Steps:
- Preheat oven to 350; grease a 13x9 pan; set aside.
- In a small bowl, combine crust ingredients; press into prepared pan; bake for 18-20 minutes (golden brown); cool.
- In a large sauce pan, combine sugar & cornstarch; stir in rhubarb; bring to a boil (medium heat), stirring often; reduce heat, cook & stir for 4-5 more minutes --thickened; remove from heat, cool.
- Stir in strawberries; set aside.
- In a small mixing bowl, beat cream cheese and powdered sugar (smooth); fold in one cup of the WHIPPED cream; spread over crust; top with rhubarb-berry mixture; spread with with remaining whipped cream.
- Chill for 3-4 hours before serving.
- Garnish with a sprinkle of brown sugar if desired.

This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

- In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
- Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.

- In a large saucepan, combine the heavy whipping cream with the sugar. Cook and continuously stir over low heat until a thermometer reads 160 degrees Fahrenheit without boiling.
- Remove from heat and sprinkle the gelatin over the top of the mixture and immediately whisk until the gelatin is dissolved; approximately 2 minutes to be sure.

- Place chilled heavy cream in a large mixing bowl, or the bowl of a stand mixer.
- Beat until light and fluffy, being careful not to overheat.
- Set aside or chill until ready to use. (You might need to whisk it or beat it again for a few seconds if you don't use it right away and it separates.)
- Place strawberries in a medium bowl.
- Sprinkle with sugar and add vanilla extract.
- Mash the strawberries, leaving some larger pieces.
- Let stand for a few minutes.
- Add about half of the mashed strawberries to the whipped cream, folding with a large silicone spatula.
- Reserve the remaining strawberries to use when serving.
- Spoon some of the cream into four serving glasses or dishes, top with some of the remaining mashed strawberries, and another spoonful or two of the cream and a few sliced strawberries.

- Combine crushed vanilla wafers, melted butter, and chopped nuts in a medium mixing bowl.
