SLOW COOKER PORK SHOULDER
Easy and versatile. After it's cooked I pull it apart and then separate it, to make 2 different meals by changing up the sauce. I will post the sauce recipes separately. :-)

Steps:
- Score fat cap on the pork shoulder in a diamond pattern.
- Rub the shoulder with the Worcestershire sauce and liquid smoke, use enough to cover entire shoulder.
- Combine spices and rub on top and sides.
- Layer onions on the bottom of the slow cooker and place shoulder on top.
- Cover and refrigerate overnight, not necessary but recommended.
- Remove and allow to come to room temperature.
- Drizzle honey all over the top, enough to thinly cover.
- Cook on low for 6 - 10 hours, it depends on the meat and how you like it.
- Pull meat apart with a couple forks and it's ready for 'dressing'.
- After that, the possibilities are endless.
- I took half the meat and put it back in the slow cooker on warm with 1 cup of bbq sauce and a cup of cola mixed with meat for 30 mins.
- Served with baked beans and rice tonight.

- Rinse the pork, place on a cutting board, pat dry with paper towels and rub in the salt and pepper. Set the pork in the bowl of a slow cooker, scatter the onion over the pork, sprinkle in the garlic and add the wine. Cook until the meat easily pulls apart with a fork, about 5 hours on high or 8 hours on low.
- Turn off the slow cooker and transfer the pork to a platter. Use two forks to shred the meat.
- If you don't have a slow cooker, you can braise the pork shoulder in a 325 degrees F oven for 2 1/2 to 3 1/2 hours.
ITALIAN INSTANT POT PORK ROAST
This Italian Instant Pot Pork Roast recipe makes tender, juicy meat from a pork shoulder roast in the pressure cooker in less than two hours!

- Cut the roast into two large pieces. Rub the pork with 1 Tablespoon salt and pepper, and a teaspoon of paprika. Place in a plastic zip bag or plastic storage container. Store in the fridge overnight or a for a few hours before cooking.
- When ready to cook, turn Instant Pot on "Sauté", and add 2 Tablespoons extra virgin olive oil. Rub the pork loin with 1 Tablespoon olive oil and sear the sides of the pork loin to a nice golden brown. Press Cancel and remove roast from the Instant Pot. Place on a plate and set aside.
- Add the roast onto the trivet inside the Instant Pot. Add the liquid (water, broth, wine if you are using, or more broth/water if you don't like to cook with wine). Add the sliced onion and fresh herbs on top of the roast. Drizzle on about 1 Tablespoon extra virign olive oil.
- Cover and move the valve to sealing position.Turn the instant pot to MANUAL pressure 'HIGH' and cook time 45 minutes *depending on size & preferred doneness. Allow for a natural release. When the top unlocks (I left mine on warm for almost 30 minutes while I made my side dishes), slice the roast or you could shred the pork with two forks (if making pulled pork sandwiches).
- Melt the butter in a medium saucepan over low heat. Remove from heat.
- Whisk flour into butter.
- Whisk in 1/2 cup broth until smooth. Whisk in another half cup. Keep adding the broth 1/2 cup at a time stirring together so it's smooth.
- Bring to a boil over medium-high heat. Reduce heat to low and simmer a few minutes.
- Taste and add salt and pepper (and the mushrooms if you are using them(already cooked up). Serve the pork with the gravy, mashed potatoes or polenta, your favorite green vegetable. If you like, drizzle on a little more of the extra virgin olive oil on the pork before serving.
ALL PURPOSE SLOW COOKER PORK
Easy pork should in the slow cooker, with multiple uses. So good you can eat it straight out of the slow cooker, or make enchiladas, pulled pork sandwiches, quesadillas, tacos, burritos and more.

- Rub seasoning salt over the pork roast.
- Brown on all sides. (optional, but this helps form a nice crust and develops flavor).
- Set in a slow cooker and cook on high for 5 hours or low for 8 hours.
- Once the roast is done, use two forks to shred.
- At this point you can use the meat for pork tacos, enchiladas, or add your favorite barbecue sauce for pulled pork sandwiches.
- SEASONING SALT: Mix 3 tablespoons kosher salt, 2 tablespoons black pepper, 1 tbsp garlic powder in a jar.
