RUM MANHATTAN-STYLE



Rum Manhattan-Style image

The combination of dark rum, amaro, brown sugar syrup and bitters hails from Saltine restaurant in Nashville, where it's called Old Barbados. But as you savor it, the cocktail dispels any notion of a sunlit Caribbean beach. A snowy slope is more like it: Though iced in the making, the drink delivers a generous and lingering sense of warmth.

Yield 1 drink

Number Of Ingredients 5

2 ounces dark rum
1/2 ounce amaro, preferably Amaro Montenegro
1/4 ounce Demerara syrup (see note)
1 dash Angostura bitters
1 dash orange bitters

Steps:

  • Fill a mixing glass with ice cubes. Add the rum, amaro, Demerara syrup and bitters, and stir 20 seconds. Strain into a coupe or martini glass.

Manhattan With Amaro and Cocoa image

A mixture of rye whiskey and amaro, with the addition of bitters, sets this simply made cocktail on the road to a manhattan. But then there are detours: the chocolate liqueur to add a mellow accent, and the cardamom for a hint of spice. I also tried substituting coffee liqueur for the chocolate, with great success. It is from the 18th Room in New York, where it is called Before Night Falls.

1 ounce rye whiskey
1 ounce amaro, preferably Averna
1/2 ounce crème de cacao or other chocolate liqueur
5 drops Bittermens Burlesque or Angostura bitters
3 cracked green cardamom pods, for garnish

Steps:

  • Fill a mixing glass with ice cubes. Add the rye, Averna, crème de cacao or liqueur and bitters, and stir 20 seconds. Strain into a cocktail glass and garnish with cardamom.

2 fluid ounces amaro
2 to 4 dashes bitters, preferably lavender
2 large ice cubes
4 maraschino cherries, preferably Luxardo
2 orange peels

Steps:

  • Add the bourbon, amaro and bitters to a pitcher filled with ice and stir until cold. Place a large ice cube into each of two chilled heavy rocks glasses. Strain the drink over the ice. Garnish with the cherries and orange peels.
