AIR FRYER MINI CHEESE FRITTATAS
Air Fryer Mini Cheese Frittatas are a great and easy breakfast! If you have been looking for a great healthy breakfast dish, this is one of my favorites!

Steps:
- Start by using olive oil and greasing the muffin pan/tin.
- Then in a small bowl, crack the eggs, and put them into the bowl. Add the milk, salt, pepper, and shredded cheese, and mix well.
- Pour the mixture into the muffin tin/pan.
- Set the pan into the air fryer basket, and set the temperature to 350 degrees F (air fryer setting) for 5 minutes.
- Plate, serve and enjoy!

AIR FRYER ESSENTIALS: CHEESY BACON/EGG MUFFIN
These are easy/peasy to assemble and they taste really, really yummy. You can vary the cheese (tart, mild, or a combination), and choose a different protein (bacon, ham, sausage), or leave it out. In fact, next time I think that I will add a slice of tomato. And, as the weather gets colder... a bit of cayenne. The air fryer...

- 1. PREP/PREPARE
- 2. To make these, you will need an air fryer, or they could be baked in an oven set to convection mode for similar results.
- 3. Gather your ingredients (mise en place).
- 4. Add the diced bacon to a pan and cook until it has reached your level of doneness.
- 5. Drain on paper towels and reserve.
- 6. Chef's Note: Whatever you choose, bacon, sausage, ham, etc., make sure that it is precooked.
- 7. Set your air fryer to 375f (190c), and let it preheat for about 5 minutes.
- 8. Chef's Tip: Most air fryer recipes do not talk about preheating; however, I find that I get more consistent results if I preheat. In most cases, 5 or 6 minutes does the trick.
- 9. Cut the English muffin in half, lightly toast, and then dig a small indentation out of the middle of each one.
- 10. Chef's Tip: If you are using bacon, then lightly brush some of the bacon grease over the cut tops. If you are using something else, melt a bit of butter, and brush over the cut tops. It makes a world of difference to the final product.
- 11. Chef's Tip: I used a biscuit cutter to define the indentation, and then used a spoon to scrape it out.
- 12. Add two tablespoons of the cheese, to each half, and then add the bacon.
- 13. Add the eggs.
- 14. Divide the rest of the cheese over the tops. If you want to use more cheese... I am not stopping you :-)
- 15. Chef's Tip: I like to crack the egg in a bowl... That way I can check for any pieces of shell, and make sure the yolk stays whole.
- 16. Chef's Note: Sprinkle with a bit of salt and pepper, to taste.
- 17. Place into the air fryer and cook for about 4 - 5 minutes.
- 18. PLATE/PRESENT
- 19. Remove from the air fryer and serve while nice and hot. Enjoy.
- 20. Keep the faith, and keep cooking.
AIR FRYER EGG BITES
Steps:
- Place 4 silicone cupcake holder into your air fryer basket. Crack 1 egg into each one, then add 1 tsp milk into each one.
- Top each one off with some diced onions, green pepper, bacon bits and cheese. Sprinkle a bit of salt and pepper on the top.
- Air fry at 300 degrees for 10-13 minutes or until lightly browned on top and enjoy!

- Preheat the air fryer to 340 degrees F (170 degrees C) for 5 minutes.
- Combine flour, sugar, and cinnamon in a bowl. Add milk, melted butter, egg, and vanilla extract. Blend until well combined. Fold in blueberries. Add mixture to silicone cupcake liners using a small scoop, filling each 3/4 way full. Place carefully into the air fryer basket.
- Air fry muffins for 14 minutes.

- In a bowl whisk together wet ingredients, then incorporate flour and cinnamon. Once mixture is blended, gently fold in berries. * If using boxed, follow directions on box for ingredients needed in mix.
- Preheat air fryer to 340 degrees F for 5 minutes.
- Place silicone muffin cups into basket, fill each one 3/4 of the way full.
- Cook for 12-14 minutes or until toothpick comes out clean in center.

- Fried food with wet batter. Beer batter on fried fish, corn dogs, and coated wings will crisp into a delicious shell when you fry in oil. The hot oil bath in a deep fryer sets the wet outer layer by rapidly drying the batter into the signature crispy coating.
- Broccoli. You may be dying to cook broccoli in your air fryer, but air fryers can allow food to get dry. Broccoli without any oil might even turn to dust.
- Entire roasts or whole chickens. If you're wondering if air fryers are just a gimmick, rest assured, this kitchen tool cooks much more than french fries and finger foods.
- Most cheese. Melting a classic grilled cheese or making homemade jalapeño poppers in an air fryer can cause issues. Flash-melting some Midwest cheese curds would be delicious, but similar to wet batter, the melt makes a big mess.
- Hamburgers. Hamburgers are a classic favorite, and everyone has a preference on how to prepare it. Many cooks pride themselves on their grill skills whether they're presenting the Midwest smash burger or insisting a patty cooked to perfection should wear only ketchup.

- Olive oil. Air fryers are full of contradictions, but they can provide a simple and fun way to cook a meal. No, an air fryer isn't technically a "fryer" in the traditional sense.
- Delicate leafy greens. Greens in an air fryer need to be selected carefully. Vegetarian Mamma recommends avoiding delicate, leafy greens or any foods without some weight to them.
