Celery juice-all the rage! But still kind of a hard sell. With apple, parsley, apple cider vinegar, and a dusting of black pepper, things start to get interesting. Better yet: It also tastes good with gin.

Number Of Ingredients 6

3 Granny Smith apples, scrubbed, coarsely chopped
½ bunch parsley, coarsely chopped (leaves and stems)
5 celery stalks with leaves attached, coarsely chopped, plus more for serving
¼ cup apple cider vinegar
Pinch of kosher salt
¼ tsp. freshly ground black pepper, plus more for serving

Steps:

  • Purée apples, parsley, 5 celery stalks, and 3 cups water in batches in a blender. Strain through a fine-mesh sieve into a pitcher, gently pressing with a spoon to extract as much liquid as possible (alternatively, run apples, parsley, and celery through a juicer and mix with 3 cups water). Stir in vinegar, salt, and ¼ tsp. pepper and add more celery stalks.
  • To serve, pour 4 oz. juice into an ice-filled glass and sprinkle with pepper.

I grew up on raw fresh juice and this is one of my favorites. It's good to drink in the winter and in cold and flu season to ward off "bugs" or to help get better from one. It's also good anytime as it's all around good for ya ;) They say drinking fresh juice in the first 7 minutes is the best to really get all the nutrients.

8 apples (juicy apples are better but use whatever you have they are all good for ya)
3 celery ribs
2 sprigs parsley

Steps:

  • chop up the apples into 4 and core if your juicer requires it.
  • juice half the apples.
  • juice the celery and the parsley.
  • juice the rest of the apples.
  • serve right away as is or over ice.
  • enjoy and feel better!

Make this simple celery juice your own by adding green chilli for a bit of heat, turmeric, or a little maple syrup to sweeten, if you like

1 head of celery (about 500g)
1 green apple (about 120g), peeled, quartered and cored
½-1 lemon, juiced
20g ginger, finely grated

Steps:

  • Separate the celery stalks and wash well. Trim the root ends and roughly chop, keeping one of the tender, young stems whole to serve.
  • Put the chopped celery, apple, half the lemon juice and ginger in a food processor or blender and pulse to finely chop. With the motor running, add 50-100ml cold water and blend until smooth.
  • Strain the juice through a fine mesh sieve into a jug, pressing down with the back of a spoon to extract all the juice. Cover and chill or serve straight away. Stir the juice well, add a squeeze more lemon if you like, and serve in glasses with a piece of the reserved celery stalk.
