1 can (8 oz.) tomato sauce, divided
2 lb. lean ground beef
1 onion, chopped
1 cup fresh bread crumbs
1/3 cup A.1. Original Sauce
2 eggs, beaten
1/2 tsp. ground black pepper

Steps:

  • Heat oven to 350°F.
  • Reserve half the tomato sauce. Mix remaining tomato sauce with remaining ingredients just until blended.
  • Press meat mixture into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake 1 hour or until done (160ºF), draining fat and topping meatloaf with reserved sauce after 50 min.

Steps:

  • 1 HEAT oven to 350°F. Reserve 1/2 of tomato sauce; mix all remaining ingredients. 2 PRESS into 9x5-inch loaf pan. 3 BAKE 50 minutes; pour off fat. Top with reserved sauce; bake 10 minutes or until meatloaf is cooked through (160ºF).

The main point of this Italian meatball-inspired meatloaf is to show you what happens when you make meatloaf like your grandparents did. During the Great Depression, this type of dish was a popular strategy for stretching what little meat you had into as filling a meal as possible.

1 tablespoon olive oil
1 tablespoon butter
1 onion, diced
salt to taste
4 cloves garlic, minced
1 ½ cups very dry white bread crumbs
1 ½ cups milk
2 pounds ground chuck
½ cup chopped fresh flat-leaf parsley
2 ounces grated Parmesan cheese
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
3 cups tomato sauce, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
  • Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
  • Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
  • Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.

1 tablespoon parsley
1 tablespoon A.1. Original Sauce
1 teaspoon salt
1/2 teaspoon pepper
2 slices bread, soaked in milk and squeezed out
1 (26 ounce) jar Prego spaghetti sauce (optional brand, I prefer this)

Steps:

  • Combine all ingredients, well.
  • Bring a large pot to boiling, boil meatballs for 5 minutes.
  • This will seal the juices inches.
  • Broil meatballs until brown, about 10 minutes.
  • Simmer in spaegetti sauce for at least l/2 hour.

1 cup italian seasoned bread crumbs
1/4 cup A.1. Original Sauce
1/4 cup milk
1 large egg
2 tablespoons Worcestershire sauce
1 teaspoon dill weed
1/2 teaspoon season salt
1/2 teaspoon Nature's Seasons
1 dash black pepper

Steps:

  • Preheat Oven to 350*F.
  • Mix all ingredients in medium bowl.
  • Place on broiler pan with cookie dough scoop or form 1 inch balls by hand.
  • Bake 20-25 min time may vairy check after 20min.
  • Line bottom of broiler pan with aluminum wrap for faster clean up.
  • I often make a double batch and freeze for up to 2 months. To preserve for longer freeze I freeze them flat on a cookie sheet and then put them into our foodsaver vaccum bags. I also make meatballs with mashed potatoes one night and then spagetti and meatballs the next.

I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf. I use leftovers to make meatball subs.

3 celery ribs, finely chopped
1/4 cup carrot, grated
1/2 large onion, finely chopped
1 lb lean ground beef
1 lb lean ground chicken (can substitute lean ground turkey)
1 tablespoon Worcestershire sauce, divided
1/2 cup Italian seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons creole seasoning (Tony Chachere's Original Creole Seasoning)
1 teaspoon all purpose Greek seasoning (Cavender's All Purpose Greek Seasoning)
1 teaspoon garlic powder
2 large egg whites, lightly beaten
1 (8 ounce) can tomato sauce
2 tablespoons chili sauce, Heinz
1 tablespoon ketchup
1 tablespoon light brown sugar, packed
1 teaspoon Worcestershire sauce
1/8 teaspoon crushed red pepper flakes (optional)

Steps:

  • Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
  • Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.

2 slices white bread
1/2 cup half-and-half
2 eggs
1 teaspoon salt
1/2 teaspoon pepper
1 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
1/2 cup sweet onion
1/2 cup butter (to fry in)
1/2 cup flour (to roll meatballs in)
A.1. Original Sauce (thick and hearty)

Steps:

  • Mix the sirloin, eggs, bread-soaked in the half and half, salt, pepper, bread crumbs, parmesan cheese, and onion.
  • Mix very well together.
  • Form the meatballs into ping-pong ball size and roll in the flour.
  • Get 2 large frying pans hot; add the butter.
  • When pan is hot, fry the meatballs until browned on all sides.
  • Brown them really good then they will not fall apart.
  • Turn the heat down when they are browned and simmer.
  • Add the whole bottle of A-1 sauce and 1/2 cup catsup. Let simmer for 15 minutes more.

1/4 A.1. Original Sauce, use for topping

Steps:

  • Pre-heat oven to 350 degrees. Mix all ingredient in a med bowl. Place in an ungreased 13X9 baking dish. Cover and place in oven for 1 hour (internal temp 155-160 degrees).

  • Mix ketchup and A1 in small mixing bowl. Spoon on top of hot meatloaf and place back in oven for 15 minutes. Let meatloaf rest atleast 10 minutes before serving.
