GEORGIAN BEANS (LOBIO)

Steps:
- Soak beans overnight or cook beans for 2 minutes in plenty of water and allow to sit for one hour.
- Drain water from beans and add plenty of fresh water to cover with onion, carrots and celery. Cover and simmer for about one hour, until beans are tender, but not mushy. Drain and set aside.
- Simmer the prunes in 1/3 cup of the vinegar for 20 minutes.
- With food processor running, put garlic through tube. Add remaining vinegar, tamarind paste, hot pepper flakes, coriander seed, fenugreek, olive oil, prunes and vinegar and process to a paste. Add the cilantro and process to chop fine. Season with salt and pepper. Stir into warm beans.

GERMAN GREEN BEANS
This is another simple but tasty dish that I found in one of my grandmother's old recipe files. My family loves it, and it makes a nice alternative for the traditional holiday green bean casserole. It's good all year long, but especially when the weather turns cool.

Steps:
- Fry the bacon in a large cast-iron skillet until crisp, then drain on paper towels, leaving the fat in the pan.
- Add the onion and cook until light golden and tender, then add the flour and stir, cooking for about 1 minute.
- Add the sugar, salt, pepper, bean liquid or water, and vinegar, stir, and bring to a rolling boil; Allow to boil for about 3 minutes to thicken the sauce. Add the bacon bits at this time.
- Add the green beans and cook until heated through, about 7--8 minutes.
- Transfer the beans and sauce to a serving bowl and top with crumbled bacon.
GEORGIAN GREEN BEANS

Steps:
- Bring a large pot of lightly salted water to boil. Place green beans in the water, and cook about 3 minutes. Remove from heat, and drain in a colander. Place under cold water until no longer hot. Drain, and pat dry.
- Melt 1 tablespoon butter in a medium skillet over medium heat. Stir in the onion and garlic, and saute until onion is tender. Melt remaining butter in the skillet, and mix in the green beans. Stir in the vinegar and broth. Season with salt and pepper. Mix in cilantro. Cover, reduce heat, and simmer 15 minutes, or until green beans are tender.
