POTATOES IN ALFREDO SAUCE

Steps:
- Wash, peel and cut potatoes in quarters. Place them in the pot and cover with water (optional - add 1 bay leaf and 2 pierced garlic cloves to infuse potatoes with extra flavor). Bring to a boil and cook additional 12-15 min. Add 1 Tbsp of salt only after water starts to boil. Don't overcook, potatoes should be smoothly pierced with a knife but not crumbly.
- While potatoes are cooking, dice onion and grate carrot. Add 1 Tbsp of canola oil to a large skillet and heat to medium high. Once the skillet is preheated, melt 2 Tbsp of butter and stir in onion. Saute onion for 5 min. Add carrot and saute for 3 more minutes until softened.
- Place onion/carrot mix in the blender & pulse a few times to make the mix more fine (this step is optional).
- Melt 1 Tbsp of butter in the same skillet and add blended carrot mix. Stir in 2 cups heavy cream and bring mixture to boil. Add 1/2 tsp salt, or more to taste.
- Remove skillet from the heat, add 1 can of Alfredo Sauce and stir.
- Drain cooked potatoes (and remove garlic and bay leaf if used). Pour sauce over potatoes and cover with lid. Wrap the pot with a blanket or a few towels for a minimum of 2 hours before serving (this step is NOT optional and infuses the potatoes with some fantastic flavor).
POTATOES ALFREDO WITH GARDEN PEAS

- Spray 3 1/2 to 4-quart slow cooker with nonstick cooking spray. Layer half each of potatoes, onions and garlic in sprayed slow cooker. In medium bowl, combine Alfredo sauce, half-and-half, salt and pepper; mix well. Spoon half of mixture over top. Layer with remaining potatoes, onions, garlic and sauce mixture. Do not stir.
- Cover; cook on high setting for 3 to 4 hours.
- About 30 minutes before serving, sprinkle peas over potato mixture. Cover; cook on high setting an additional 20 to 30 minutes. Stir gently to mix peas with potatoes before serving.

- Cut roast in half; place in a 5-qt. slow cooker. In a small bowl, combine the gravy mix, dressing mix and water; pour over roast. Top with peppers and onion. Cover and cook on low for 6-8 hours or until meat is tender., Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Meanwhile, remove roast and cut a portion of the meat into cubes, measuring 3 cups; cover and save for another use. Slice the remaining beef and keep warm. , Skim fat from cooking juices if necessary; pour into a large saucepan. Combine cornstarch and cold water until smooth; stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain potatoes; mash with Alfredo sauce, butter and pepper. Sprinkle with chives. Serve with sliced beef and gravy.

- 1. Pierce potatoes several times with a fork, wrap with wet paper towels and place on a microwave-safe plate. Microwave on high for 4-1/2 to 10 minutes or until tender. (This depends on your microwave, so keep checking. A knife should go in easily.) Allow potatoes to cool slightly. Meanwhile, in a bowl, combine the Alfredo sauce, garlic powder, pepper and thyme. Stir in 1/2 cup cheddar cheese and all the mozzarella cheese. Cut potatoes in half lengthwise. Scoop out the pulp and add to the sauce mixture; mix well. Spoon into potato shells. Sprinkle with remaining cheddar cheese. Microwave on high for 45 seconds or until cheese is melted. Top with green onions, crumbled bacon and fresh grated parmesan if desired.
- 2. *Potatoes take 1 1/2 hours at 400 in the oven to bake. (Pierced and wrapped in foil.) And 20-30 minutes to reheat through at 325-350. Add cheddar on top during last 5 minutes.

- Heat oven to 350 degrees; coat shallow 2-quart baking dish with nonstick cooking spray.
- Thinly slice potatoes.
- Reserve 1/4 cup cheese.
- Mix potatoes with remaining ingredients in large bowl.

- Grease a 13" x 9" baking dish.
- In a small saucepan, combine cream, milk, garlic, salt and pepper; bring just to a simmer over medium heat; remove from heat; let stand while preparing potatoes.
- Peel and thinly slice potatoes.
- Layer half of the potatoes in prepared baking dish; top with half of the cream mixture and half of the cheeses; repeat layering once with remaining potatoes, cream mixture and cheeses.

- Preheat oven to 400 degrees F (200 degrees C). Lightly oil a 2-quart baking dish.
- Cut off the top of the garlic head to expose the tops of the cloves. Place garlic on a sheet of foil and drizzle with olive oil. Seal the foil around the garlic. Roast until soft, about 25 minutes. Cool. Reduce oven temperature to 375 degrees F (190 degrees C).
- Place potatoes in large pot and cover with water. Set over high heat and bring to a boil. Simmer until the potatoes are fork tender, about 15 minutes. Drain; return to pot.
- Pour the Classico® Fresh Alfredo sauce, milk, and 4 tablespoons of the melted butter into the pot. Using a hand mixer, mix the potatoes until they no longer have lumps.
- Squeeze the soft roasted garlic into the potatoes; add salt and pepper to taste. Mix well.
- Mix the beaten eggs into the potatoes. Reserve a tablespoon of the parsley and chives for topping, and stir the rest into the potatoes. Spread the potato mixture into the prepared baking dish.
- Mix the panko with the remaining tablespoon melted butter; sprinkle evenly on top of the potatoes.
- Bake until the potatoes are golden brown, about 25 minutes. Garnish with the remaining parsley and chives.

ALFREDO POTATOES
These potatoes are so GOOD! I was inspired by the scalloped potatoes at Ruth Chris steakhouse but I think these are better!

- Peel and slice the potatoes in thick slices, about a half inch or so. I used enough potatoes to fill my casserole pan, you may need more or less depending on the size of your dish.
- Saute the chopped onions in butter until just translucent and add in the garlic. Cook about a minute, just enough to warm up the garlic.
- Preheat oven to 350. Add in the chicken broth, cream, and bouillon. Stir to mix. Put potatoes in milk mixture bring up to boil and cook until potatoes are fork tender.
- Once potatoes are tender, scoop out and place in casserole dish leaving the milk sauce in your pan.
- Add to the milk mixture the parmesan cheese and salt and pepper until cheese is incorporated in the milk. Pour over the potatoes just until your potatoesare completely covered ( you may not need all of it) Sprinkle cheddar cheese over top and bake for half an hour or until cheese is bubbly and slightly browned on top.
STUFFED ALFREDO POTATOES
If your prepared alfredo sauce already has garlic in it, then omit the garlic powder. Prep time does not include baking the potatoes. This recipe may be doubled if desired. My Alfredo sauce #164953 works great with this recipe!

- Bake the potatoes until fork-tender (about 1 hour) allow the potatoes to cool enough to handle.
- In a bowl combine the alfredo, garlic powder (if using) salt and pepper and a pinch of dryed thyme.
- Add in about 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese and finely chopped green onion; mix to combine.
- When the potatoes are cool enough to handle, slice the two potatoes in half (making 4 halves).
- Carefully scoop out the pulp from each half, then add to the alfredo/cheese mixture; mix until smooth.
- Stuff the mixture evenly between the four halves.
- Sprinkle the tops with grated cheddar cheese.

- Preheat oven to 400°F.
- In a medium bowl, whisk the Alfredo sauce and milk until blended.
- Add ham, Swiss cheese and peas to another bowl and mix well.

- Bring 5lb potatoes to boil in salted water until tender, drain water, then put aside. Hint: You can also use Simply Potatoes in your grocery's refrigerated section and just pop each of them in the microwave for 3 minutes. This really speeds things up.
- Melt butter in a medium sauce pan then add cream cheese and garlic powder. Stir until smooth. Add milk, a little at a time, then stir in Parmesan. Remove from heat when the sauce reaches a desired consistency. Hint: you can also use your favorite jarred Alfredo sauce, or buy a packet of McCormick's instant creamy garlic Alfredo mix (follow cooking directions on the package). They'll both do the trick, as well.
- Add Alfredo sauce to diced potatoes and mash together until it reaches a fluffy texture.
- Add salt and pepper to taste. Garnish with parsley.
