2 lbs cross-rib roasts
2 tablespoons balsamic vinegar
2 tablespoons minced garlic
2 teaspoons dried thyme
1 teaspoon dried rosemary
1 tablespoon salt
1 teaspoon pepper
1 tablespoon olive oil

Steps:

  • Brush roast with balsamic vinegar.
  • Make a paste with remaining ingredients and apply to meat.
  • Roast meat at 450 for 15 minutes Reduce heat to 350 and cook for 40 o 60 minutes, or until internal temperature reaches 125.
  • Remove from oven; cover loosely with foil and let stand 15 to 25 minutes.

Wonderful flavored pot roast or you may use a crock pot. You could add potatoes to make this a complete meal in one pot. Add potatoes for the last 45 minutes of cooking time in the Dutch Oven . If you are using a crock pot allow5 1/2 hours on low put your veggies (including potatoes) on the bottom of the crock pot put roast on top, turn roast after 3 hours and baste with sauce. I prefer doing this recipe in a Dutch oven .

3 lbs cross-rib roasts or 3 lbs blade roast, boneless
3 garlic cloves, slivered
salt and pepper
1 tablespoon flour
2 tablespoons lite olive oil
2 large onions, coarsely chopped
3 carrots, coarsely chopped
2 stalks celery, chopped
1 teaspoon thyme
1 bay leaf
1 cup tomato juice or 1 cup red wine
1 cup canned tomato, drained and chopped
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
1 teaspoon dried basil

Steps:

  • Make small cuts in the roast and insert the slivers of garlic.
  • Rub the meat with salt and pepper.
  • In a Dutch oven over high heat sear the roast on all sides browning well about 7 minutes.
  • Add onions, carrots, celery, thyme, bay leaf, and stock.
  • Cover tightly, lower heat and simmer for about 1 1/2 hrs, Turn the beef occasionally.
  • Stir in the tomatoes, parsley, oregano, and basil.
  • Simmer for about an hour or until the beef is tender, discard bay leaf.
  • Slice and serve with veggies and sauce.

1 (5 pound) beef cross rib roast
⅓ cup Dijon mustard
10 large cloves garlic, crushed
½ teaspoon freshly ground black pepper
1 tablespoon garlic powder
½ teaspoon salt, or to taste
1 tablespoon dry mustard powder
2 tablespoons light olive oil
1 tablespoon paprika, plus more for sprinkling
1 ¼ cups water
½ cup red wine
1 (1 ounce) package dry onion soup mix
2 beef bouillon cubes
3 cloves garlic, crushed, or to taste
1 (10.75 ounce) can condensed golden mushroom soup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the roast into a roasting pan. In a bowl, mix the Dijon mustard, 10 cloves of garlic, black pepper, garlic powder, salt, dry mustard powder, olive oil, and 1 tablespoon of paprika into a paste. Spread the paste over the top and sides of the roast. Pour the water and red wine into the roasting pan, and sprinkle in the dry onion soup mix. Drop in the beef bouillon cubes. Sprinkle the top of the roast generously with more paprika and 3 more crushed cloves of garlic. Cover the roast with aluminum foil.
  • Roast in the preheated oven for 1 hour, and reduce temperature to 350 degrees F (175 degrees C). Roast until the meat is tender, about 2 more hours, basting occasionally with pan liquid. Remove foil during last 30 minutes of roasting to help brown the meat. Remove roast to a platter.
  • Place roasting pan over medium heat, and bring the liquid to a simmer. Scrape up and dissolve any brown flavor bits from the bottom of the pan into the liquid. Stir the golden mushroom soup into the pan drippings until the gravy is smooth and thickened. To serve, slice the roast, pour hot gravy over the slices, and serve with remaining gravy.

One of those busy day "What have I got in the pantry today?" recipes. I wasn't going to be home for most of the day and knew I'd be tired when I got home, so I created this easy to prep pot roast and put it in the crock pot. When I got home the house was filled with a delicious aroma and the meat was melt-in-your-mouth tender. It was a welcome sight after a long day. I hope you enjoy it too!

2 -3 lbs boneless cross-rib roast
3 small potatoes, peeled and cut into quarters
3 carrots, peeled and cut into 1-2 inch pieces (I used a 1/2 package of baby carrots)
1 small onion, peeled and quartered
1/2 teaspoon celery salt
1/4 teaspoon oregano
1/4 teaspoon thyme
1/2 teaspoon sea salt
1/8 teaspoon pepper
1 bay leaf
2 teaspoons beef base (or a 14oz can of beef broth)
2 cups hot water (if using a can of beef broth, the water is not needed)
4 tablespoons of all-purpose flour stirred into 1/2 cup cold water

Steps:

  • Arrange potatoes, onions and carrots in bottom of crock pot.
  • In a small bowl, combine celery salt, oregano, thyme, sea salt & pepper.
  • Massage the spices into the roast and place the roast atop the veggies.
  • Toss in the bay leaf.
  • Pour beef base and water mixture (or beef broth) over the roast and veggies.
  • Put the lid on the crock pot and cook on LOW setting for approximately 6-8 hours or until roast and veggies are tender.
  • Optional: For gravy you can stir in the flour and water mixture in the last 30 minutes of cooking time and turn the crock pot up to High setting.
  • I prefer to remove the meat and veggies from the crock pot and pour the liquid into a saucepan. Bring to a slight boil and slowly pour in flour and water mixture while stirring constantly. Bring to a full boil and cook and stir until it thickens up to your liking. About 3-5 minutes total.

This easy cooking method allows you to cook PERFECTLY tender boneless beef roasts (from rare to medium-well) of almost any size, as long as the roast is at least 2-1/2 to 3-inches thick. I've used this method for 30+ years, and find it's a lifesaver when I'm having company and want a foolproof entree without the fuss! For Sunday dinners - cook the roast before church, turn the oven off, and dinner is ready when you return home. Great meat for party and wedding meat trays. 4 lbs boneless beef roast, at least 2-1/2 to 3 inches thick, such as tenderloin, sirloin tip roast, eye of round roast, rib-eye (NO VERY TOUGH CUTS, PLEASE as cooking will NOT make them tender.)
seasoning or herbs
onion (optional)
mushroom (optional)
balsamic vinegar (optional)
beef broth (optional)
cornstarch (optional)

Steps:

  • NOTE: The success of this recipe will depend upon how accurate the temperature of your oven is and how will it retains heat. Adjust cooking time +/- according to your individual oven.
  • IMPORTANT: Determine the EXACT weight of the roast from the meat wrapper. Weight will determine how long to cook the roast. If you have a probe meat thermometer with an alarm, I recommend using it.
  • Preheat oven to 500 degrees.
  • Cut all visible fat from the outside of the meat. Rub the entire outside of the roast with salt, pepper, or seasonings of your choice, such as thyme, garlic powder, etc. (If using a probe thermometer insert it into center of the meat. Set the temperature to your desired degree of doneness and set the alarm.).
  • Place roast in roasting pan and bake according to the following Cooking Chart:.
  • RARE - 3 minutes per pound.
  • MEDIUM RARE/RARE - 3 1/4 minutes per pound.
  • MEDIUM RARE - 3 1/2 minutes per pound.
  • MEDIUM - 4 minutes per pound.
  • MEDIUM WELL - 4 1/2 minutes per pound.
  • WELL DONE - not recommended with this method.
  • Set your oven timer for the cooking time calculated from the Cooking Chart above.
  • When cook time is completed, TURN THE OVEN OFF! DO NOT OPEN THE OVEN DOOR FOR AT LEAST 1-1/2 HOURS or until the probe alarm signals desired temperature has been reached. After removing roast from oven, tent with foil and let it rest for 5 minutes before slicing.
  • To reserve meat juices, slice rare/medium rare roasts on a platter where juices can collect. Pour juices into roasting pan, scraping loose any pan drippings, and pour au jus over the roast.
  • OPTIONAL ONIONS AND MUSHROOMS: Slice mushrooms and onions. In frying pan coated with non-stick cooking spray, saute mushrooms and onions until limp and tender. Add 2-3 tablespoons balsamic vinegar and set aside.
  • FOR GRAVY: For each cup of au jus (beef liquid), make a slurry by stirring 1-1/2 to 2 tsp of cornstarch into 1 tbs water. Bring au jus to a slow boil (adding 1 cup beef broth, cooked mushrooms and onions w/vinegar if using optional ingredients); stirring constantly. Gradually add the slurry to the boiling au jus. Cook on medium, stirring constantly, until mixture thickens - about 1 minute. Remove from heat and serve.
