TEQUILA SHOTS WITH SANGRITA CHASERS



Tequila Shots With Sangrita Chasers image

There's only one way to improve on tequila shots: chase them with a short glass of spicy, citrusy sangrita. This recipe makes an entire pitcher of sangrita, enough for several shots, though you could also pair it with very cold Mexican beer.

Yield About 3 cups sangrita (enough to accompany many shots)

Number Of Ingredients 7

2 cups freshly squeezed orange juice
3/4 cup freshly squeezed lime juice
1/4 cup grenadine syrup (use one with real pomegranate, like Employees Only or Fee Brothers)
2 teaspoons ancho chile powder
6 dashes Tabasco, or to taste
1/2 teaspoon salt
Reposado tequila (use about 1 1/2 ounces per shot)

Steps:

  • To make sangrita, mix all ingredients except tequila in a pitcher and chill well.
  • Shake tequila with ice; strain into shot glasses. Serve sangrita in small glasses to chase tequila shots.

4 cups ice
1/2 cup tequila
1/4 cup orange liqueur, such as Grand Marnier or Cointreau
1/4 cup fresh lime juice (about 4 limes)
1 tablespoon agave
4 cups ice
1/4 bottle red wine, chilled
1/2 cup fresh orange juice
1/4 cup lemon juice (about 2 lemons)
1 tablespoons agave

Steps:

  • For the frozen margarita: Add to a blender the ice, tequila, orange liquor, lime juice and agave. Blend until combined, adding more ice to make thicker. Remove to a pitcher.
  • For the frozen sangria: Add to a blender the ice, red wine, orange juice, lemon juice and agave. Blend until combined, adding more ice to make thicker. Remove to a pitcher.
  • To serve: Spoon a layer of frozen margarita and then a layer of frozen sangria into a margarita glass and repeat to create layers. Best served with straws!

1 1/4 cups freshly squeezed orange juice
1/3 cup freshly squeezed lime juice
2 1/2 tablespoons grenadine syrup
Generous 1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 pint tequila (preferably aged blue Agave)
2 limes, cut into wedges (optional)
A small dish of salt (optional)

Steps:

  • An hour before the cocktail hour is to commence, combine all the ingredients for the sangrita in a blender. Blend until frothy. Cover and refrigerate for the flavors to marry. To serve, pour the sangrita into 8 straight, tall shot glasses. Pour the tequila into 8 identical shot glasses and place them all on a tray lined with a napkin desired, and serve immediately with lime wedges and salt, if desired.

5 tablespoons grenadine syrup
1 teaspoon (generous) salt
1 teaspoon cayenne pepper

Steps:

  • Squeeze lime halves in citrus juicer to extract as much as possible. Transfer 3/4 cup lime juice to bowl; cover and chill. Reserve remaining juice for another use. Using scissors, cut out membranes from hollowed lime halves. Enclose lime cups in resealable plastic bag. Freeze until frozen, about 4 hours. Mix orange juice, 3/4 cup lime juice, grenadine, salt, and cayenne in blender. Transfer mixture to pitcher. Cover sangrita and refrigerate until cold, about 2 hours. (Can be made 1 day ahead. Keep sangrita chilled. Keep lime cups frozen.) Arrange frozen lime cups on serving tray. Pour sangrita into 12 lime cups; pour tequila into remaining 12 lime cups and serve immediately.

Sangrita ('little blood') is the traditional Mexican chaser for tequila. It's a mix of FRESH orange and lime juices with salt and a spicy touch. You can give it the bloody appearance by adding a splash of pomegranate juice - or try using blood oranges when available (they really make it better).

This spicy, salty juice mixture is a traditional chaser for straight tequila. If you don't have time to prepare the frozen lime cups, just pour the _sangrita_ and tequila into shot glasses. Pair the _sangrita_ with a _reposado_ tequila, which has been briefly aged to impart richer, more complex flavor and a smoother sip. (See "Wine & Spirits" for some great top-shelf tequilas.)
