We like salsa with chips as an afternoon snack. This fresh salsa recipe uses a lot of ripe tomatoes and keeps well for several days in the refrigerator. -Myra Innes, Auburn, Kansas

Steps:
- In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

PAUL'S FAMOUS SALSA
Pop some tomatoes, onions, serrano peppers, and garlic under the broiler, blend them with spices, cilantro, and lime juice and you've got a yourself a 30-minute homemade salsa.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Combine tomatoes, onions, serrano peppers, and garlic in a large bowl; drizzle with vegetable oil and toss until lightly coated. Transfer to the prepared baking sheet.
- Broil in the preheated oven until vegetables begin to brown, about 5 minutes.
- Transfer vegetables to the bowl of a food processor. Add salt and cumin; pulse a few times until desired chunkiness is reached. Add cilantro and pulse a couple of times to combine. Stir in lime juice.

Steps:
- In a food processor, add onion and jalapeño and process to your liking (if you want chunky, don't process very long).
- Add Rotel, tomatoes and juice, green chilies and process.
- Put in bowl and add spices.
- Chill for a couple of hours for flavors to combine.
- PS If you are brave you can add 2 cans of hot Rotel.
EASY HOMEMADE SALSA
This salsa is quick and easy with great flavor. You can put your own spin on it with adjusting the ingredients to your personal taste. Great with tortilla chips and on mexican dishes.

- Finely dice onion by hand.
- Chop jalapeno and garlic in food processor, then add cilantro and lime juice and process, then add diced tomatoes. Mix in chopped onion and salt and pepper. Chill for several hours or over night for flavors to blend.
