Marshmallow Peach Icebox Dessert is a light summer dessert recipe that highlights the amazing flavor of sweet Elberta peaches.

Number Of Ingredients 8

1 Tbsp. unflavored Gelatine, 1 packet
1/4 c. cold water
2 pasteurized eggs, separated
1/3 c. butter softened
1 c. powdered sugar
34 marshmallows, quartered or 10 oz bag mini marshmallows
4 c. chopped Elberta peaches, fresh or canned
1 1/2 c. vanilla wafer cookies or graham crackers, crushed

Steps:

  • Soak gelatin in the cold water for 5 minutes.
  • Meanwhile in a small saucepan, cream the butter, powdered sugar and egg yolks. Cook the mixture over low heat, stirring constantly until slightly thickened.
  • Remove the mixture from the heat and stir in the soaked gelatin, being sure it is well incorporated and there are no lumps. Pour the mixture into a large bowl and allow to cool for 5 minutes.
  • In a separate small bowl, beat the egg whites until stiff peaks form.
  • Fold the peaches into the butter mixture until they are well coated. Stir in the quartered marshmallows and gently fold in the beaten egg whites.
  • In an 8x10 or 9x13 pan (depending on how thick you want the dessert) add half of the crushed vanilla wafers. Top the wafers with the peach and marshmallow mixture. Finish it off by topping it with the remaining vanilla wafers. Refrigerate for 2 hours before serving. Stores well refrigerated for 5- days.

1/2 cup milk
1-1/2 cups frozen sliced peaches, thawed or1 package (10 ounces) frozen sweetened raspberries, thawed, undrained
1/8 teaspoon almond extract
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)

Steps:

  • Place marshmallows and milk in a large microwave-safe bowl. Microwave, uncovered, on high for 30-90 seconds. Stir until smooth; set aside. , Finely chop the peaches; mash lightly with a fork or pulse in a food processor until finely chopped. Add to marshmallow mixture. Stir in extract. Fold in whipped topping; pour into crust. Refrigerate for 2 hours.

1/2 cup chopped pecans

Steps:

  • Beat cream cheese and powdered sugar with a hand-held mixer until smooth.
  • Stir in Cool Whip and dry Jello mix.
  • Drain peaches, reserving 2 tablespoons of syrup. Cut peaches into bite-sized pieces.
  • Stir peaches and the 2 tablespoons of syrup into the mixture.

Uses vanilla wafers, marshmallows, and whipping cream. Very old recipe. I think you could use Cool whip and Marshmallow fluff with this recipe. No cooking. Good for summer dessert; needs chill time in refrigerator.

1 1/2 cups vanilla wafers, about 38, made into crumbs
1/4 cup butter, melted
1/2 lb marshmallows, about 44
2 tablespoons orange juice
2 tablespoons lemon juice
1 1/2 cups peaches, chopped fresh
1 cup whipping cream, beaten stiff

Steps:

  • Mix vanilla wafer crumbs with melted butter.
  • Pat half of this mixture into a 9x9 cake pan.
  • Heat marshmallows; add orange juice and lemon juice.
  • Heat over low heat (double boiler would be best) until partially thickened.
  • Fold in peaches and cook a while longer; cool.
  • Fold in whipped cream; pour over wafers.
  • Sprinkle reserved crumbs over top.
  • Chill.

Set the bowl over the simmering water and whisk constantly until the sabayon is pale yellow and fluffy, about 8 minutes. There should be no dark yellow streaks visible. Remove the bowl from the heat and continue to whisk a few times to cool down the sabayon. Refrigerate the sabayon, whisking often, until it is slightly chilled, about 20 minutes.
  • In a medium stainless steel bowl, whip the cream until firm, then fold it into the chilled sabayon. Spoon the baked fruit into shallow bowls, top with the sabayon and serve.
