SOUTHERN CORNBREAD DRESSING
A homemade southern cornbread dressing recipe that is perfect for your Thanksgiving table!

Steps:
- Preheat the oven to 350 F.
- Remember to make the cornbread a day in advance ( to dry it out!).
- The next day, crumble the cornbread into a large bowl, along with the crackers.
- Pour in the chicken broth, and let sit for 10 minutes.
- Meanwhile, toss the butter into a medium sized pan, and melt over medium heat.
- Once the butter is melted, add in the onions, celery, and bell peppers.
- Cook the vegetables until they soften, then add in the garlic, seasonings, and chopped herbs.
- Turn the heat off, and stir the ingredients.
- Add the cooked vegetables, chicken, and herb mixture into the large bowl with crumbled cornbread and crackers.
- Add in the cream of mushroom soup, and the egg then fold the ingredients.
- Add the mixture into a lightly greased or buttered 9 x 13 bake dish, and cover.
- Let bake for 1 hour.
- Remove from the oven, uncover, and bake for 30 minutes.
- Let cool.
- Serve & enjoy!
CORNBREAD DRESSING
This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. Steps:
- Melt butter in a skillet; add the onions and celery and saute until tender.
- Combine toasted bread and cornbread in a large bowl and mix.
- Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
- Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
- Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

- Preheat oven to 400°. Melt butter in a large skillet over medium-high heat; add celery and onions, and sauté 5 to 6 minutes or until onions are tender. Stir in sage, and sauté 1 minute.
- Stir together Cornbread Crumbles and breadcrumbs in a large bowl. Stir in eggs, next 2 ingredients, and celery mixture, stirring until blended. Divide cornbread mixture between 1 lightly greased 13- x 9-inch baking dish and 1 lightly greased 8-inch square baking dish.

- Prepare the dry corn bread mix according to package directions. Cool and crumble.
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
- In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.

REAL SOUTHERN CORNBREAD
This is my families recipe, with a small change in the method which I learned from a book. It's the only cornbread I will eat. Please use a 10 inch cast iron skillet -- it makes a big difference in how this bread turns out.

- Put the skillet in the oven and preheat to 375 degrees.
- Combine the dry ingredients except for the baking soda in a bowl.
- In another bowl, mix the buttermilk and the baking soda.
- Set aside.
- In a small bowl, beat the egg with the sugar until combined.
- Add the oil and mix until combined.
- Pour this mixture into the buttermilk/baking soda, and mix.
- When the oven is preheated, toss the butter into the skillet and let it melt.
- Meanwhile, pour the wet ingredients into the dry, and mix in as few strokes as it takes to just make the dough come together.
- Pull the skillet out of the oven, swirling to get the butter covering the bottom and up the sides of the skillet.
- Pour the batter immediately into the pan, smoothing the top, then back into the oven for about 25 minutes, or until golden brown and pulled away from the sides of the pan.
- Turn out onto a cutting board, cut into wedges and serve.
- NOTE: IMNSHO- cornbread isn't worth making if you don't make it in a cast-iron skillet.
- It may just be my upbringing, but it tastes better somehow.
- And please do not add the baking soda to the dry ingredients.
- I can't explain why, but adding it to the buttermilk makes a big difference in the texture.

- Preheat oven to 375°. For cornbread, in a bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, whisk egg, water, milk and oil. Stir into flour mixture just until blended. Transfer to a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool in pan on a wire rack. Crumble into a large bowl. Reduce oven temperature to 350°. , For stuffing, stir bread cubes into cornbread crumbs. In a nonstick skillet, cook celery and onion in oil until tender, about 6 minutes. - Place the chicken breast halves in a large saucepan with enough water to cover. Bring to a boil. Cook 1 hour, or until the meat is tender and easily shredded. Shred chicken and set aside. Reserve 4 to 6 cups of the remaining broth.
- Prepare an 8x8 inch pan of cornbread according to package directions. Crumble the corn bread into a large bowl. Mix in the white bread.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over medium heat, melt the margarine and stir in the onions and celery. Slowly cook, stirring occasionally, until tender.
- Stir the onions and celery into the bread mixture. Mix in the chicken, 4 cups reserved broth, cream of chicken soup, garlic powder, poultry seasoning, pepper and eggs. Blend with a potato masher until the mixture is the consistency of gelatin. Use more of the reserved broth as necessary to attain desired consistency. Transfer to a 9x13 inch baking dish.
- Bake in the preheated oven 30 minutes, or until golden brown.

- Heat oven to 350 degrees. Prepare a 10x15 (large 4.8 quart) baking pan with cooking spray. Set aside.
- Add butter to a pan and saute celery and onions until tender.
- Crumble cornbread and biscuits or bread into a large bowl. Add stuffing mix. Add cooked vegetables. Add in eggs and 4 cups of stock. Mix well. Add in salt, pepper and celery salt. Mix again. Dressing mixture should be loose but not soupy. If too thick, add more stock. Pour dressing into prepared pan and bake for 30 - 45 minutes until top is golden around edges.

- Put chicken in a dutch oven. Cover with water. Bring to a boil and cook over medium heat. Reduce heat to a simmer and cook for 45 minutes or until the chicken is tender. MOM'S TRADITIONAL SOUTHERN CORNBREAD DRESSING
Moist cornbread dressing with celery and onions is an absolute must on every Southern Thanksgiving table. My mom's recipe for Southern Cornbread Dressing is simple and classic with all the nostalgic flavors that I need from my Thanksgiving plate!

- Preheat oven to 425. In a 10-inch cast iron (or a 9-inch cake pan if you don't have a cast iron, melt 2 Tb of bacon drippings, or butter if you're substituting, in the preheated oven for 5 minutes until completely melted. Remove from the oven and set aside.
- Combine the first five ingredients in a large mixing bowl and whisk to combine well. Ditch the whisk and switch to a spatula to combine with the liquid to avoid overmixing. Overmixing will give you a tough cornbread. Mix 2 C of buttermilk and 2 eggs, breaking up the eggs in a separate small bowl before adding to the mix. Stir until combined without overmixing.
- Last, add the melted bacon drippings or butter. Pour back into the prepared cast iron and back for 25 minutes or until golden brown.
- Once cooled, break up the cornbread into rough chunks and spread out onto a baking sheet to dry out for a minimum of 8 hours or preferably overnight. The more dry the cornbread, the more flavors it will soak up.
- Preheat the oven to 350 degrees.
- Melt 1/2 C butter in a large skillet over medium-high heat. Add the green onions, onion, and celery. Cook until tender or about 5 minutes. Crack the eggs into a small mixing bowl and beat slightly.
- Add the cornbread and sautéed veggies to a large mixing bowl. Mix to combine. Add the eggs, stuffing mix, and chicken broth and mix until combined. The amount of chicken broth will depend on your personal preference. Check out the post content above for more on this topic.
- Pour into a 9" x 13" baking pan. Bake for 50 minutes or until lightly browned.

SUPER MOIST SOUTHERN CORNBREAD DRESSING
I'm southern so my turkey has to be accompanied by cornbread dressing. Except I hate dry dressing and cornbread dressing can be dry! I don't want to have to cover it with a ton of gravy to make it moist, I want it moist on it's own. This recipe does the job.

- 1. Preheat oven to 400.
- 2. For the cornbread - melt the butter in a heavy skillet, mix dry ingredients together, mix wet ingredients together, then combine them and stir in the melted butter.
- 3. Pour into the hot skillet and bake at 400 degree for 30 minutes.
- 4. In a large bowl, add crumbled cornbread, celery, onion, salt, pepper, sage, and poultry seasoning. Add the broth. Sometimes I use a little less than 4 cups but don't be scared for it to be very wet. Taste for seasoning. We like lots of sage.
- 5. Spoon into greased casserole dish and bake at 350 degrees for 25-30 minutes until lightly browned. If you baked you cornbread ahead and it's not still warm, you may need to cook it a little longer. Check for an internal temp of 160 degrees. I often bake the cornbread the night before and wrap it in foil.
