CHEF JOHN'S LOCO MOCO
This amazing Hawaiian comfort food classic is made by topping rice with a fried burger, which is then smothered with a rich, brown gravy and finished with a fried egg. Seriously, how did it take until 1949 for someone to think of this combination? We all get hangry sometimes, so whether you're a broke student or an older professional who just wishes you were, this cheap, filling bowl of goodness is the perfect solution. Garnish with green onions.

Steps:
- Season patties with salt, pepper, and cayenne.
- Whisk beef stock, soy sauce, Worcestershire sauce, sesame oil, ketchup, sugar, and cornstarch together in a bowl.
- Melt butter in a skillet over medium-high heat. Cook patty in the hot skillet until a browned crust forms on the bottom, about 5 minutes. Flip; toss in green onions and cook the other side until both beef and onions are browned, 4 to 5 minutes more. Remove patty and most of the green onions to a plate.
- Pour beef stock mixture into the skillet. Stir, scraping up browned bits from the bottom, until thickened, about 2 minutes. Reduce heat to low and reserve gravy until needed.
- Melt remaining butter in another skillet over medium heat. Add eggs to the skillet and fry side-by-side until whites are set and yolks are still runny.
- Divide rice between 2 serving bowls. Place patties over the rice, spoon gravy on top, and add the fried eggs.

PF CHANGS FRIED RICE
Steps:
- Heat chicken broth (or water) in sauce pan to boiling
- Add rice and turn down to simmer for 15 minutes until liquid is gone and rice is fluffy
- While rice is cooking, whisk together soy sauce, mustard, ginger, garlic and molasses and set aside
- Once rice is ready remove from heat
- Place stir fry pan on heat and add 1 tsp of sesame oil
- Crack eggs into pan and scramble in pan
- Once eggs are scrambled, add 1 tsp sesame oil to pan
- Add carrots, green onion, peas and bean sprouts - stir fry for 3-4 minutes
- Add remaining tsp of sesame oil and rice and stir fry for 3-4 minutes
- Spread rice around pan - up around sides - so rice is spread out as much as possible
- Add soy sauce mixture and stir fry additional 3-4 minutes
- Serve and top with green onions

BAKED "FRIED" RICE
If you don't have cold leftover rice around, this easy oven method will produce something very similar to the classic fried rice, with the perfect texture every time. Just like rice pilaf, the grains of rice get coated in fat before absorbing the cooking liquid, ensuring plump, tender, separate grains with no sticky clumps. Just adjust cooking time if using a different kind of rice or pan size. Garnish with green onions and serve with a runny poached egg on top if desired.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place rice in a large baking dish. Drizzle in canola and sesame oils; toss to coat rice completely. Add garlic, green onions, bell peppers, carrots, peas, and ham. Season with salt. Stir until well combined.
- Combine chicken broth, soy sauce, and chile paste in a pot over high heat. Stir and bring to a boil. Pour on top of the rice and stir briefly. Cover top tightly with heavy-duty aluminum foil.
- Bake in the preheated oven for 32 minutes. Remove and let stand for 10 minutes. Uncover; fluff rice with a fork. Taste and adjust seasoning.
- Increase oven temperature to 475 degrees F (245 degrees C). Return to the oven until rice is browned and crusted, about 10 minutes.

LOCO MOCO
Steps:
- For the rice: Wash the rice under cold running water until the water runs clear. In a medium saucepot over high heat, bring the chicken broth to boil. Add the rice, cover and reduce the heat to low for about 15 minutes. Remove from the heat and let stand for 5 minutes. (Alternatively, add both the rinsed rice and the chicken broth to a rice cooker and turn the machine on - it will keep the rice warm until ready to serve.) Fluff with a fork and cover. Keep warm until ready for use.
- For the burgers: Mix the ground beef, onions and some salt and pepper in a large mixing bowl. Form 4 medium patties and set aside.
- Set a large cast-iron pan over high heat. Add a drizzle of canola oil and set the patties in the pan. Cover pan with a lid (or a second pan) to seal in the moisture and ensure juicy patties. Cook until well browned on first side, 3 to 4 minutes. Then remove the lid, flip over, replace the lid and continue cooking to desired doneness, about 3 minutes for medium-rare. Remove the burgers and keep warm.
- For the gravy: Add the butter to the pan with the drippings. Saute the mushrooms and onions until golden brown, about 5 minutes. Add the beef broth and Worcestershire sauce, bring to a boil and reduce down for 2 to 3 minutes.
- In a separate bowl, mix the cornstarch with 1 tablespoons water to make a smooth paste. Slowly add into the gravy, stirring constantly until thickened. Season with salt and pepper. Cover and keep warm until ready for use.
- For the eggs: Add some canola oil to a nonstick saute pan over medium heat. Crack in the eggs and cook sunny-side up, 3 to 4 minutes. Remove and keep warm. (You can flip the eggs over-easy if you want them cooked a little more.)
- To serve: Place the cooked rice on a plate, place the burgers on top, then the eggs and finally the gravy. Garnish with parsley and tomato if desired.
LOCO MOCO FRIED RICE PATTIES

- Cook the ground beef and chorizo in a hot skillet until browned. Add the onion, garlic powder, onion powder and some salt and pepper and cook, stirring, until the onion softens and the meat is cooked through. Set aside to cool completely.
- In a large mixing bowl, mix together the rice, Cheddar and ground meat. Add the beaten eggs and mix well.
- Fill a large Dutch oven halfway with oil and slowly bring it to 375 degrees F. Form the meat mixture into medium-size balls and dredge in some flour. Fry until golden and drain on paper towels.
- Melt the butter over medium heat, then add the flour and cook, whisking, until well-combined and bubbling. Whisk in the beef stock, demi glace, and some salt and pepper, and simmer until thickened.
- Fry the remaining eggs until sunny-side up.
- Place the rice balls on 4 plates and top with sunny-side up eggs. (Save the remaining rice balls for another use.) Drizzle with the sauce and sprinkle each plate with scallions.
*MOCK* CHICKEN FRIED RICE
I tried this in a pinch when I needed a side dish for an "Asian" style chicken meal I was making. It's not authentic in any sense, but it'll do when you want to shortcut a rice dish :)

- Prepare rice as directed, putting the chicken bouillon cubes in the water as it heats.
- In a skillet, place soy sauce and whatever vegetables you want in your rice, cooking thoroughly. Add garlic powder and salt to taste.
- In a separate pan, cook the eggs and then shred them (optional).
- When the rice is finished, put it into the skillet with the vegetables and soysauce, then add egg shreds. Mix, serve, and enjoy.
