APPLE PIE FILLING
A versatile Pie and Strudel filling that can be canned or frozen. Ideal for apple and quark filled pastry pockets, known in Austria as Apfel Topfen Taschen. Adapted from the wonderful Ball Blue Book.

Steps:
- Wash, peel and slice apples. Treat to prevent darkening - either with a produce protector or 2 tsp of lemon juice.
- Combine sugar, flour and spices. Rinse and drain apples; stir into sugar mixture.
- Let stand until juices begin to flow, about 30 minutes. Stir in lemon juice and zest.
- Cook over medium heat until mixture begins to thicken. Remove cloves, ladle pie filling into plastic freezer jars or containers, leaving 1/2 inch head space.
- Cool at room temperature, not to exceed two hours. It is now ready to be used in a recipe or else, seal, label and freeze.

APFEL TOPFEN TASCHEN - APPLE AND QUARK FILLED PASTRY POCKETS
These delicious treats are found in bakery shops throughout Austria and Bavaria and are enjoyed as part of a continental breakfast or brunch with a cup of coffee. They are best made with authentic german quark "Recipe #476124", but ricotta or even cream cheese can be substituted. Use canned apple pie filling or check out "Recipe #481442" for a homemade pie filling. This pastry can also be made without the apple pie filling, just increase the amount of cheese and sugar to taste.

Steps:
- Thaw the puff pastry, unwrap and cut into 8 equal squares.
- Cream the quark together with the sugar, vanilla extract, egg and drained raisins, if using, fold in the pie filling and stir to combine. If using ricotta, drain first, the mixture should not be runny.
- Put a tablespoon of filling onto each pastry square, pick up the two opposing dough corners first, then the two other corners, press all four together in the center to make a sealed pocket.
- Brush with milk and place on a prepared baking sheet, preheat oven to 3125F and bake until puffed up, golden brown and delicious.
- Let cool slightly, dust with confectioners sugar.

- Preheat the oven to 400 degrees F.
- Line a heavy large baking sheet with parchment paper. Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes. Using a small knife, cut out the center of the pastry shells.
- Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl. Stir in the spinach, Fontina cheese, Parmesan, and green onions. Spoon the spinach mixture into the baked pastry shells. Bake until the pastries are golden brown and the filling is hot, about 25 to 30 minutes. Transfer the pastries to a platter and serve.

RASPBERRY PASTRY POCKETS
A Gale Grand recipe courtesy of the Food Network that I tweaked to lower the fat and calories somewhat. A few mini-chocolate chips added in with the cream cheese filling will really take this over the top.

- Thaw the puff pastry and roll the sheet out on a lightly floured surface to make it a thinner and get to approximately a 12-by-18 inch rectangle.
- Chill, covered with plastic wrap to let rest.
- With a mixer, blend the cream cheese, egg, Splenda, vanilla extract and lemon rind.
- Make an egg wash by whisking together the remainin egg and water in a small bowl.
- Cut the puff pastry into 3-inch squares (you should have 24 squares).
- Lay a square of pastry on a work surface and paint the edge with egg wash. (I found it easier to just "build" them on the baking pan rather than trying to move them after assembly.).
- In the center of the pastry, place 1 tablespoon of cheese filling and 3 raspberries. Lightly press the berries into the cheese mixture.
- Paint the edge of a second square of pastry with egg wash, place it on top of the filling and carefully press the edges together to seal them well. (I used a pie edge crimping tool or whatever than roll-y thingy is called.).
- Place pockets 1-inch apart on a parchment paper lined sheet pan and keep chilled. Repeat with the remaining pastry.
- When they're all done, brush the top surface with egg wash and sprinkle with sugar.
- Bake in a pre heated at 375 degree F oven until golden brown, about 20 to 25 minutes.

- In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. TURKEY - BACON PUFF PASTRY POCKETS

- Preheat oven to 400. Lightly butter or spray a cookie sheet.
- Place a paper towel on a microwavable plate and lay the bacon slices in the center. Fold the excess paper towel over the bacon and microwave on high for two minutes or until bacon is crisp.
- Unfold the puff pastry and cut it lengthwise into thirds. Cut each piece in half. Place three rectangles on the cookie sheet and place two turkey slices on each piece, leaving 1/4 inch border around the entire edge. Spread a little mustard over the turkey and top with the cheese. Cut the bacon slices in half. Arrange on top of the cheese. Cover with the remaining dough and press on all sides with a fork to seal the edges.
- Bake the pockets for 15-18 minutes, or until golden brown.
