After Making This Easy Recipe For Dried Mango, You'll Never Buy It Again image

Try this simple and easy recipe to make your own dried mango that's free from added sugars and preservatives and uses just your oven.

2 ripe mangoes

Steps:

  • Preheat oven to 185ºF or as low as your oven will go. Place a Silpat silicone mat on a baking sheet.
  • Wash both mangoes, and use a peeler to remove the skin.
  • Cut into thin slices, and place them on the Silpat.
  • Put the mango in the oven, and bake for two to three hours, flipping them over every 30 minutes or until they're dry. Avoid cooking too long or you'll end up with mango chips!
  • Store leftovers in an airtight container. Since this snack is preservative-free, enjoy them within a few days.

Use as a condiment on your favourite sandwich; spoon on grilled or seared meats; enjoy with a slice of good cheese and fruit. A delicious chutney that you'll make over and over again.

8 ounces dried mango, coarsely chopped
6 ounces golden raisins
1 cup red onion, diced
1 1/2 cups black tea, very strong (use 2 tea bags)
3/4 teaspoon red pepper flakes
1/2 cup fresh ginger, grated
1/2 cup red wine vinegar
1/2 cup corn syrup (light or dark)
2 garlic cloves, minced
salt, to taste
1 teaspoon mustard powder, ground
1 teaspoon ground allspice

Steps:

  • Place all ingredients in a medium saucepan. Bring to a boil, reduce heat to low, and simmer until thick, about 30-35 minutes, stirring often to keep from scorching. Let cool, and store in an airtight container.
