

1 cup (140 g) medjool dates (pitted)
¼ cup (75 g) honey (or agave nectar for vegan)
¼ cup (60 g) creamy peanut butter
1 cup (100 g) dried apples
1 teaspoon vanilla extract
1 teaspoon cinnamon powder

Steps:

  • Line a 8x8 inches (20x20 cm) baking pan with aluminum foil or parchment paper, leaving the foil to extend up the sides. This will make it easier to remove the granola bars from the pan. Brush lightly with oil to prevent sticking.
  • Spread the rolled oats and chopped pecans on a baking tray and toast them for 10 minutes, until they are slightly golden.
  • Transfer to a large bowl.
  • Process the dates in a food processor until they become a ball.
  • Add the cinnamon powder, crushed dates and chopped dried apples to the oats mixture.
  • In a small saucepan over low heat, warm the vanilla, honey, and peanut butter until runny.
  • Pour over the dry mixture and mix well until everything is evenly coated and the dates are disperse throughout.

3 large Granny Smith apples, peeled and thinly sliced
3 large Honey Crisp apples, peeled and thinly sliced
1 tbsp. apple cider vinegar
1/4 c. light brown sugar
1 tbsp. cornstarch
1 1/2 tsp. apple pie spice
Pinch of salt
3 tbsp. pure maple syrup
1 tbsp. unsalted butter
1 oz. cream cheese, softened
3/4 c. powdered sugar, sifted
1 tbsp. milk or heavy cream

Steps:

  • For the crust and topping: Preheat the oven to 350˚. Spray a 9 x 13 inch baking pan with cooking spray. Line the pan with parchment paper. (This will make it easier to lift the pie bars out of the pan after baking.)
  • Beat the butter, sugars, and vanilla in a large bowl with an electric mixer for 4-5 minutes, until combined and airy. Scrape down the sides and bottom of the bowl. Add the flour and salt to the bowl and mix at low speed until combined.
  • With lightly moistened hands, press about 3/4 of the crust mixture along the bottom and slightly up the sides of your prepared pan. Refrigerate for 15 minutes. Place the remaining 1/4 of the crust mixture (about 1 1/2 cups) in the fridge until needed.
  • Transfer the pan to the preheated oven and bake until the crust is golden brown, 20 to 25 minutes. Place on a wire rack to cool.
  • For the filling: Toss the apple slices and vinegar together in a large bowl. Add the brown sugar, cornstarch, apple pie spice, and salt and toss well to coat. Spread the apples evenly over the crust, leaving a small border around the edges.
  • Tear the reserved crust mixture into small pieces. Using your hands, combine the pecans with the dough and scatter the mixture evenly over top of the apples. Bake for 1 hour, rotating pan halfway through, until the apples are fork-tender and the topping is golden brown. Cool completely in the pan, about 1 to 2 hours
  • For the glaze: Combine the maple syrup, butter, cream cheese, powdered sugar, and milk or cream in a medium bowl. Whisk until combined and smooth. Once the bars are cool, lift from the pan using the parchment paper overhang and place on a cutting board. Drizzle evenly with the glaze. Cut into squares and serve.
