TOFU RANCH DIP

One 16-ounce block silken tofu
2 tablespoons white wine vinegar
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped chives
1 tablespoon chopped flat-leaf parsley
Dippers of your choice, for serving

Steps:

  • In the carafe of a blender, combine the tofu, vinegar, garlic and onion powders, salt and pepper. Puree until smooth. Add the chives and parsley and pulse once just to incorporate. Transfer to a serving bowl and chill in the fridge until ready to serve. Serve cold with the dippers of your choice!

CREAMY ANCHOVY DIP



Creamy Anchovy Dip image

A simple yet flavorful dip that's great with raw vegetables. The subtle hint of anchovy enhances the other ingredients but no one will know they are in there. This is easy to put together with what you probably already have on hand but is a nice change from the typical dip fare.

1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon Dijon mustard
2 teaspoons lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried dill weed
fresh ground black pepper
2 ounces anchovy fillets, drained and chopped or 2 teaspoons anchovy paste

Steps:

  • Combine all ingredients until smooth except anchovies, folding in last.
  • If using anchovy paste mix in after creaming other ingredients into mixture.
  • Cover and refrigerate 2 hours.
  • I have made this with dried parsley and one stalk minced green onion when I was out of dill weed with great results, and I always use light mayo & sour cream myself.
  • Serve with raw vegetables, crackers or toasted baguette slices.
  • Try using some different fresh vegetables like snow peas, jicama or yellow squash, for example.

2/3 cup extra-virgin olive oil
1/2 cup whole milk
12 garlic cloves, smashed and peeled
16 anchovy fillets
4 cups packed fresh parsley (from 2 bunches)
Ground pepper
2 to 3 teaspoons lemon juice

Steps:

  • In a small saucepan, bring olive oil, milk, garlic, and anchovy fillets to a simmer over medium; cook until garlic is tender, 8 minutes. Transfer to a food processor and add parsley. Pulse until smooth; season with pepper and lemon juice.

GARLICKY CAESAR DIP

This dip is inspired by classic Caesar dressing, with plenty of garlic and anchovy to wake things up. (You can even make it dairy-free, if you like, by using vegan cream cheese, substituting 1/3 cup nutritional yeast for the Parmesan, and adding an additional 1/4 teaspoon salt.) Serve it with a platter of raw or lightly blanched vegetables sprinkled with sea salt and dig in. Leftovers make a killer spread on a turkey sandwich, or a stellar accompaniment to grilled steak.

1/3 cup fresh lemon juice (from 2 lemons)
6 anchovy fillets
4 garlic cloves, smashed and peeled
1 1/2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
8 ounces cream cheese
3/4 cup grated Parmesan
1/4 cup mayonnaise
Kosher salt and black pepper
Chopped fresh parsley, for serving (optional)
Raw or lightly blanched vegetables and potato chips, for serving

Steps:

  • In the bowl of a food processor, combine the lemon juice, anchovies, garlic, mustard and Worcestershire sauce and process until smooth.
  • Add the cream cheese, Parmesan and mayonnaise and process until smooth, stopping to scrape down the sides of the bowl as necessary.
  • Taste for seasonings and add salt and pepper to taste. Refrigerate for up to 3 days before serving. Top dip with parsley, if using, and serve with crudités and potato chips.

3 ounces cream cheese, at room temperature
2 tablespoons mashed or finely chopped anchovies
1 cup sour cream
1/4 cup chopped flat-leaf parsley
3 tablespoons chopped chives
2 teaspoons chopped capers
1 tablespoon lemon juice
1/2 garlic clove, minced
Salt and black pepper to taste
Sliced vegetables or sturdy potato chips, or both, for serving

Steps:

  • Using a wooden spoon, blend the cream cheese and anchovy paste together in a medium bowl. Add the sour cream, parsley, chives, capers, lemon juice and garlic, season with salt and pepper, then stir until well blended. Place in the refrigerator for several hours to season.
  • Spoon the dip into a bowl and serve with sliced vegetables or potato chips, or both.

Bert Greene was one of the owners of the Store in Amagansett, a gourmet shop and catering outfit on the eastern end of Long Island, N.Y., that was in the early 1970s a kind of lodestar of casual-elegant cooking and entertaining - expensive and, to those with the money to spend it, worth it. (He was like a cross between Ina Garten and Anna Pump, of Loaves & Fishes in Sagaponack.) This is his recipe for a tart, abrasive and wildly delicious dip to serve, garnished with watercress, with an enormous quantity of iced, slivered vegetables. (It's also great on fish, sandwiches, or even as a dip for slices of delivery pizza.)

1 (2-ounce) can flat anchovy fillets packed in oil
1/2 cup chopped fresh parsley
2 tablespoons red wine vinegar
2 tablespoons chopped fresh chives or shallots
1 tablespoon drained capers, rinsed
1 1/2 cups mayonnaise
Freshly ground black pepper, to taste
Chilled sliced vegetables, for serving

Steps:

  • Put the anchovies and anchovy oil, parsley, vinegar, chives or shallots, and capers into a blender or food processor and purée until the mixture has nearly liquefied, about 3 minutes, pulsing and scraping down the sides as needed.
  • Add the mayonnaise and pulse to combine. Season with pepper, then transfer to a small bowl and refrigerate until chilled, about 1 hour.
  • Serve as a dip with chilled sliced vegetables.

1 tablespoon butter
1 garlic clove (crushed)
1 1/2 ounces anchovy fillets (DO NOT DRAIN)
10 ounces cream
3 teaspoons cornstarch
1/4 cup water

Steps:

  • Melt butter in small saucepan.
  • Add garlic & cook for 1 minute, but do not brown.
  • Add undrained anchovies + cream, bring to a boil, reduce heat to simmer & simmer for 5 minutes.
  • Blend cornstarch w/water, stir into anchovy mixture & stir constantly over moderate heat till mixture boils & thickens.
  • Remove from heat & serve hot w/assorted veggies of your choice
  • (The picture I have showed it served w/carrot sticks, broccoli florets & asparagus spears).
