SPICED THYME AND LIME ICED TEA

Steps:
- Bring 6 cups water, sugar, thyme, cinnamon sticks, lime juice and lime zest to a boil in a 5-quart saucepan over medium-high heat. Remove the pan from the heat and add the tea bags. Steep the tea for 15 minutes. Remove the tea bags and allow the mixture to cool to room temperature, about 1 hour. Strain the mixture into a pitcher and refrigerate until ready to serve.
- Pour the tea into 4 ice-filled glasses and serve.
SWEET LIME ICED TEA
What's more Southern than sweet iced tea? I've lived in Florida all my life, yet I'm not a huge fan of the overly sweet iced tea that is popular here in the South. My grandma has made this version for as long as I can remember and it is the BEST!! Not too sweet, and not too bitter...and the fresh lime juice --- amazing!!!

- Pour the water into a gallon sized jar over the tea bags. Allow to steep for 45 minutes. Remove and discard the tea bags. Stir in the sugar and lime juice until the sugar has dissolved. Cool to room temperature; refrigerate until cold before serving.

- In a medium pot, bring water to a boil. Turn off heat, add tea, stir and let steep while cooling down completely or until lukewarm (I place mine in a shady spot on a stone patio outside on hot summer days).
- Transfer tea to a large pitcher by laddling it through a mesh strainer; discard the tea leaves.
- Add maple syrup, squeeze lemon and lime juice, add the peels (skins) to the pitcher, stir with a long wooden spoon and let tea sit for 10 minutes. Discard the citrus skins otherwise iced tea will be bitter tasting.
- Now you can store your iced tea covered with plastic wrap or lid in a fridge for quite a few days. Right before serving, add ice and a can of club soda to a pitcher, stir and enjoy. Garnish with thin lime slices, if desired.

SWEET RASPBERRY LIME ICED TEA

- Put the tea bags in an 8-cup measuring cup or heat safe bowl. Boil the water, pour it over the tea bags, and allow to steep for at least 10 minutes. Allow to cool and remove tea bags.
- In a small saucepan combine the sugar and 1 cup water and bring to a boil. Cook briefly until sugar is dissolved. Remove from heat and add raspberries. Let come to room temperature.
- Combine the tea and raspberry sugar syrup, to taste. Put ice into 4 (12-ounce) glasses. To each squeeze in a wedge of lime, pour sugared tea over, and garnish with a sprig of mint.

LIME ICED TEA
A very refreshing summer drink. This recipe is from Iced Tea by Fred Thompson. It is suggested in the book that some crushed mint leaves and sour mash whisky can be added for a nice cocktail. I made it using splenda which worked out very well. Prep time includes time to bring water to a boil.

- Bring 4 cups of water to a boil. Remove from heat and add tea bags. Steep for 5 minutes. Remove tea bags without squeezing( squeezing can add bitterness).
- While tea is steeping, mix the limeade and sugar in a 2 quart heat-proof pitcher.
- Pour the tea into the pitcher and stir. Add the other 3 cups of cold water and let cool, then chill.
- Serve over ice with a lime wedge on the glass.

POMEGRANATE ICED TEA
This mocktail can be made with freshly squeezed juice from a pomegranate or by using Pomegranate Juice. To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. One large pomegranate will produce about 1/2 cup of juice. I got this from a pomegranate site.

- Place water in a medium pot and bring to a simmer over high heat.
- When water simmers, remove from heat, add tea bags and mint, cover and let steep for 10 minutes.
