These Air Fryer Buffalo Cauliflower Wings are crispy, delicious and so easy to make in the air fryer! Made with crispy cauliflower and a delicious vegan buffalo sauce, this is the perfect healthy low carb side, keto snack or appetizer for game day!

- CUT THE CAULIFLOWER INTO PIECES: Remove most of stem and chop the cauliflower into bite-sized pieces.
- Preheat oven to 450 degrees F and line a baking pan with parchment paper.
- MAKE THE BATTER: In a large bowl, combine almond flour, almond milk ,onion salt, garlic powder and paprika in a bowl and mix until smooth.
- Add the cauliflower florets to the mixture and toss to coat.
- Place the cauliflower florets in a single layer in air fryer basket, you will have to work in batches.
- AIR FRY at 375 for 12-14 minutes until golden brown, shaking halfway through.
- Meanwhile, mix the hot sauce & melted vegan butter / ghee together in a bowl.Pour the buffalo sauce evenly over the cauliflower & toss to coat. Air Fry for an additional 2-3 minutes or until crispy and just starting to brown.

- In a small bowl mix together the almond flour, tapioca flour, chili powder, paprika, cayenne, and salt and pepper. In another small bowl, whisk the eggs. Set up an assembly line with cauliflower florets, eggs, and flour mixture.
- Bread the cauliflower by dipping it in the egg mixture, making sure it is fully coated and getting into the nooks and crannies. Roll in the flour mixture, fully coating and shaking off any excess. Place on a plate or large baking sheet and repeat with remaining cauliflower.
- Spray the bottom of your air fryer basket with oil (I used avocado oil spray). Place breaded cauliflower in your air fryer basket, evenly spreading out and leaving room in between pieces so the air can easily flow through. Spray cauliflower with a light coating of avocado oil. Close drawer, set air fryer on manual at 375°F for 15 minutes. Depending on the size of your air fryer, you will probably have to cook the cauliflower in two batches to make sure they are not overcrowded.
- When the cauliflower is almost done, either make or heat up the buffalo sauce.
- Once cauliflower is done, add to a large bowl and pour buffalo sauce over cauliflower. Carefully mix to coat the cauliflower. Make sure to mix carefully as you don't want the breading to come off.
- Serve with ranch or blue cheese, carrots, celery, and more hot sauce and enjoy!

You know you've reached buffalo cauliflower perfection when everyone proclaims these bites "as good as the best wings ever!" And that's no big surprise: Cauliflower florets have the same crispy "fried" exterior and piquant buffalo flavor as the classic chicken variety. The secret lies in double breading each floret in cheesy breadcrumbs, then carefully coating every nook and cranny with nonstick spray. Serve this appetizer with your favorite ranch or blue cheese dressing and watch it disappear in minutes.

- Spray the basket of a 6-quart air fryer with cooking spray and set aside.
- Arrange the cauliflower on a baking sheet and set up a breading station next to it: Fill one shallow bowl with the Parmesan breadcrumbs, another shallow bowl with the panko breadcrumbs and third shallow bowl with the eggs and milk. Whisk together the eggs and milk together until combined.
- Working with several cauliflower florets at a time, roll them in the egg mixture until fully coated, shake off excess egg, then roll them in the Parmesan breadcrumbs until fully coated. Roll them in the egg mixture a second time, shaking off excess egg, and finally, roll them in the panko breadcrumbs until fully coated. Transfer the breaded pieces back to the baking sheet. Repeat until all the cauliflower florets are breaded.
- Preheat an air fryer to 370 degrees F. Preheat your oven to 250 degrees F.
- Pick up each cauliflower floret and spray it all over with nonstick spray, making sure to coat every nook and cranny. Arrange some of the florets in a single layer in the air fryer basket without touching (you will probably have to work in two batches). Air fry the florets, flipping them once, until golden and crispy, about 12 minutes. Transfer the cooked cauliflower to a baking sheet and place in the oven to keep warm. Air fry the remaining cauliflower.
- Meanwhile, melt the butter in a large, shallow microwave-safe bowl, about 1 minute. Whisk in the hot sauce. Add the cauliflower to the bowl and toss to combine with the hot sauce until fully coated.
- For the crispiest results, serve the bites immediately sprinkled with chives with the dressing alongside. As the bites sit, they'll become slightly less crispy, just like wings, but they'll still be just as tasty.

- Preheat the air fryer to 425°F (220°C) for 5 minutes.
- In a medium bowl, whisk together the cake flour, ½ cup plus 2 tablespoons cornstarch, the baking powder, smoked paprika, garlic powder, onion powder, and ½ teaspoon salt. Slowly whisk in the sparkling water until just combined. Do not overmix; some lumps are okay.
- In a large bowl, toss the cauliflower florets with the remaining ¼ cup cornstarch and ½ teaspoon salt.
- Shake off any excess cornstarch, then dip the cauliflower in the wet batter, letting any excess drip off.
- Working in batches, add the cauliflower to the air fryer in a single layer and cook for 5 minutes, or until golden brown. Remove from the air fryer and repeat with the remaining florets.
- Meanwhile, make the sauce: Add the hot sauce, butter, and honey to a small skillet. Cook over medium heat, stirring occasionally, until the butter is melted and the sauce is evenly combined.
- In a large bowl, toss the fried cauliflower with the buffalo sauce until well coated.
- Serve immediately with your favorite dipping sauce.
