HEALTHY APPLE BRAN MUFFINS
Apple bran muffins are easy to make with ingredients that you probably already have in your pantry. Low in fat and high in fiber - they make a great breakfast for your whole family!

- Preheat oven to 375°F and line 12 muffin cups with liners, or lightly spray with cooking spray.
- Whisk dry ingredients in a medium bowl, set aside.
- Using a mixer, beat oil, yogurt, and sugar on high until combined. Beat in eggs and vanilla until combined. With mixer on low, alternate adding flour mixture and milk (about half of each at a time). Fold in chopped apples.
- Divide into prepared muffin cups and sprinkle tops with turbinado sugar. Bake for 20-25 minutes.

- Preheat oven to 375. Combine wheat bran,wheat flour, baking soda, baking powder and cinnamon and sit aside. In a separate bowl, blend applesauce, milk,molasses,oil,eggbeater and vanilla. Add the wet ingredients to the dry and stir until moistened. Mix in the diced apple. Spoon batter into a muffin tin greased with cooking spray. Bake for 15-20 minute.

- In food processor: dump the first five ingredients and blend until the ingredients are 'liquified'.
- Add the salt and baking powder and pulse to mix.
- Add the cinnamon, flour, wheat germ and raisins and pulse just until mixed.
- Spray an ice cream scoop with non-stick spray and use that to form the muffins.
- Bake 350 for about 23 minutes if you make 16 muffins, longer if you make 12 larger muffins.
- These freeze well.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Whisk flour, bran, 3/4 cup brown sugar, baking powder, baking soda, 1 teaspoon cinnamon, and salt in a large bowl until thoroughly combined. Beat milk, vegetable oil, and eggs in a separate bowl. Pour liquid ingredients into the flour mixture and stir just until mixed. Gently stir apples into the batter and fill prepared muffin cups about 3/4 full.
- Mix 1/4 cup flour and 1/4 cup brown sugar with 1/2 teaspoon cinnamon in a bowl; cut the butter into the brown sugar mixture until the streusel topping is crumbly. Sprinkle about 1 heaping teaspoon of topping onto each muffin.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. - Preheat oven to 350 degrees.
- Mix wheat bran, milk, and lemon juice together. Let it sit while preparing the next step.
- In a separate bowl, beat the egg until fluffy. Then beat in your sweetener of choice, honey, applesauce, ground flax, vanilla extract, baking soda, baking powder, salt, and cinnamon.
- Add the wet ingredients to the bran mixture. Stir well.
- Add whole wheat flour to mixture.
- Spoon the mixture into muffin cups till about 2/3 full. Sprinkle the muffins with rolled oats.
- Bake for about 20 minutes. Do the toothpick trick!
