This is a recipe that I found in Taste of Home Magazine. This is a hearty filling breakfast and so tasty!!! You can change the bacon to ham or sausage and add red/green pepper if you like.

1 lb bacon, diced
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen hash brown potatoes, thawed
2 cups shredded cheddar cheese
1 1/2 cups 4% cottage cheese
1 1/4 cups shredded swiss cheese
salt and pepper

Steps:

  • In a large skillet, cook bacon and onion until bacon is crisp; drain. In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. baking dish.
  • Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

This is a delicious, hearty breakfast bake that can be made the night before. Pretty enough for company, and guests will surely ask you for the recipe! This can be prepared the night before and stored in the fridge. Pull it out 1 to 2 hours prior to cooking to let warm up a bit. Makes 16 squares and fills the pan to the top. It is also a great base recipe; add or change the ingredients to your taste.

1 large Anaheim chile pepper
2 (12 ounce) packages reduced fat pork sausage (such as Jimmy Dean®)
1 cup chopped sweet onion
1 cup chopped zucchini
1 cup chopped bell pepper
18 eggs, lightly beaten
1 (2 pound) package frozen southwestern-style hash brown potatoes, thawed
3 cups shredded reduced-fat Cheddar cheese
2 cups low-fat small curd cottage cheese
1 ½ cups shredded reduced-fat Swiss cheese

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Cut the Anaheim pepper into halves lengthwise; remove and discard the stem, seeds, and ribs. Place the pepper, cut-sides down, onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the pepper has blackened and blistered, 5 to 8 minutes. Place the blackened pepper into a bowl and tightly seal with plastic wrap. Allow the pepper to steam as it cools, about 20 minutes. Remove and discard skins; chop pepper.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Cook and stir sausage in a large skillet over medium-high heat until browned and crumbly, 5 to 7 minutes; remove sausage using a slotted spoon to a plate, leaving rendered fat in the skillet.
  • Return skillet to medium-high heat. Saute onion, zucchini, bell pepper, and Anaheim pepper in hot skillet until just tender, about 4 minutes.
  • Stir eggs, hash browns, Cheddar cheese, cottage cheese, and Swiss cheese together in a large bowl; add sausage and sauteed vegetables and stir. Pour egg mixture into prepared baking dish.

1 lb. bacon, chopped and fried crisp
1 medium onion, finely chopped
6 eggs
4 c. frozen shredded hash browns
2 c. shredded cheddar cheese
1 1/2 c. small curd cottage cheese

Steps:

  • In a large skillet cook the diced bacon and onion until bacon is crisp. Drain on a paper towel lined plate and set aside.
  • In a large bowl whisk the eggs. Add in the hash browns, half of the shredded cheese and cottage cheese. Fold in 3/4 of the bacon/onion mixture.
  • Transfer mixture to a greased 9x13 baking dish and sprinkle with remaining bacon/onion/cheese mixture.
  • Bake uncovered at 350 degrees for 35 minutes. Remove from the oven and let set for 10 minutes before serving.

  • Amish Breakfast Casserole
  • Preheat oven to 350 and grease a 9x13 baking pan. Set aside.
  • Add thawed hash brown potatoes, cut up cooked bacon, and cottage cheese, and all shredded cheeses, to a mixing bowl and mix well. A spatula works best to make sure the hash browns are well incorporated with all the cheese.
  • Pour hash brown cheese mixture into prepared pan.
  • In a separate bowl, crack eggs, milk, salt and pepper and whisk well.
  • Pour egg mixture on top of potato mixture in pan and stir well to evenly coat and distribute.
  • Bake for 40-45 minutes or until casserole edges are brown and center is set when inserting a knife.
  • Let Amish Breakfast Casserole stand for 5 minutes to cool slightly before cutting into 18 squares.
  • Optional: Serve with a side of salsa or cut up tomatoes
