¼ cup Dijon mustard
2 tablespoons brown sugar
1 teaspoon dried parsley flakes
½ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
1 ¼ pounds pork tenderloin
¾ pound small potatoes (such as The Little Potato® Company), halved
1 (12 ounce) package fresh green beans, trimmed
1 tablespoon olive oil
salt and ground black pepper to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Whisk mustard, brown sugar, parsley, thyme, salt, and pepper together in a large bowl. Place tenderloin into the bowl and roll through the mustard mixture until evenly coated on all sides.
  • Place potatoes, green beans, and olive oil into a separate bowl. Season with salt and pepper to taste and stir until evenly combined. Set aside.
  • Place tenderloin into the basket of the preheated air fryer and cook, undisturbed, until slightly pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer to a cutting board and let rest for 10 minutes.
  • Meanwhile, place green beans and potatoes into the air fryer basket and cook for 10 minutes, shaking halfway through cook time.
  • Slice tenderloin and serve with potatoes and green beans.

Pork tenderloin (1.25lbs - 1.75lbs)
2 tbs brown sugar
1 tbs smoked paprika
1.5 tsp salt
1 tsp ground mustard
1/2 tsp onion powder
1/2 tsp ground black pepper
1/4 tsp garlic powder
1/4 tsp cayenne powder (optional)
1/2 tbs olive oil

Steps:

  • Mix all dry ingredients in a bowl.
  • Trim the pork tenderloin of any excess fat/silver skin. Coat with a 1/2 tablespoon olive oil. Rub spice mixture on entire pork tenderloin.
  • Preheat air fryer to 400° F for 5 minutes. After 5 minutes, carefully place pork tenderloin into air fryer and air fry at 400° F for 20-22 minutes. Internal temp should be 145° - 160° F.
  • When air fryer cycle is complete, carefully remove pork tenderloin to a cutting board and let rest for 5 minutes before slicing. Save any juices to serve over sliced meat.

Steps:

  • Preheat air fryer to 360°F (180°C).
  • Mix sea salt, rosemary and oil on a plate.
  • Pat the beef tenderloin dry with paper towels. Place on plate and turn so that the oil-herb mix coats the outside of the beef.
  • Place beef tenderloin in the air fryer basket.
  • Set to cook in air fryer for 15 minutes.
  • This should give you medium-rare beef. Though is best to monitor the temperature with a meat thermometer to ensure that it is cooked to your liking. Cook for additional 5 minute intervals if you prefer it more well done.
  • Remove beef tenderloin from air fryer, cover with kitchen foil and leave to rest for at least ten minutes before serving. This allows the meat to finish cooking and the juices to reabsorb into the meat.
  • Carve the beef tenderloin thinly against the grain to serve.

1 celery rib, chopped
1/4 cup chopped onion
4 slices white bread, cubed

  • In a large skillet, heat oil over medium-high heat. Add celery and onion; cook and stir until tender, 4-5 minutes. Remove from the heat. In a large bowl, combine bread and seasonings. 1 - 1 1/2 Pork Tenderloin
1 Tablespoon smoked paprika
2 teaspoons kosher salt
3/4 teaspoons black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon oregano
3/4 teaspoons mustard powder
1/2 teaspoon cumin
1/2 teaspoon sage

Steps:

  • In a large mixing bowl whisk together the paprika, salt & pepper, garlic powder, onion, powder, oregano, mustard powder, cumin and sage. Set aside.
  • Place Pork tenderloin on a cutting board and with a sharp knife remove the silverskin from the pork. Discard the silverskin.
  • With a dry paper towel pat all the surface of the pork removing as much moisture as possible. Throw away the damp paper towels.
  • You will use 2 tablespoons of pork rub per each pound of pork tenderloin. Pictured is a 1 pound tenderloin.
  • Remove 2 tablespoons of the pork rub from the mixing bowl.
  • Place pork in the mixing bowl with the remaining pork rub and coat the tenderloin with the rub. Gently pat the rub on the pork.
  • Shake off any excess pork rub and place in the air fryer basket.
  • Turn the air fryer to 375°F degrees and set the timer to 17 minutes or according to the manufactures recommendation. Turn the pork half way though the cooking time. Cook until the internal meat thermometer reaches 140°F degrees.
  • Let the pork tenderloin rest for 3 minutes before cutting into it. The meat will continue to cook and according to the National Pork Board, pork tenderloin should reach 145°F degrees.

2 pork tenderloin (well trimmed, about 12 oz. each)
2 tablespoons butter
1 garlic clove (minced)
2 shallots (chopped)
1 1/2 cups mushrooms (white and cremini, sliced)
2 cups fresh spinach
2 tablespoons red wine
0.5 (125 g) package brie cheese (chopped)
1/2 tart apple (with peel, chopped)
2 tablespoons walnuts (toasted, chopped)
1 teaspoon dried thyme
salt and pepper
canola oil

Steps:

  • .Using a sharp knife, cut each pork tenderloin lengthwise, be careful not to slice right through the bottom.
  • Open and flatten each loin and then set them aside.
  • Heat butter in a large skillet over medium heat.
  • Saute garlic, shallots and mushrooms.
  • Add the spinach and saute briefly.
  • Add the red wine and scrape up any browned bits.
  • Remove from heat and add Brie, apple, walnuts and thyme.
  • Season to taste with salt and pepper.
  • When it is cool enough to work with spoon 1/2 of the stuffing onto each loin. Fold over to enclose the stuffing. Tie to secure.
  • Brush very lightly with Canola oil.
  • Roast at 375F (190C) for 25-30 minute until a meat thermometer registers 155F (68C).
  • Remove from oven and tent loosely with foil. Let rest for 5 minutes.
  • Remove string and slice to serve.

Steps:

  • Remove the pork from any packaging and dry with some paper towels.
  • Score the skin with a sharp knife. Most butchers will do this for you.
  • Rub the skin with olive oil and salt.
  • Preheat the air fryer to 200°C (390°F).
  • Place the pork into the air fryer skin side up.
  • Cook for 30 minutes.
  • Turn the air fryer down to 180°C (350°F) and cook for 40 minutes.
  • Depending on the weight of the pork, you may need to cook it for longer. Add roughly 30 minutes for every extra 500g (1.1 lb). The internal temperature of the pork should be at least 65°C (150°F).
  • Allow to rest for ten minutes.

As an Iowan - a breaded pork tenderloin sandwich is near and dear to my heart but I just can't find a good one here in Ohio. So - I took to the kitchen and made my own! The best part is you can make big sandwiches with them or slice them up and make tenders or sliders!

2 boneless pork chops
1/2 cup flour
2 eggs (lightly beaten)
1 cup Panko bread crumbs
salt
pepper
olive oil spray

Steps:

  • Place one pork chop in a ziploc bag and pound them until just 1/4-inch thick - using the flat side of a meat tenderizer.
  • Get two plates and a bowl. In one plate, pour flour. In bowl, whisk together eggs, salt & pepper. In the last plate, place the bread crumbs and stir in salt & pepper.
  • For full size sandwich - Take one flattened chop and dredge both sides in flour, then egg, then bread crumbs. For tenders - slice flattened chop into 3-4 slices and dredge as noted.
  • Gently place pork into air fryer. Spritz with olive oil spray.
  • For full size sandwich - air fry at 400 degrees for 5 minutes. Open air fryer, flip, spray and air fry for 5 minutes more. For tenders - air fry at 400 for 4 minutes per side - spraying each side with olive oil spray. Transfer to a plate and repeat the process until all pieces of pork are fried.
  • For full size sandwich - serve on bun and top with mayo, mustard, ketchup and pickles. For tenders - dip in your favorite sauce! (Honey Mustard, Ranch or Fry Sauce!)
