¼ cup confectioners' sugar
1 cup white sugar
½ cup butter, softened
3 eggs
3 cups chopped apples
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup sour cream
¾ cup chopped walnuts
2 ½ tablespoons white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tub pan.
  • Beat cream cheese and confectioners' sugar in a bowl until smooth; set aside. Beat 1 cup white sugar and butter in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in apples and vanilla extract.
  • Combine flour, baking soda, and baking powder in another bowl; stir into apple mixture. Add sour cream, stirring until batter is just combined. Pour half the batter in prepared tube pan. Spread cream cheese mixture over batter in tube pan; cover with remaining batter.
  • Mix walnuts, 2 1/2 tablespoons white sugar, and cinnamon in a small bowl; sprinkle over batter.
  • Bake cake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes.

1/2 cup fresh or frozen cranberries
1 cup powdered sugar, divided
1 tsp. flour
1/4 tsp. ground cinnamon
1 Tbsp. butter, cut into small cubes
1 tsp. fresh lemon juice
1 can (8 oz.) refrigerated crescent dinner rolls, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 egg white
1/2 tsp. vanilla
1-1/2 tsp. milk
2 Tbsp. chopped toasted pecans

Steps:

  • Heat oven to 350°F.
  • Toss apples with cranberries in large microwaveable bowl. Combine 1/2 cup powdered sugar, flour and cinnamon. Add to fruit; toss to evenly coat fruit with sugar mixture. Add butter and lemon juice; mix lightly. Microwave on HIGH 7 min., stirring after 4 min. Set aside until ready to use.
  • Unroll crescent dough; separate into 2 squares. Press 1 square onto bottom of 8-inch square pan sprayed with cooking spray, firmly pressing perforations and seams together to seal.
  • Beat cream cheese, egg white, vanilla and 1/4 cup of the remaining powdered sugar in medium bowl with mixer until blended; spread onto crust. Cover with fruit mixture.
  • Press remaining dough into 8-inch square, firmly pressing perforations and seams together to seal. Place over fruit mixture.
  • Bake 25 to 30 min. or until golden brown; cool slightly.
  • Mix milk and remaining sugar until blended; drizzle over dessert. Sprinkle with nuts.

Steps:

  • Heat oven to 425°F. Lightly grease cookie sheet. In medium bowl, beat 8 ounces cream cheese, 1/3 cup sugar, the lemon peel and lemon juice with electric mixer on medium speed until smooth; reserve.
  • In large bowl, place Bisquick mix. Cut in 3 ounces cream cheese and the butter using pastry blender (or pulling 2 table knives through ingredients in opposite directions) until crumbly. This addition of sour cream in this coffee cake makes it so moist and delicious! This is one of my all-time favorite cake recipes, I have even made this cake with fresh blueberries adding in 1 tsp almond extract to replace the vanilla, or you can even add it in when using apples --- this cake is fantastic without the topping and just used as a white cake --- I usually double the brown sugar topping and spread half of the cake batter in the pan then sprinkle half of the topping then top with remaining batter, the batter will not really cover the topping mix if you are using a 13x9-inch pan but not to worry it will bake together just fine and besides you will be sprinkling the remaining batter on top anyway! --- serve this with whipped cream or ice cream, *SO* delicious!

½ teaspoon fine sea salt

1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs

Pour remaining batter into tube pan and sprinkle remaining oat mixture over top of cake.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 40 minutes. Let cake stand in the pan for 30 minutes. Loosen sides of cake with a thin spatula or knife. Let cake cool completely and lift from pan.

This cake is buttery delicious, it has a cream cheese layer in the middle and topped with a crumb topping, I always double the topping! You can also bake this cake in an 11 x 7-inch baking pan --- top baked cake with sweetened whipped cream or vanilla ice cream if desired :)

1 cup butter (no substitutes)
1 cup sugar
2 eggs
1/4 cup sour cream
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 (8 ounce) packages cream cheese, softened
1 egg yolk
1 cup sugar
1 teaspoon vanilla
1/4 cup sugar
1/2 cup flour
1/4 cup butter (semi-soft)

Steps:

  • Preheat oven to 350 degrees (oven rack set to second-lowest position).
  • Grease a 13 x 9-inch (or an 11 x 7-inch, baking time will need to be increased slightly).
  • Cream butter with sugar (about 3-4 minutes), add in eggs and sour cream; beat well (about another 3 minutes).
  • In a bowl, sift together flour, baking powder and salt.
  • Add the flour mixture to the creamed mixture; beat well until combined (batter will be thick).
  • Spread more than half of the batter in the prepared baking pan.
  • In another bowl, cream together all filling ingredients, then carefully spread over the cake batter.
  • Spoon the remaining cake batter over the top of the cheese mixture (it doesn't have to cover the cake batter completely, I just dot tablespoonfuls over the batter).
  • For the topping (I most always double the ingredients) mix all ingredients, and sprinkle over cake.
  • Bake for about 50-55 minutes or until middle feels set and not jiggly.

3 cups apples (about 3 medium)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons cinnamon

Steps:

  • Grease 9" springform pan.
  • Preheat oven to 350 deg. F.
  • Cream butter with sugar, then add cream cheese and beat until smooth and creamy. Stir in eggs and vanilla.
  • In small bowl, mix flour bakng powder and salt.
  • Peel and slice apples.
  • In small bowl, mix 1/4 cup sugar with cinnamon.
  • Beat flour mixture into cream cheese mixture.
  • Add cinnamon mixture to apples and stir until coated.
  • Stir apples into batter.
  • Pour all ingredients into greased pan and bake 1 hour.
