ALMOND CRUSTED TILAPIA
This almond crusted tilapia has just 5 ingredients and is light, healthy, and super easy. Crushed almonds give perfect texture and flavor to the tilapia.

Steps:
- Place the almonds and breadcrumbs in a food processor and pulse until coarsely ground into a crumb-like mixture. Place the crumb mixture on a plate or in a shallow bowl.
- Heat oil and butter in a frying pan over medium-high heat.
- Spread each tilapia filet with 1 tablespoon Dijon mustard on both sides. Press the tilapia into the crumbs to get it coated on both sides. I usually do this several times to make sure the whole thing gets covered.
- Place the fish into the frying pan and cook for several minutes on each side, until the outside is browned and the fish is fully cooked. I usually just check the middle of the fish for doneness - pieces will flake off easily when it's done.
- Serve with parmesan, sea salt, or lemon.

ALMOND-CRUSTED TILAPIA

- Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
- Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
- Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

- Place the almonds in a food processor and pulse until finely ground. Mix together with bread crumbs, lemon pepper, ground mustard, onion, garlic powder, salt, and pepper. Place the breading mixture into a shallow bowl or pie dish.
- Whisk together the eggs and place them in a shallow bowl or pie dish. Place the flour in another shallow bowl or pie dish.
- Dip the tilapia fillets into flour and shake off the excess. Then dip into the egg wash and coat both sides. Then coat both sides of the fish with almond breading.
- Preheat a medium skillet over medium heat. Add the canola oil and butter. Place the fish in the skillet and cook on each side for about 2-3 minutes, or until golden brown. Flip and cook the other side. Fish will flake apart when done.
- Serve immediately with mashed red potatoes with chives and green beans.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
- Mix Parmesan cheese, garlic, buttery spread, almonds, mayonnaise, bread crumbs, lemon juice, seafood seasoning, basil, black pepper, onion powder, and celery salt together in a bowl.
- Arrange tilapia fillets in a single layer on the prepared pan; cover pan with aluminum foil.

- Combine bread crumbs, almonds, salt, garlic powder and black pepper in a shallow dish.
- Pour buttermilk in another shallow dish.
- Pour flour on a sheet of wax paper.
- Rinse the fillets with water and pat them dry with paper towels. Dredge the fillets in the flour, then dip them in buttermilk. Dredge them in the almond mixture. Place the fillets on a small cookie pan that has been dusted with a bit of the almond mix and chill for about 20 minutes for the almond crust to set.
- Heat one tablespoon of oil in a skillet over medium-high heat. Add two fillets, cook them about three minutes on each side until they are browned and the fish flakes when tested with a fork.
- Remove them to a platter to keep warm. Add the remaining tablespoon of oil to the skillet and cook the remaining fillets. If you have a large skillet, you can do all four at once.
- Serve with lemon wedges.

- Season tilapia with salt, pepper and old bay.
- Dust with flour then dip into egg.
- Press almond slices into the fish.
- Heat butter and oil in an oven proof pan.
- Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
- Remove gently to a platter squeeze remaining lemon.
- Garnish with scallions and serve.

- Grate whole frozen lemon (or use lemon zest). Mix with Almond Flour.
- Sprinkle Tilapia filet with Garlic Salt and Chili with lime on each side, and place in a piece of foil.

This "Healthy in a Hurry" recipe came from Good Housekeeping magazine, September 2008. "Appealingly mild and lean, tilapia still has plenty of heart-healthy omega-3 fats. (Bonus: It is one of the least mercury-laden fish, and is also low in sodium.) Green beans and mushrooms deliver fiber and potassium, while crunchy almonds boast antioxidants." I'd probably skip the oil and take my fats from extra almonds.

- Preheat oven to 425 degrees. From 1 lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice; cut second lemon into wedges. In cup, mix lemon peel and 1 tablespoon juice, 1 tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper.
