2 teaspoons grated orange rind
1/4 teaspoon kosher salt
1/8 teaspoon ground red pepper
1 garlic clove, minced
1 (1 lb) skirt steak, trimmed
cooking spray

Steps:

  • Combine first 5 ingredients in a bowl, stirring well.
  • Lightly coat steak with cooking spray.
  • Rub rind mixture evenly over steak.
  • Heat a grill pan over medium-high heat.
  • Coat pan with cooking spray.
  • Add steak to pan; cook 5 minutes on each side or until desired degree of doneness.
  • Let stand for 5 minutes; cut steak diagonally across grain into thin slices.

This tangy rub will make your grilled steaks a family favorite.

For the steak:
6 to 10 oz. sirloin steak (or your favorite cut)
3 packets of True Lemon or True Lime
1 tablespoon coarsely ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon sweet paprika
1/4 teaspoon dark brown sugar
For the sauce:
1 stick of butter
1/2 tablespoon of the rub

Steps:

  • First, prepare the rub: thoroughly mix all dry ingredients in a shaker bottle (store unused rub in an airtight container).
  • Generously coat steaks with rub and let stand for at least 30 minutes.
  • Grill steaks to preference and serve.
  • For the sauce, melt the stick of butter and blend in 1/2 tablespoon of the rub.

The deeply-flavorful spice mix rubbed onto this steak is packed with coriander, coffee, cocoa powder, and brown sugar.

For the chutney:
1/2 grapefruit, thinly sliced, seeds removed
8 ounces kumquats, sliced, seeds removed
1 shallot, finely chopped
2/3 cup sugar
Pinch of kosher salt
1 tablespoon Champagne vinegar or white wine vinegar
For the steak and assembly:
2 tablespoons coriander seeds
2 tablespoons ground coffee
2 tablespoons kosher salt
4 teaspoons light brown sugar
4 teaspoons unsweetened cocoa powder
1 tablespoon freshly ground black pepper
Vegetable oil (for grilling)
2 hanger steaks, center membrane removed, each cut into 4 pieces
Special Equipment
A spice mill or a mortar and pestle

Steps:

  • Make the chutney:
  • Bring grapefruit, kumquats, shallot, sugar, salt, and 1/4 cup water to a simmer in a small saucepan over medium-low heat, stirring occasionally and lowering heat if needed, until citrus is soft and liquid is syrupy, 45-60 minutes. Stir in vinegar and let cool. Cover and chill.
  • For the steak and assembly:
  • Toast coriander seeds in a small skillet over medium heat, tossing occasionally, until fragrant, about 2 minutes. Let cool, then finely grind in spice mill or mortar and pestle. Mix ground coriander, coffee, salt, brown sugar, cocoa powder, and pepper in a small bowl.
  • Prepare a grill for medium-high heat; lightly oil grate. Season steaks generously with rub (you'll have some left over). Grill steaks, turning occasionally, until lightly charred and cooked to desired doneness, 8-10 minutes for medium-rare. Transfer to a cutting board and let rest 10 minutes, then slice against the grain. Serve with citrus chutney.
  • Do Ahead
  • Chutney can be made 1 week ahead. Keep chilled. Rub can be made 1 day ahead. Store airtight at room temperature.

1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
2 clementines, peeled and sectioned
1 green onion, chopped
1 tablespoon finely chopped walnuts, toasted
1/3 cup dry red wine or reduced-sodium beef broth
Hot cooked rice, optional

Steps:

  • Sprinkle steaks with salt and pepper. In a large nonstick skillet, cook steaks in oil over medium heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, combine the clementines, onion and walnuts; set aside. Remove steaks and keep warm. , Add wine or broth to the skillet, stirring to loosen browned bits. Bring to a boil. Reduce heat; simmer, uncovered, for 1-2 minutes or until liquid is reduced to 2 tablespoons. Spoon over steaks. Serve with clementine mixture and rice if desired.

4 New York strip steaks, 1 1/2 to 2 inches thick (2 1/2 pounds total New York strip)
1 -2 teaspoon olive oil
2 teaspoons kosher salt
2 teaspoons black pepper, coarsely ground
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper (hot paprika fine too)
1/2 teaspoon thyme, ground
1/2 teaspoon brown sugar
1/2 teaspoon orange peel, dried (optional)

Steps:

  • Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
  • In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
  • If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.
  • Grill for about 7 minutes per side, or until an instant-read thermometer registers 140 degrees for medium-rare. Let steaks rest, covered, for 5 minutes before serving.
