Vegetable oil, cooking spray
2 large eggs
1 large egg yolk
1/2 cup granulated sugar
1 packed teaspoon finely grated orange zest
1 1/2 teaspoons anise seeds, lightly toasted
1/2 cup extra-virgin olive oil
2/3 cup cake flour (not self-rising)
1/2 teaspoon coarse salt
1/2 teaspoon baking powder
1/4 cup confectioners' sugar, for dusting

Steps:

  • Preheat oven to 325 degrees. Coat four 1-cup mini Bundt pans with cooking spray. Whisk eggs, yolk, granulated sugar, orange zest, and anise seeds in a medium bowl until foamy. Add oil in a slow, steady stream, whisking constantly until combined.
  • Whisk flour, salt, and baking powder in a small bowl. Fold into egg mixture in 3 additions. Divide batter evenly among pans, and bake until light gold and testers inserted into centers come out clean, about 20 minutes. Let cool in pans for 10 minutes. Invert cakes onto wire racks, dust with confectioners' sugar, and serve warm.

1/4 teaspoon salt
1 lb butter
2 cups sugar
1 teaspoon vanilla
4 tablespoons anise seeds, ground
5 eggs
2/3 cup sour cream (I use light)

Steps:

  • Preheat oven to 350-degrees F.
  • Grease and flour 10-inch tube or bundt pan.
  • (I use the wrappers from the butter to grease pan) In a small bowl sift together flour and salt and then set aside.
  • In a large mixing bowl, cream butter with sugar, vanilla and anise seed.
  • Add eggs, one at a time, mixing well after each addition.
  • Add dry ingredients alternately with sour cream to mixture and beat well.
  • Pour into prepared pan.
  • Bake for 1 hour or until cake is golden and springs back when touched with fork.

"People go nuts for it. No one's ever had cake this flavor before," says Jalane Sclafani about her pound cake. She invented the recipe by adding the seasonings she liked in her mother-in-law's anise-sesame cookies to a friend's recipe for pound cake. Slice and eat the cake plain or top with coarsely chopped and sugared strawberries or peaches.

Number Of Ingredients 8

About 3/4 cup (3/8 lb.) butter or margarine
3/4 cup sugar
3 large eggs
1 tablespoon grated lemon peel
1 1/2 teaspoons anise extract
About 1 1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • With a mixer, beat 3/4 cup butter and sugar until well blended. Add eggs, 1 at a time, beating to blend well with each addition. Beat in lemon peel and anise extract.
  • Mix 1 1/4 cups flour with baking powder and salt. Add the flour mixture to batter, mixing slowly to incorporate dry ingredients, then beat at medium speed until well blended.
  • Scrape batter into a buttered and flour-dusted 4 1/2- by 8-inch loaf pan. Spread level.
  • Bake in a 325° oven until cake is golden and just begins to pull from pan sides, about 1 hour and 10 minutes. Cool in pan on a rack about 15 minutes. Invert cake onto a plate and serve warm or cool, cut into thin slices.

4 teaspoons baking powder
½ teaspoon salt
1 ½ cups white sugar

⅓ cup orange juice
⅓ cup milk
2 tablespoons anise extract
1 drop lemon extract
1 cup chopped dates
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with shortening and dust with flour.
  • Sift flour, baking powder, and salt together in a bowl.
  • Mix sugar and butter in a bowl with a spoon until creamy. Mix in eggs.
  • Combine orange juice and milk in a separate bowl; pour into the sugar mixture. Stir in the flour mixture, anise, and lemon extract until well combined. Fold in dates and walnuts. Pour batter into the prepared pan.

5 points of star anise
1/2 cup unsalted butter, softened

1/2 cup uncooked farina such as Cream of Wheat
1 large egg
2 large yolks
2/3 cup whole milk
Garnish: strawberries

Steps:

  • Preheat oven to 350°F. and butter and flour an 8- by 2-inch round cake pan.
  • Into a bowl sift together flour, baking powder, and salt. In an electric coffee/ spice grinder finely grind coriander seeds and star anise. In a large bowl with an electric mixer beat together butter and sugar until light and fluffy. Add flour mixture, ground spices, and remaining ingredients and beat on low speed until combined. Increase speed to high and beat batter 3 minutes. Pour batter into pan and bake in middle of oven until cake pulls away slightly from side of pan, about 50 minutes.
  • Cool cake in pan on a rack 10 minutes. Invert cake onto rack and remove pan. Invert another rack onto cake and turn cake right side up. Cool cake completely.

1 cup white sugar
½ cup milk
2 eggs
1 tablespoon baking powder
¾ cup vegetable oil
1 tablespoon anise extract
1 teaspoon anise extract
1 cup confectioners' sugar
2 tablespoons hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, mix flour, baking powder and white sugar. Make a well in the center and add oil, milk, 1 tablespoon anise extract, and eggs. Mix together until dough is sticky.
  • Oil fingers and pinch off dough in 1 inch pieces. Roll into a ball and place on a lightly greased cookie sheet, 1 inch apart, flatten top slightly. Bake for 8 minutes. Dip cookies in Icing while warm.
  • To Make Icing: Blend in 1 teaspoon anise extract and enough hot water to 1 cup confectioner's sugar to form a smooth icing.

1 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1 1/2 cups flour

1 lb mascarpone cheese
1/4 cup sambuca or 1/4 cup other anisette
1/2 cup sugar
1/2 cup water
2 tablespoons sambuca or 2 tablespoons other anisette

Steps:

  • MAKE THE CAKE: Preheat oven to 350*F.
  • Line a 13x9" baking pan with parchment paper; set aside.
  • Whip the eggs and sugar together until light and fluffy using an electric mixer on medium-high speed.
  • With the mixer running, drizzle in the vegetable oil, then the vanilla.
  • Sift the flour and baking powder together; add to the egg mixture alternately with the milk, mixing after each addition, just until combined.
  • Pour the batter into the prepared pan; bake until firm and springy to the touch, and a toothpick tests out clean, 35-40 minutes.
  • Cool cake in the pan on a wire rack.
  • MEANWHILE, MAKE THE TOPPING: Whip the egg yolks and sugar until light and fluffy and the sugar is almost dissolved.
  • Add the mascarpone cheese and Sambucca; whip just until stiff and frosting-like, being careful not to overmix.
  • (Overmixing may cause the mascarpone to separate.) Chill until ready to use.
  • MAKE THE ANISETTE SYRUP: Bring the sugar and water to a boil in a small saucepan over medium-high heat.
  • Remove pan from heat and add the Sambucca; set aside to cool slightly.
  • Invert the cake; peel off the parchment paper.
  • Brush the surface of the cake with the syrup until it is all absorbed.
  • Cover with the mascarpone topping, using all the cream.
  • Chill, lightly covered, at least 2 hours.
  • When ready to serve, sprinkle with the grated chocolate, cut into squares, and serve cold.

1/2 teaspoon vanilla extract
1 1/2-2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Beat eggs until light.
  • Add sugar gradually, beating till creamy.
  • Add vanilla; add anise oil now if using it.
  • Sift flour with baking powder; add to mixture beating it well.
  • If you use anise seeds instead of anise oil, add it now.
  • Drop by teaspoons onto greased cookie sheets.
  • Allow them to dry 12 hours or overnight.
  • Bake for 12 minutes in 350 degree oven. Check to see if golden around edges. Do not allow them to get brown. Makes 50 1-1/2" cookies.
