Chicken thighs cooked in a luscious, gluten-free creamy sun-dried tomato and basil sauce. Served with rice, it is the perfect fuss-free dinner.

8 chicken thighs
1 onion (thinly sliced)
3 garlic cloves (crushed)
½ cup sun-dried tomatoes (in olive oil, sliced)
1 cup basil leaves
1 cup chicken stock
1 cup cream
2 teaspoons corn flour mixed with 1 tablespoon milk
juice of ½ lemon
salt & pepper to taste

Steps:

  • Heat a large, deep pan over medium-high heat and add a splash of oil.
  • Brown the chicken thighs on both sides until they turn a deep golden brown and are cooked 3/4 way through.
  • Remove the chicken from the pan and set aside.
  • Add a bit more oil to the pan if necessary then saute the onion until soft and glossy.
  • Remove the stalks from the basil leaves and chop finely. Reserve the leaves for later.
  • Add the basil stalks and garlic to the onions and saute for 30 seconds before adding the sun-dried tomatoes. Saute for another minute then pour in the chicken stock and cream.
  • Allow to come to a simmer then place the chicken back in the pan and cover.
  • Allow to simmer for 10-20 minutes, checking regularly to make sure the liquid hasn't cooked away (top up with more stock if necessary), until the chicken is cooked through.
  • At this stage, the sauce will probably have reduced but if you want more sauce (to serve with rice, for example), add another cup of stock (and more cream if you wish) then add the cornflour and milk mixture. Allow to simmer for 10 minutes until thickened.
  • Slice the basil leaves and add them to the chicken along with the lemon juice, salt and pepper before serving.

1 1/2 lb. chicken thighs skinless and boneless
Salt and black pepper
1 tablespoon olive oil
1/2 cup white wine
1 cup chicken broth/stock sodium free
1 cup cup heavy cream
2 tsp Dijon mustard
1/2 teaspoon sea salt
1 teaspoon Italian seasoning
1 teaspoon onion powder
2 teaspoons garlic powder
1/2 cup sun dried tomatoes chopped
1/2 cup parmesan grated
1 cup basil leaves

Steps:

  • Pat the chicken thighs dry with paper towels.
  • Preheat a large skillet on medium high heat. Add olive oil and then add the chicken and cook until golden brown on both sides. About 6-8 minutes total. Remove onto a plate.
  • Chop your sun-dried tomatoes and add them to the pan. Cook for about 2 minutes
  • Add white wine and simmer for 2 minutes to let the alcohol evaporate.
  • Now add chicken stock heavy cream, Dijon mustard, salt, Italian Seasoning, onion and garlic powders. Bring the mixture to a low simmering point and then add Parmesan cheese. Use a whisk or a wooden spoon and mix it in until you have a smooth mixture.
  • Add basil leaves and cook until wilted.
  • Return chicken to skillet and allow it to warm up for an additional 5 minutes.
  • SERVE chicken with sauce on top.

Steps:

  • Season chicken thighs with salt and pepper.

4 ounces goat cheese with garlic and herbs
¼ cup chopped sun-dried tomatoes with herbs (such as California Sun-Dry®)
¼ cup flour
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 ½ pounds boneless, skinless chicken thighs
4 tablespoons butter, divided
2 tablespoons olive oil
¼ cup chopped fresh sage
½ cup chicken broth
½ cup white wine
lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine goat cheese and sun-dried tomatoes in a small bowl; set aside. Combine flour, salt, and pepper in a second small bowl and set aside.
  • Place chicken thighs on a cutting board and layer a piece of plastic wrap on top. Pound thighs slightly with a meat mallet to flatten. Divide goat cheese mixture among all of the flattened chicken thighs; spread evenly down the middle. Starting at the short end, roll up the chicken thighs and secure with toothpicks or kitchen twine.
  • Dredge chicken rolls in the flour mixture, shaking off any excess flour, and set on a plate. Repeat until all of the rolls have been coated with flour.
  • Heat 2 tablespoons of butter and olive oil in a skillet over medium-high heat. Place chicken thigh rolls in pan and cook until all sides are browned, about 2 minutes per side. Transfer rolls to an oven-safe dish.

If I am not in a rush I season the chicken first with salt and pepper then brown in oil, and transfer to the baking dish, the oven-baking time will be less, and I think that the chicken definately tastes better if it is browned first. I have made this using other brands of prepared mustard but for some reason French's brand is the best! To save time you can prepare the sauce the evening or day before and chill. You can use any chicken pieces that you desired, I usually use a whole cut-up chicken in place of the 10 thighs, although I have 10 thighs listed you can sneak a couple more thighs in the dish! If you don't brown the chicken first, this makes a quick weeknight meal. I have made this many times, it is easy and delicious! Adjust all sauce ingredients to suit taste.

12 chicken thighs (can use less or even a couple more)
3 tablespoons butter
1 tablespoon vegetable oil
1 medium onion, finely chopped

  • In a saucepan melt butter and then saute the onions, garlic, thyme and dried chili flakes for about 4-5 minutes.
  • Add in the crushed tomatoes, brown sugar, cider vinegar and Worcestershire sauce (do not add in the mustard until the end of cooking!) mix to combine, season with salt, black pepper; bring to a boil, and simmer for 10-15 minutes.
  • Remove from heat and add in the mustard; mix to combine.
  • Pour the sauce over the chicken in the baking dish, the turn over the chicken once to coat in sauce making certain to leave the skin side up.
  • Bake uncovered, basting with sauce every 30 minutes (total cooking time should take about 1 hour and 10 minutes, if you have browned the chicken first then baking time will be less).

This is a quick and easy meal to make. I have cooked chicken with sun-dried tomato and oregano dressing for some time, but found a recipe in Chatelaine with the dried seasonings added. Original recipe called for 4 cloves of garlic, but I found that a bit much. I would only use 4 cloves if they were small. Wonderful flavor. Serve this with steamed green beans and rice pilaf.

4 chicken legs or 4 chicken thighs
1/2 cup bottled sun-dried tomato and oregano salad dressing
1 (1 tablespoon) bottle chopped garlic or 2 garlic cloves, minced

Steps:

  • Using sharp knife, make 2 or 3 slashes in each piece of chicken.

  • Turn chicken occasionally, while grilling 20 to 30 minutes.
  • Before serving sprinkle with basil.
  • Can be done in the oven at 350 degrees for approximately.
  • 40-45 min depending on size of chicken pieces.
