My husband begs me to make this dish. It is a surprisingly great mixture of flavors. You'll love it! Feel free to tailor the ingredient amounts to your taste. This is how we like it, but it is quite flexible.

1 (16 ounce) package angel hair pasta
¼ cup olive oil
4 cloves garlic, crushed
3 ounces sun-dried tomatoes, softened and chopped
1 (8 ounce) package tomato basil feta cheese, crumbled
1 cup grated Parmesan cheese
1 bunch fresh cilantro, chopped
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until done; drain. Return pasta to the pot.
  • Mix in olive oil, garlic, tomatoes, feta, and Parmesan cheese. Stir in cilantro and season with salt and pepper. Serve warm.

8 ounces angel hair pasta
3/4 cup olive oil
1/4 cup sun-dried tomato (chopped)
6 garlic cloves (pressed or minced)
1 tablespoon italian seasoning
parmesan cheese, for sprinkling

Steps:

  • Cook pasta in boiling water for 3-5 minutes (depending on your taste).
  • Drain.
  • In a small saucepan, heat olive oil until warm.
  • Add sundried tomatoes& garlic.
  • Saute for 4 minutes.
  • Add italian seasoning and saute for 1 more minute.
  • Toss drained pasta with desired amount of sauce.
  • Sprinkle with parmesan cheese.

1/2 cup sun-dried tomato (NOT packed in oil)
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1 lb chicken tenders, cut into 3/4-inch pieces
1 tablespoon olive oil
2 garlic cloves, minced
1/4 cup vermouth
1 (14 1/2 ounce) can diced Italian tomatoes
2 small zucchini, sliced
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 tablespoon fresh thyme leave
1/2 cup water
1/2 lb uncooked angel hair pasta

Steps:

  • Place sundried tomatoes in small bowl and cover with boiling water for 5-10 min or until soft. Drain and cut into slivers.
  • Combine flour, salt, and red pepper in a large bowl.
  • Add chicken and toss until evenly coated.
  • Heat oil in large skillet. Add chicken and cook without stirring until golden (3-4 minutes). Turn chicken and cook 3 minutes longer.
  • Add garlic and cook, stirring, 1 minute more.
  • Add vermouth and stir, scraping up cooked bits from sides of pan.
  • Add dried tomatoes, canned tomatoes, zucchini, bell peppers, thyme and water.
  • Bring to boil, cover, reduce heat and simmer 5 minutes or until zucchini are tender, stirring occasionally. Keep warm.
  • Meanwhile, cook pasta according tp package directions.
  • Serve sauce over pasta.

1 pound whole-wheat angel-hair pasta
1 tablespoon cornstarch
1/4 cup skim milk
1/4 cup sherry (or balsamic) vinegar
1 1/2 teaspoons salt
Vegetable-oil cooking spray
1 tablespoon olive oil
3 boneless, skinless chicken breasts (about 4 ounces each)
2 cloves garlic, thinly sliced
1/4 cup sun-dried tomatoes, soaked in hot water for 10 minutes and drained
1/2 pound asparagus, thinly shaved
1/2 pound shiitake mushrooms, sliced
1/4 cup grated reduced-fat Parmesan (or Romano)

Steps:

  • Cook pasta 2 minutes less than the package indicates. Drain; set aside. Mix cornstarch, milk, vinegar, salt and 1/2 cup water in a bowl; set aside. Coat a large skillet with cooking spray. Add oil and warm on high heat. Sauté chicken and garlic until chicken begins to brown, 2 or 3 minutes. Add tomatoes, asparagus and mushrooms. Cook 2 or 3 more minutes, until chicken is no longer pink in center and vegetables begin to soften. Reduce heat to low and stir in pasta and cornstarch mixture. Cook 1 or 2 minutes until sauce begins to thicken. Sprinkle with cheese and serve immediately.

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.

1 small onion, chopped
1/2 lb medium shrimp, peeled,deveined,tail off
1 cup chopped baby portabella mushrooms
4 cloves garlic, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
salt and pepper, to taste
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley

Steps:

  • Put large pot of salted water on to boil for pasta.
  • Drain sun-dried tomatoes, reserving oil.
  • Heat a large skillet over medium heat.

  • Saute until shrimp is pink, stirring often.
  • Stir in garlic and saute for about 1 minute.

  • Simmer until liquid is reduced by half, about 2 minutes.
  • Add pasta to boiling water and cook until al dente.
  • Stir occasionally.
  • Drain, reserving 1/2 cup liquid.
  • Add pasta to tomato mixture.
  • Toss to coat.
  • Add some liquid from pasta if too dry.
  • Salt and pepper to taste.
  • Sprinkle with goat cheese and parsley.
  • Stir into pasta mixture lightly.
  • Serve in bowls.

1 (15 ounce) jar alfredo sauce (I like Bertolli)

  • In large non-stick skillet sauté Chicken Breasts in Olive Oil until browned and cooked through.
  • Cover them to keep them warm and set them aside.
  • Pour Alfredo Sauce into skillet.
  • Slice Artichoke Hearts and Chicken Breasts into bite sized pieces.

5 garlic cloves, minced
1 large shallot (2 smaller ones)
5 large roma tomatoes

Thank God for gyms! **NOTE** Sun-dried tomato oil is the oil that comes in the jar of sun-dried tomatoes. Chicken broth can be substituted for the white wine, but in my opinion the wine works better with the other ingredients.

1 lb angel hair pasta
salt, a pinch
1 tablespoon sun-dried tomato oil
1 small yellow onion, thinly sliced
2 garlic cloves, minced
1 tablespoon tomato paste
white wine
8 ounces sun-dried tomatoes, chopped
2 ounces goat cheese, crumbled
1/4 cup fresh parsley, chopped

Steps:

  • Bring lightly salted water to a boil. Add in pasta, cooking 5-6 minutes (until done). Reserve 1 cup of pasta water. Drain pasta.
  • In saucepan, saute onion in sun-dried tomato oil until fragrant.
  • Add in garlic, salt (a pinch), and tomato paste. Cook over medium-high heat. When onions are tender, add wine to cover.
  • Simmer until wine has mostly cooked away.
  • Add in tomatoes, and cook until warmed through.
  • Toss pasta with sauce, adding in reserved pasta water as needed.
