AIR FRYER BACON-WRAPPED SCALLOPS WITH SRIRACHA MAYO
This delicious appetizer is prepared quickly and easily in the air fryer and served with a spicy Sriracha mayo dipping sauce. I use the smaller bay scallops for this. If you are using jumbo scallops it will require a longer cooking time and longer strips of bacon.

Steps:
- Mix mayonnaise and Sriracha sauce together in a small bowl. Refrigerate Sriracha mayo until ready to serve.
- Preheat the air fryer to 390 degrees F (200 degrees C).
- Spread scallops out onto a plate or cutting board and blot dry with a paper towel. Season with salt and pepper. Wrap each scallop with 1/3 slice of bacon and secure with a toothpick.
- Spray the air fryer basket with cooking spray. Place bacon-wrapped scallops in the basket in a single layer; split into 2 batches if necessary.
- Cook in the air fryer for 7 minutes. Check for doneness; scallops should be opaque and bacon should be crispy. Cook 1 to 2 minutes longer, if necessary, checking every minute. Remove scallops carefully with tongs and place on a paper towel-lined plate to absorb excess oil from the bacon. Serve with Sriracha mayo.

Steps:
- Start by patting your sea scallops dry with a paper towel.
- Cut your bacon in 1/2 (half).
- Wrap your scallop with 1/2 a piece of bacon. Secret it with a toothpick. Continue to wrap your scallops until they are all done.
- As you prepare them, set them into the air fryer.
- Spray them with olive oil and season with salt and pepper.
- Set your air fryer to degree 370F. Air fryer setting, for 5 minutes.
- After 5 minutes, flip and set your timer for another 5 minutes.
- Check the scallops and bacon for doneness. When they are done, remove them.
- Plate, serve, and enjoy!

Steps:
- Slice bacon in half and place the bacon in the air fryer to partially cook at 400 for 3 minutes.
- Pat the scallops dry with paper towels to remove any moisture.
- Wrap each scallop in 1/2 slice of bacon and secure it with a toothpick.
- Place scallops in air fryer (I can fit 8 at a time in my basket style air fryer)
- Lightly brush scallop with your favorite barbecue sauce. I recommend a thinner sauce - not a heavy thick sauce. You can also just spray with olive oil and salt/pepper.
- Cook at 400 for 5 minutes. Turn scallops delicately and baste again with bbq sauce. Cook for another 5 minutes at 400 until scallop is tender and opaque and bacon is cooked through. Serve hot.
- I also sprinkled a little Historic BBQ Red seasoning on them when they were done.

- Rinse scallops, pat dry with paper towel. Season with salt and pepper.
- Preheat air fryer at 400 degrees for 3-4 minutes. Place scallops on the air fryer tray or basket. Air fry at 400 degrees for 10 minutes, flip scallops halfway through cooking. Repeat cooking with remaining scallops if needed.
- In a small saucepan or skillet, melt butter over low to medium heat. Add garlic and cook until fragrant. Whisk in heavy cream and stir until thickened. - Preheat the air fryer to 350 F for 3 minutes.
- Pat the scallops dry with paper towels. The scallops will cook best if they are completely dry.
- Put the scallops in a bowl and toss them with the olive oil, garlic powder and salt and pepper to taste. Toss them to distribute the spices.
- Cut the bacon in half lengthwise to make two long piecees out of each. Don't cut them into two short pieces, they will be too short to wrap around the scallops.
- Wrap a piece of bacon around each scallop and place them in the air fryer basket.
- Cook in the air fryer at 350 F for 9-10 minutes. Use tongs to flip the scallops over after 5 minutes.
- Test the temperature of the scallops with an instant read thermometer. They should reach 130 F.
- Take the scallops out of the air fryer and sprinkle with Parmesan cheese and serve.

- Start by preheating your air fryer to 350 degrees.
- In a bowl add your scallops, followed by oil, garlic powder, salt and pepper. Then toss well to evenly coat the raw scallops.
- Now take your bacon and cut them in half lengthwise.
- Wrap a piece of your raw bacon around the seasoned scallops. Repeat until you have all your scallops wrapped. Feel free to secure with a toothpick to ensure the bacon stays on.

- Pull out and measure the ingredients.
- Place bacon in the air fryer basket.
- Air fry at 350ºF for 3 minutes. Bacon will just start to cook. Wipe out any access grease in air fryer.
- Blot scallops dry with paper towel.
- Place them in a bowl with olive oil, salt, and pepper. Stir until scallops are evenly coated.
- Ensure toothpicks, scallops and bacon are at your workstation.
- Wrap a slice of bacon around each scallop.
- You may have to trim the bacon so it fits. Secure the bacon with a toothpick.
- Place wrapped scallops in air fryer basket.
