Chaffles are an overnight sensation in the low carb/keto world. Adding almond flour gives them a more traditional waffle texture and helps get rid of any eggy taste. Seriously, try them, they're delicious! I use an inexpensive mini waffle maker (such as Dash® Mini Maker Waffle) which produces perfect 4-inch chaffles. So many ways to use chaffles, the sky's the limit!

1 large egg
1 tablespoon blanched almond flour
¼ teaspoon baking powder
½ cup shredded mozzarella cheese
cooking spray

Steps:

  • Whisk together egg, almond flour, and baking powder. Stir in mozzarella cheese and set batter aside.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Spray both sides of the preheated waffle iron with cooking spray. Pour 1/2 of the batter onto the waffle iron and spread it out from the center with a spoon. Close the waffle maker and cook until chaffle reaches your desired doneness, about 3 minutes. Carefully lift chaffle out of the waffle iron and repeat with remaining batter. Allow chaffles to cool for 2 to 3 minutes, and they will begin to crisp up.

1 teaspoon baking powder
2 tablespoon granulated sweetener of choice
4 large eggs (room temperature)
4 oz cream cheese (can use thick yogurt or sour cream ** See notes)
1 teaspoon vanilla extract (optional)

Steps:

  • In a high speed blender, add all your ingredients and blend together until combined and smooth. Transfer the batter into a bowl and let it sit for five minutes.
  • Heat up a waffle iron and coat in non-stick spray or butter. Once hot, pour 1/4 cup portions of the waffle batter. Cook the waffles until crispy on the edges and fluffy on the inside.
  • Repeat the process until all the waffles are cooked. Serve immediately or allow to cool completely, to refrigerate or freeze.

These keto waffles are made with almond flour. They're crispy on the outside, tender and fluffy on the inside.

3 large eggs
1 tablespoon vanilla extract ((yes, a full tablespoon, not a typo!))
1/2 teaspoon stevia glycerite ((equals 2 tablespoons sugar))
1/2 cup whole milk
2 cups blanched finely ground almond flour ((8 oz)*)
1/4 teaspoon Diamond Crystal kosher salt
1 teaspoon baking soda**
2 tablespoons melted unsalted butter (for the waffle maker)

Steps:

  • Plug your waffle maker in. Set your oven to warm (150°F) and fit a baking sheet with a wire rack. Place the baking sheet in the oven.
  • In a medium bowl, whisk together the eggs, vanilla, stevia, and milk.
  • Gradually add the almond flour, whisking it in until the mixture is smooth.
  • If the batter seems very thick, add a little water. I often add 2 tablespoons.
  • Mix in the kosher salt and the baking soda.
  • Brush the waffle maker with melted butter. Pour the batter into the waffle maker, using a scant 1/2 measuring cup per waffle and spreading the batter to the corners before closing the lid.
  • Cook until puffy and set, about 5 minutes. When the first batch of waffles is ready, place the cooked waffles on the wire rack in the warm oven to keep them warm.
  • Brush the waffle maker with more melted butter and repeat steps 5 and 6 until all the batter is gone. Serve the waffles immediately.

3/4 teaspoon pure almond extract
Zest of 1 large lemon
1 1/2 cups all-purpose flour

1 stick unsalted butter, melted
3/4 cup mini chocolate chips, optional

Steps:

  • Preheat the waffle maker. Lightly spray the waffle grills with vegetable oil cooking spray.
  • For the lemon honey: Heat the honey, lemon juice and lemon zest over medium heat in a small saucepan, stirring occasionally, until warm, about 4 minutes.
  • For the waffles: Beat the egg whites until they are thick and hold soft peaks using a whisk or an electric hand mixer in a medium bowl, about 2 minutes.
  • Combine the egg yolks, milk, sugar, vanilla extract, almond extract and lemon zest in a large bowl. Beat until smooth. Add the all-purpose flour, almond flour, baking powder and salt. Mix until smooth.
  • Fold the egg whites, butter and chocolate chips if using into the batter. Using the amount recommended by the waffle iron manufacturer's instructions, about 1/3 cup of batter for each waffle, pour the batter into the preheated waffle iron. Cook the waffles until golden brown, 3 to 4 minutes. Drizzle with lemon honey and serve.

Steps:

  • Heat oven to 250 degrees.
  • Mix all dry ingredients together in medium bowl.
  • Divide the egg and place the white in a large mixing bowl.
  • Whisk together the egg yolk, buttermilk, maple syrup and vanilla extract.
  • Add liquid ingredients to the dry mixture and stir well. Let sit 10 minutes to allow buttermilk and baking powder time to expand.
  • While buttermilk-flour mixture is sitting, whip egg white until stiff peaks form.
  • Fold beaten egg white into batter when its 10 minutes are up.
  • Heat waffle maker and spray with non-stick spray.
  • Drop about 1/2 cup batter onto the hot iron. Your waffles maker may take more or less depending on size. Cook until browned, about 4 minutes.
  • Place cooked waffle in oven while making remainder of waffles. About 5-10 minutes in the oven gives these waffles a slightly crisp exterior closer to a standard waffle.
  • Serve topped with fresh fruit and additional maple syrup.
