6 halibut fillets (1-1/2 lb.), 2 inches thick
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/3 cup KRAFT Grated Parmesan Cheese
1/3 cup KRAFT Real Mayo Mayonnaise
1 Tbsp. lemon pepper seasoning
dash ground red pepper (cayenne)
3/4 cup panko bread crumbs

Steps:

  • Heat oven to 425ºF.
  • Place fish on rimmed baking sheet sprayed with cooking spray.
  • Mix all remaining ingredients except bread crumbs; spoon over fish. Top with crumbs.
  • Bake 20 to 25 min. or until fish flakes easily with fork.

1-1/4 pounds halibut fillets
1 medium green pepper, cut into 1-inch pieces
1 medium onion, cut into 1-inch wedges
1 can (20 ounces) pineapple chunks, drained
8 to 10 cherry tomatoes
BARBECUE SAUCE:
1/2 cup ketchup
1/4 cup canola oil
3 tablespoons orange juice
2 to 3 green onions, finely chopped
2 garlic cloves, minced
1 teaspoon grated orange zest
1/4 teaspoon salt

Steps:

  • Cut fish into 1-in. pieces. On metal or soaked wooden skewers, alternately thread the fish, green pepper, onion, pineapple and tomatoes. In a small bowl, whisk the sauce ingredients until blended., On a lightly oiled grill rack, grill kabobs, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until fish flakes easily with a fork, basting occasionally with sauce.

HALIBUT WITH LEMON-BUTTER AND CRISPY SHALLOTS



Halibut with Lemon-Butter and Crispy Shallots image

1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Zest of 1 large lemon
1/2 stick unsalted butter, at room temperature
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large cloves garlic, smashed
4 halibut fillets (each 4 to 5 ounces)
1/2 cup grapeseed oil
2 large shallots, cut into rounds, separated into rings
Lemon wedges, for garnish

Steps:

  • For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
  • For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
  • Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
  • Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. Top with a generous dollop of lemon-butter and pile the shallots alongside or scatter around the fish. Garnish with the lemon wedges and serve.

1/2 cup dry white wine or unsweetened apple juice
2 tablespoons lime juice
2 tablespoons olive oil
2 tablespoons diced onion
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1-1/2 pounds halibut, cut into 1-inch cubes
1 small red onion, cut into 1-inch pieces
1 medium Golden Delicious apple, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces

Steps:

  • In a large bowl, combine the first seven ingredients. Pour half into a large resealable plastic bag; add halibut. Seal bag and turn to coat. , Pour remaining marinade into another large resealable plastic bag; add the onion, apple and red pepper. Seal bag and turn to coat. Refrigerate fish and apple mixture for 4-6 hours, turning occasionally., Drain fish, discarding marinade. Drain fruit and vegetables, reserving marinade for basting. On eight metal or soaked wooden skewers, alternately thread the fish, onion, apple and red pepper. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 6-10 minutes or until fish flakes easily with a fork and fruit and vegetables are tender, turning and basting frequently with reserved marinade.

1/4 cup lemon juice
1/4 cup olive oil
3 teaspoons snipped fresh dill, divided
1/2 teaspoon salt
1/2 teaspoon white pepper
1-1/2 pounds halibut steaks, cut into 1-1/2-inch pieces
18 uncooked large shrimp, peeled and deveined
18 sea scallops
1 each large green, sweet red and yellow peppers, cut into 1-inch pieces

Steps:

  • In a small bowl, combine the lemon juice, oil, 1 teaspoon dill, salt and pepper. , Place the halibut, shrimp and scallops in a large resealable plastic bag; place the peppers in another large resealable plastic bag. Divide marinade between both bags. Seal bags and turn to coat; refrigerate for 15-20 minutes. Drain and discard marinade., On six metal or soaked wooden skewers, alternately thread the halibut, shrimp, scallops and peppers. Sprinkle with remaining dill. Broil 6 in. from the heat or grill, covered, over medium heat for 4-5 minutes on each side or until halibut flakes easily with a fork, shrimp turn pink and scallops are firm and opaque.

1 teaspoon limejuice
3 garlic cloves, minced
3 tablespoons minced fresh dill
2 tablespoons dry white wine
salt and pepper to taste
1 pound halibut, boneless, skinless, cut into 1" chunks
½ yellow bell pepper, seeded, cut into 1" pieces
½ red bell pepper, seeded, cut into 1" pieces
1 red onion, cut into 1' pieces
4 button mushrooms
spray oil

Steps:

  • Combine in medium bowl oil, limejuice, cloves, dill, wine, salt and pepper. Mix well. Add halibut and vegetables, mix well to coat each piece well. Cover with plastic wrap and let marinade for 20 minutes. Prepare grill to medium-high temperature. Thread on skewers, alternating halibut and vegetables ending each skewer with mushroom. Spray each skewer lightly with oil. Place on grill for 3 minutes and turn. Grill an other 4 minutes, turning skewers once or twice.
