ANGEL HAIR WITH LEMON, KALE, AND PECANS
This quick vegetarian pasta is perfect for a quick weeknight meal

Steps:
- Toast pecans in a dry nonstick skillet over medium heat for 3 minutes until fragrant. Remove from skillet and chop. Set aside.
- Add 1 teaspoon of salt to a pot of water and bring to a boil. Cook the pasta for 1 minute less than the package instructs.
- While the pasta is cooking, heat 1/4 cup olive oil over medium-high heat in a large nonstick skillet until shimmering. Add the garlic and chili flakes and stir for 30 seconds until fragrant.
- Add kale and lemon zest and cook for 2 minutes more. Stir carefully so that the kale will not fall out of the pan.
- Add the pasta, remaining olive oil, lemon juice, basil, salt, and pepper. Toss until everything is coated.
- Portion pasta onto plates. Sprinkle with the pecans and Parmesan cheese.

- step 1 ingredients Salt instructions Place a large pot of Salted water over high heat and bring it to a boil. step 2 ingredients 1/2 pound thick sliced Bacon; cut in to Lardons Olive Oil; for drizzling 1 sprig of Rosemary 1 pound Angel Hair Pasta instructions Place a large sauté pan over medium high heat. When the pan is hot, add the Bacon with a drizzle of Olive Oil and toss in the Rosemary. Cook, stirring occasionally until the Bacon begins to get crispy. In the meantime, cook your Pasta, stirring occasionally for 3 minutes. step 3 ingredients 2 cups Crimini Mushrooms; sliced Salt Freshly Ground Black Pepper 1 sprig of Rosemary 1 cup Pasta Water; reserved 1/2 cup Parmesan Cheese; freshly grated instructions When the Bacon is crisp, add Mushrooms with a pinch of Salt and some Freshly Ground Black Pepper. Cook for another minute then add the Brussels Sprouts. Next add the Rosemary, followed by 1 cup of the pasta water. Scrape the bottom of the pan to get any brown bits off then drain your pasta and add it to the pan. Toss to combine everything and finish with a pinch of Salt and some Freshly Ground Black Pepper, the Parmesan Cheese and a good drizzle of Olive Oil. print recipe
ANGEL HAIR WITH OLIVES AND BRUSSELS SPROUTS
Modified from "Isa Does It" by Isa Chandra Moskowitz's Olive Angel Hair with Seared Brussels Sprouts. It was SO yummy, but I used less oil and salt, added more Brussels sprouts and used marjoram instead of thyme. Three of us polished it off.

Steps:
- For a one pot meal: First, toast the walnuts in the bottom of a large heavy pot over medium heat for about 5 minutes, tossing occasionally. Remove to a cutting board.
- Add water to the pot for the pasta and bring to a boil. Before adding the pasta, steam the Brussels sprouts over the boiling water (put in a metal strainer on top of the pot and cover) for 3 minutes. Set aside the Brussels sprouts.
- Add the pasta to the boiling water and cook according to package instructions. Drain and set aside.
- Rinse the pot. Turn up the heat to medium-high. Add 1 T olive oil and a pinch of the salt and saute the onion until translucent, about 3 minutes. Add the Brussels sprouts to the pan. The Brussels sprouts should touch the bottom of the pan in order to be seared. Cook for about 5 minutes until sprouts are seared on at least one side.
- Add garlic and other seasonings and cook until fragrant, about 30 seconds.
- Add the olives, the remaining salt, 1/2 cup of the broth, and vinegar. Mix well. Add pasta and toss. Add more broth if needed. Taste for seasoning and adjust as needed. Top with walnuts and serve.
