1 loaf (14 ounces) ciabatta bread, cut into 1/2-inch cubes (about 10 cups)
3/4 cup olive oil
3 garlic cloves, minced
1/4 teaspoon pepper
1/4 cup balsamic vinegar
1/4 teaspoon salt
2 large tomatoes, chopped
1/4 cup sliced olives
1/3 cup coarsely chopped fresh basil
2 tablespoons chopped fresh Italian parsley
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350°. Place bread cubes in a large bowl. In another bowl, mix oil, garlic and pepper; drizzle 3 tablespoons over bread and toss to coat. Reserve remaining oil mixture. Spread in a single layer on two 15x10x1-in. baking pans., Bake until crisp and light brown, 12-18 minutes, stirring occasionally., Meanwhile, whisk vinegar and salt into reserved oil mixture. Add tomatoes, olives and herbs; toss to coat., Cool bread cubes slightly. Add to tomato mixture; toss to combine. Sprinkle with cheese; serve immediately.

Italy's famous bread salad is usually associated with Tuscany, but my husband's father emigrated from Sicily, so I made up this version of bread salad using the flavors of Sicilian cuisine.

8 ounces country style white bread, cut into 1 inch cubes
3 tablespoons garlic flavored olive oil
½ teaspoon coarse salt
1 (15 ounce) can garbanzo beans, rinsed and drained
2 cups red or yellow teardrop tomatoes, halved
⅓ cup chopped green bell pepper
⅓ cup chopped red bell pepper
1 small red onion, cut into 3/4 inch slices
10 kalamata olives, pitted and halved
⅓ cup basil pesto
¼ cup balsamic vinegar
1 tablespoon minced fresh rosemary
¼ teaspoon black pepper
4 ounces crumbled goat cheese
1 head green or red leaf lettuce
¼ cup toasted pine nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss the bread cubes with the olive oil to evenly coat. Sprinkle with salt, and toss again. Spread the cubed bread evenly over a baking sheet, and bake in the preheated oven until golden brown, about 12 minutes. Remove from oven and allow to cool completely.
  • Toss together the garbanzo beans, tomatoes, peppers, onion, and kalamata olives in a large bowl. In a separate bowl, whisk together the pesto, balsamic vinegar, rosemary, and pepper. Toss the tomatoes with the pesto mixture, and let stand at room temperature for 30 minutes to 1 hour.
  • To serve, toss the toasted bread cubes and goat cheese with the tomato mixture. Line a serving platter with a few lettuce leaves. Shred the remaining lettuce, and mound in the center of the platter. Spoon the bread mixture over the lettuce, and sprinkle with toasted pine nuts.

6 slices Italian bread (1-inch thick)
1 cucumber, pared, thinly sliced
2 bell peppers, combination yellow and red, seeded, cut into thin slices
1/8 cup snipped fresh chives
1 medium red onion, thinly slivered (about 1 cup)
12 oil-cured black olives
1/4-1/3 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
3 ripe large plum tomatoes, cut into large dice
3 tablespoons capers, drained
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons chopped fresh basil
olive oil, and
red wine vinegar (for serving)

Steps:

  • Heat broiler. Arrange bread on baking sheet lined with aluminum foil. Toast 4-6 inches from heat, turning once, until light golden. Tear into large pieces and drop into mixing bowl. Place half the bread in large salad bowl. Scatter half the cucumbers, peppers, and chives, then half the onions and olives over bread.
  • Combine 1/4 cup oil, both vinegars, tomaotes, capers, garlic, salt, and pepper and spoon half over salad. Repeat layers with remaining ingredients. Stir once or twice but do not combine thoroughly. If bread seems dry, add oil. Refrigerate covered 1 hour to allow flavors to blend.
  • About 20 minutes before serving, let panzanella warm to room temperature. Taste and adjust seasonings. Garnish salad with basil and serve with cruets of oil and vinegar.

Everything in this salad is fresh, except the bread! Prepare this salad by using a loaf of artisan bread or rosemary bread that is a touch stale. If your bread is too fresh, toast it until it is about half as dried and crunchy as a crouton.

1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
⅛ cup chopped fresh thyme
¼ cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • Rub a peeled clove of garlic around a wooden salad bowl.
  • Pull apart or chop the bread into bite-size pieces.
  • In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

2 tomatoes, cut into bite-size pieces
1 small cucumber, peeled and sliced
1 small red onion, thinly sliced
1 clove garlic, very finely minced
1 cup fresh basil leaf, torn into small pieces
1/2 cup extra virgin olive oil, plus more as needed
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar, plus more as needed
salt & freshly ground black pepper, to taste
6 -8 slices thick country bread, torn into bite-size pieces (sourdough is good - dense, bakery bread)

Steps:

  • In a bowl, combine the tomatoes, cucumber, onion, garlic and basil.
  • Drizzle with the 1/2 cup olive oil and the 3 tblsps vinegar, season with salt and pepper and toss well.
  • Place half of the bread in a wide, shallow bowl.
  • Spoon half of the tomato mixture over the bread.
  • Layer the remaining bread on top and then the remaining tomato mixture.
  • Cover and refrigerate for 1 hour.
  • Just before serving, toss the salad and adjust the seasonings with salt and pepper.
  • If the bread seems dry, add a little oil or vinegar.
  • Serve immediately.

1 large egg, beaten
½ cup panko bread crumbs
¼ cup grated Parmesan cheese
1 (6 ounce) jar jalapeno-stuffed green olives, drained

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place flour in a bowl. Place beaten egg in a separate bowl. Combine bread crumbs and Parmesan cheese in a third bowl.
  • Coat olives first in flour, then in egg, and finally in the bread crumb mixture.
  • Place 1/2 of the olives in the basket of the air fryer. Spray the tops with cooking spray.

salt and pepper to taste
3 cloves garlic, minced
¼ cup olive oil
2 tablespoons balsamic vinegar
4 medium ripe tomatoes, cut into wedges
¾ cup sliced red onion
10 basil leaves, shredded
½ cup pitted and halved green olives
1 cup fresh mozzarella, cut into bite-size pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss bread with 1/3 cup olive oil, salt, pepper, and garlic. Lay bread on a baking sheet, and toast in the preheated oven until golden, about 5 to 10 minutes; allow to cool slightly.
  • While the bread is in the oven, whisk together 1/4 cup of olive oil and balsamic vinegar. Gently toss together the bread, tomatoes, onion, basil, olives, and mozzarella cheese. Toss with the vinaigrette and let stand for 20 minutes before serving.

1 (16 ounce) round loaf crusty bread
6 ounces bocconcini (1 cup, halved)
5 ounces provolone cheese, cut into 3/4-inch by 1/4-inch pieces
4 ounces prosciutto or 4 ounces deli ham, thinly sliced
2 large tomatoes, cut into wedges
1 cup assorted pitted deli olive
3 ounces pepperoni slices, 3/4 cup
1/2 cup red onion, sliced
1/2 cup Italian salad dressing
5 cups salad greens
1 cup fresh basil leaf

Steps:

  • Cut off top third of bread; cut into 3/4-inch pieces.
  • Place on baking sheet, let stand at room temperature about 1 hour to dry.

2 1/2-3 cups flour
2 1/4 teaspoons yeast (1 pkg)
2 tablespoons sugar
1 teaspoon salt
1/3 cup hot water
2 eggs
1/4 cup butter, room temperature
1/2 cup green pimento stuffed olive
1/2 cup pitted ripe black olives (or other olive of choice)
1 egg yolk, beaten

Steps:

  • In a mixing bowl, pour 2 cups flour and add the dry ingredients. Stir to blend.
  • Form a well in the flour and pour in the hot water.
  • With a wooden spoon, pull flour into the water to form a batter.
  • Break the eggs and drop into the batter.
  • Vigorously stir the eggs and batter together till the eggs have been absorbed.
  • Cut the butter into 2 or 3 pieces and drop into the mixture.
  • With a wooden spoon or mixer flat beater, mix till the batterlike dough is smooth and silky, about 2 minutes.
  • Stir in flour, 1/2 cup at a time, till the dough is a ball and can be turned out of the bowl onto a floured surface.
  • The dough should not be sticky because of the high fat content of the butter and eggs, but if it is, add sprinkles of flour.
  • Knead by hand or under a dough hook till smooth and elastic, about 8 minutes.
  • Knead with a strong push-turn-fold motion and occasionally lift the dough and throw it back onto the work surface. Be aggressive!
  • First rising:.
  • Place the dough in a greased bowl and set aside at room temp to rise. (because of its richness, the dough may be slow to rise, but it will double in about 1 1/2 hours - or less if using rapid rise yeast).
  • Shaping:.
  • Drain the olives and mix the green and black together so they can be uniformly scattered over the dough. Set aside.
  • Punch down the dough and turn onto the floured work surface.
  • Pat and push the dough into a 14 inch square.
  • Allow it to relax for 3-4 minutes before scattering the olives.
  • Press the olives lightly into the dough.
  • Roll up the dough as for a jelly roll to enclose the olives and place seam side down on a baking sheet/stone.
  • Tuck the open ends of the dough under to make a smooth surface.
  • Pat the loaf to flatten and shape into an oval about 2 inches thick.
  • Second rising:.
  • Cover the loaf with waxed paper or plastic wrap and leave at room temp till puffy, about 30 minutes.
  • Preheat oven to 350 20 minutes before baking.
  • Uncover the loaf and brush with beaten egg yolk.
  • Bake in oven till richly browned, about 45 minutes. (Watch your time, depending on how your oven heats - don't over brown, but bake till the loaf sounds a bit hollow when tapped).
  • Place on a rack and cool for at least 10 minutes. Serve warm or at room temperature.
