This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. If you like your casserole's creamy, then this is one you've gotta try! I hope you enjoy it as much as we do!

4 boneless skinless chicken breasts, boiled and cubed
1 cup sour cream
1 (10 3/4 ounce) can cream of chicken soup (mushroom can be substituted)
25 Ritz crackers
1/2 cup butter, melted
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Boil chicken breast until tender; drain and cube.
  • Spread evenly over the bottom of a square casserole dish.
  • Salt and pepper to taste.
  • Mix sour cream and chicken soup in a separate bowl.
  • Spread the sour cream and soup mixture over the chicken in the casserole dish.
  • Crush the Ritz crackers and spread over top of the casserole.
  • Spoon melted butter on top over all.
  • Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
  • Bake in the preheated oven until bubbly, 25 to 30 minutes.

4 cups uncooked egg noodles
4 cups cubed cooked chicken
1 package (16 ounces) frozen peas and carrots
2 cups whole milk
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup chopped onion
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Cover and microwave on high for 10-12 minutes or until heated through and a thermometer inserted in center reads 165°, stirring twice.

200 g | 7oz smoked bacon lardons or chopped streaky bacon
1 tbsp olive oil
1/2 tbsp butter
6 skin-on chicken legs
1 tsp Kosher salt
1/2 tsp ground black pepper
6 shallots (quartered)
2 large garlic cloves (sliced)
800 g | 1.7 pounds baby potatoes (halved)
2 tbsp Dijon mustard
1 tsp English mustard
1 tbsp runny honey
280 ml | 1 1/8 cups medium-dry apple cider
250 ml | 1 cup single (pouring) cream
1/2 tsp dried tarragon
3 fresh thyme sprigs
1 lemon zest only

Steps:

  • Preheat the oven to 200C (400F) and setting the shelf to the lower third of the oven.
  • Pat the chicken dry using paper towels (do not rinse) and season with salt and pepper.
  • Dry fry the bacon in a large lidded non-stick pan until it starts to crisp and render some of its fat. Set aside on a kitchen towel lined bowl.
  • Add a the olive oil and butter to the pan and pan fry the chicken legs, in batches if necessary, for 4 minutes per side or until nicely browned. Set aside.
  • Add the shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.
  • Add the cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon and stir in the bacon.
  • Return the chicken to the pot, nestling it in the creamy sauce. Add the thyme sprigs, cover the pan and transfer to the oven. Cook for 15 minutes.
  • Uncover the pot and cook for another 5 minutes or until the potatoes are tender.
  • Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

This is my version of some other casserole recipes I've come across in the past. I cooked this for friends last night and it was a total hit! It's best served with mashed potatos and your choice of vegetables!

1 lb boneless skinless chicken tenderloins
1 (26 ounce) can cream of chicken soup (family size)
1 (6 ounce) box herb seasoned Stove Top stuffing mix
butter (as required by stuffing)
water (as required by stuffing)
2/3 cup half-and-half cream
pepper

Steps:

  • Preheat oven to 400°F.
  • Cook Stuffing with Butter & Water according to package directions.
  • Combine well Cream of Chicken Soup and Half & Half in a mixing bowl.
  • In a 13 x 9 casserole dish, arrange Chicken in a single layer.
  • Spread Soup mixture evenly over the top of chicken.
  • Sprinkle over pepper to taste.
  • Spoon Stuffing evenly over the top of Soup mixture.
  • Bake for 30-35 minutes until Chicken is cooked through.

10 oz cream of chicken soup
1/2 cup sour cream
3/4 cup chicken broth (divided)
12 oz frozen mixed vegetables (thawed)
2 cups dry stuffing mix ((one 6oz package))
1/4 cup butter (melted)

Steps:

  • Preheat oven to 375˚F.
  • Combine the cream of chicken soup, sour cream, and 1/2 cup chicken broth. Then stir in the shredded chicken and mixed vegetables. Spread in the bottom of a 2.5 qt casserole dish.
  • In a small bowl, combine the melted butter, remaining 1/4 cup broth, and stuffing and then spread over the top of the casserole.
  • Bake for 30-40 minutes until the edges are bubbly and the casserole is hot throughout.Optional: For an extra crispy stuffing topping, turn oven to broil for the last 3-5 minutes of baking time. Keep a close eye on it so that it does not burn.

Steps:

  • Preheat oven to 375°F and spray a 9x13-inch casserole dish.
  • Cook and drain the spaghetti according to the directions on the package for al dente. Return the cooked pasta to the pot.
  • While the pasta is cooking, combine the cream of mushroom soup, chicken broth, cheddar cheese, Velveeta cheese, salt, pepper, and cayenne pepper (optional) in a medium bowl.
  • Add the diced chicken, pepper, onion, pimentos, and cream mixture to the pasta. Toss to combine.
  • Pour the pasta mixture into the prepared baking dish. Top with Parmesan cheese.
  • Bake, uncovered, for 40 minutes, or until edges are bubbly.
  • Garnish with parsley and serve!

  • Place the chicken in a bowl with 6 tablespoons of the flour plus 1/2 tsp each of salt and pepper. Toss to cover the chicken in the flour and seasoning.
  • Heat the oil over a high heat in a large frying pan (skillet) and add the chicken. Brown all over (it doesn't need to be cooked through at this point). Remove from the pan with a slotted spoon and put to one side.

Continue to add in stock, a little at a time, whilst stirring, until all the stock is added and you have a smooth sauce with no lumps (the onions will still be in there though - so it will look a little lumpy because of that).
