THAI CHICKEN CAKES WITH SWEET CHILLI SAUCE

Thai chicken cakes with sweet chilli sauce image

A light and healthy supper that's a great variation on the chicken theme. Works well as a starter or a main - just serve with sweet chilli sauce.

Provided by James Martin

Categories     Dinner, Lunch, Main course, Supper

Time 25m

Number Of Ingredients 8

2 large boneless, skinless chicken breasts (about 175g), cubed
1 garlic clove , roughly chopped
small piece fresh root ginger , peeled and roughly chopped
1 small onion , roughly chopped
4 tbsp fresh coriander , plus a few sprigs to garnish
1 green chilli , seeded and roughly chopped
2 tbsp olive oil
sweet chilli sauce , lime wedges, shredded spring onion and red chilli, to serve

Steps:

  • Toss the chicken, garlic, ginger, onion, coriander and chilli into a food processor and season well. Blitz until the chicken is finely ground and everything is well mixed. Use your hands to shape six small cakes.
  • Heat the oil in a frying pan, then fry the cakes over a medium heat for about 6-8 mins, turning once. Serve hot, with sweet chilli sauce, lime wedges, coriander, shredded spring onion and red chilli.

THAI FISH CAKES

Thai Fish Cakes image

Recipe video above. These taste JUST like the Thai Fish Cakes from your favourite Thai restaurant! They should be firm but bouncy, almost a spongey texture, well seasoned, golden brown and with lovely complex flavours from the red curry paste and other seasonings.

Provided by Nagi | RecipeTin Eats

Categories     Appetizer

Time 25m

Number Of Ingredients 12

1 lb / 500g white fish fillets (, skinless and pin boned, cut into chunks (Note 1))
3 tbsp red curry paste ((Note 2))
1 tbsp cilantro/coriander leaves (, chopped)
1 tbsp fish sauce ((sub soy sauce))
1 tbsp lime juice
1 egg
1/4 cup (40g) rice flour ((or cornstarch / corn flour))
6 green beans (, finely sliced (optional, Note 3))
4 - 6 tbsp oil ((vegetable, canola, sun flower))
Sweet chilli sauce
Cilantro/coriander leaves
Lime wedges

Steps:

  • Place fish, red curry paste, cilantro/coriander, fish sauce, lime and egg in a food processor. Whizz until the fish is minced and it looks like a paste. (See video)
  • Transfer to a bowl and stir through rice flour and green beans until flour is all incorporated. (Note 4)
  • Measure 1/4 cup of mixture (I use an ice cream scoop - Note 5), form 1cm / 2/5" thick patties.
  • Heat enough oil in skillet over medium high heat to cover the base (4 tbsp or so)
  • Place in oil, cook 2 minutes until deep golden brown, then turn and cook the other side for 2 minutes. Transfer to paper towel lined plate.
  • Repeat with remaining mixture, adding more oil into the skillet if required.
  • Serve with Sweet Chilli Sauce, garnished with cilantro/coriander leaves and lime wedges on the side. Add a side of Thai Fried Rice or even just plain jasmine rice to make a meal!

QUICK ASIAN FISHCAKES

Quick Asian Fishcakes image

A recipe from the book of his Channel 4 series, Jamie's Quick & Easy Food, these simple salmon Asian Fishcakes are flavoured with lemongrass and sweet chilli.

Provided by Jamie Oliver

Categories     Dinner, Main Course

Time 22m

Number Of Ingredients 1

Salmon

Steps:

  • Whack the lemongrass against your work surface and remove the tough outer layer. Peel the ginger, then very finely chop with the inside of the lemongrass and most of the coriander, stalks and all, reserving a few nice leaves in a bowl of cold water. Chop the salmon into 1cm chunks over the mix on your board, then push half the salmon to one side. Chop the rest until super-fine, almost like a purée, then mix the chunkier bits back through it and season with sea salt and black pepper. Divide into 4, then shape and squash into 2cm-thick patties. Place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil. Cook the patties for 2 minutes on each side, or until nicely golden. Spoon the chilli jam over the fishcakes, add a splash of water to the pan, turn the heat off, and jiggle to coat. Serve sprinkled with the drained coriander. • Place the fish on a cutting board and slice about six shallow slits at a 45 degree angle down each of the sides.
  • Dust the fish lightly with the flour inside and out. If you can't eat wheat flour, you could use fine rice flour. You just want to lightly dust the fish which will make it crispier when fried.
  • Heat your oil to 185c/365 and completely submerge the fish in the swimming position in an S shape.
  • Fry for about 8 minute until cooked through and crispy and then transfer to a paper towel to soak up the excess oil.
