MARSHMALLOW PEACH ICEBOX DESSERT
Marshmallow Peach Icebox Dessert is a light summer dessert recipe that highlights the amazing flavor of sweet Elberta peaches.

Steps:
- Soak gelatin in the cold water for 5 minutes.
- Meanwhile in a small saucepan, cream the butter, powdered sugar and egg yolks. Cook the mixture over low heat, stirring constantly until slightly thickened.
- Remove the mixture from the heat and stir in the soaked gelatin, being sure it is well incorporated and there are no lumps. Pour the mixture into a large bowl and allow to cool for 5 minutes.
- In a separate small bowl, beat the egg whites until stiff peaks form.
- Fold the peaches into the butter mixture until they are well coated. Stir in the quartered marshmallows and gently fold in the beaten egg whites.
- In an 8x10 or 9x13 pan (depending on how thick you want the dessert) add half of the crushed vanilla wafers. Top the wafers with the peach and marshmallow mixture. Finish it off by topping it with the remaining vanilla wafers. Refrigerate for 2 hours before serving. Stores well refrigerated for 5- days.

Uses vanilla wafers, marshmallows, and whipping cream. Very old recipe. I think you could use Cool whip and Marshmallow fluff with this recipe. No cooking. Good for summer dessert; needs chill time in refrigerator.

- Pat half of this mixture into a 9x9 cake pan.
- Heat marshmallows; add orange juice and lemon juice.

- Prepare all your equipment first before starting the recipe. Once your marshmallow mix is done, you'll need to work fast as it sets quickly. Line 2 to 3 baking sheets with parchment paper or silicone mats. Arrange the treat sticks on the paper/mats. Prepare a large pastry bag with an open or closed star tip; I used Ateco #847.
- Pour the peach juice into a small saucepan and sprinkle in the agar gelatin. Cook the mixture over medium heat until it comes to a simmer. Once all the sugar is added, continue to cook the syrup over medium heat until it reaching its boiling point. Boil the mixture for 2 minutes.
- When the syrup is almost ready, whisk the egg whites on high speed to soft peak stage. One the syrup is ready, pour it into the mixing bowl in a slow and steady stream, with the mixture running on medium speed. Once all the syrup is added, pour in the lemon juice and add a few drops of food coloring. Turn the mixer up to high speed and whisk for 5 to 7 minutes, until the meringue is super fluffy and begins to set.

- Preheat the oven to 425°. Butter two 9-by-13-inch baking dishes. Bring a large pot of water to a boil. Add the peaches and nectarines and blanch just until the skins loosen, about 20 seconds. Drain in a colander, refresh under cold running water and drain again. Peel the peaches and nectarines and cut them into quarters.
- In a large bowl, toss the peaches and nectarines with the cherries. In a small bowl, rub the lemon zest into the 2/3 cup of sugar. Add 4 mint sprigs and half of the fruit to each baking dish. Sprinkle half of the lemon sugar over the fruit in each baking dish and bake in the upper third of the oven for about 30 minutes, or until the fruit is bubbling and caramelized in spots. Let the fruit rest for 10 minutes before serving.
- Meanwhile, in a large saucepan, bring 1 inch of water to a simmer over low heat. In a medium stainless steel bowl, whisk the egg yolks with the remaining 1/4 cup of sugar, then whisk in the wine. Set the bowl over the simmering water and whisk constantly until the sabayon is pale yellow and fluffy, about 8 minutes. There should be no dark yellow streaks visible. Remove the bowl from the heat and continue to whisk a few times to cool down the sabayon. Refrigerate the sabayon, whisking often, until it is slightly chilled, about 20 minutes.
- In a medium stainless steel bowl, whip the cream until firm, then fold it into the chilled sabayon. Spoon the baked fruit into shallow bowls, top with the sabayon and serve.
