This is a Filipino snack. We love this!! Got this from a Philippine Cookbook but did some modifications because of the measurements and the availability of the ingredients, I have to substitute some of them.

1 1/2 cups sticky rice (Mochiko rice, reserve the 1/2 cup)
1 cup unsweetened flaked coconut
1 cup brown sugar
2 cups canola oil
1/2 cup water

Steps:

  • To make the dough: Mix in mochiko rice and coconut flakes.
  • Add water little by little until you can form the dough into small balls.
  • Dust the board with rice flour to prevent the dough from sticking.
  • Pull each ball to form an 8 inch cylinder dough.
  • Twist the dough into a number 8. Or like a pretzel.
  • To make the caramel syrup:In the mean time while the dough is frying, melt the brown sugar in 1 cup of oil.
  • Lower heat until it reaches the caramel syrup stage.
  • Dip each dough twist to coat with the syrup.
  • Serve hot and enjoy.

1 cup Karo syrup (light corn syrup)
1 cup white sugar
1 cup peanut butter
6 cups Rice Krispies, cereal
6 ounces chocolate chips
6 ounces butterscotch chips

Steps:

  • Mix Karo syrup and sugar in large saucepan. At first bubble remove from heat. Stir in peanut butter and cereal.
  • Spread mixture in 9x13 buttered pan.
  • In small saucepan melt two kinds of chips. Spread on mixture.
  • Cool on counter.
  • Refrigerate when chocolate hardens.

1 frozen puff pastry sheet, thawed according to package instructions (from a 17 1/4-ounce package)
1/2 cup apricot jam, melted (6 ounces)
1/4 cup confectioners' sugar
1 tablespoon heavy cream or 1 tablespoon milk
2 teaspoons fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 425°F Line a baking sheet with parchment paper.
  • Roll out pastry on a lightly floured surface into a 12- by 10-inch rectangle, then cut in half lengthwise. Cut each half crosswise into 4 (5- by 3-inch) strips (for a total of 8 strips).
  • Spread each strip with 1/2 tablespoon jam, then fold strips in half lengthwise to form 1 1/2-inch-wide strips. Twist each strip 3 times and place on baking sheet.
  • Bake until golden brown, 15 to 20 minutes. Transfer twists to a rack set over a sheet of parchment. Stir together confectioners sugar, cream, and lemon juice until smooth, then brush over warm twists. Serve warm.

  • Gently pour the milk mixture into the flour mixture, mix then knead until dough is smooth. Form into a round dough then place it back into the bowl. Cover bowl with damp cloth then let it rest for 15 minutes.
  • Remove your dough from the bowl, cut dough equally in half. Flatten one of the dough into 8 inch width then cut into 1/2 inch strips, roll this strip to further slim it down to desired size. Bring end together then twist. Place twisted dough in a floured flat surface. Repeat the whole process with the remaining dough. Let it rest for 20-30 more minutes.
