1 onion, chopped
¼ cup vegetable oil
1 pound potatoes, peeled and cubed
1 teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon ground turmeric
¼ teaspoon ground cumin
2 tomatoes, chopped

Steps:

  • Lightly brown onion in oil in a medium size skillet.
  • Stir in salt, cayenne, turmeric and cumin. Add potatoes and cook 10 minutes stirring occasionally.
  • Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes.

2 tomatoes, chopped

Steps:

  • Lightly brown onion in oil in medium skillet.
  • Stir in salt cayenne turmeric and cumin.
  • Add potatoes and cook 20 minutes stirring occasionally.
  • Add tomatoes; cover and cook until potatoes are soft, about 20 minutes.

  • Firstly, wash potatoes and place them in a pressure cooker. Pour water and boil the potatoes. On the other hand, place tomatoes and onions over a chopping board and chop them. Once the potatoes are boiled, peel them and cut them into cubes.
  • Next, place a frying pan over medium flame and pour oil in it. Once the oil is heated, add chopped onions into the pan. Fry them until light brown in colour. Add the peas and cook on low flame till they soften. You may also cover the pan for a while.
  • Now add salt, cayenne pepper, turmeric and cumin powder and mix them well. Then, add potato cubes and cook the mixture for 10-15 minutes.
  • While stirring the mixture occasionally, add chopped tomatoes into the pan and cover the pan with a lid. Cook the mixture for 10-12 minutes more. Garnish with coriander leaves or the toppings of your choice and serve. It tastes great with steamed rice.
