- In a large saucepan over medium heat, combine ketchup, vinegar, mustard, Worcestershire sauce, brown sugar, garlic and onion. Stir until smooth. Cook over medium heat until mixture comes to a boil.
- Reduce heat to low and add ham. Stir and cook until heated through.
- Serve warm on split kaiser/hamburger buns.
HAM BUNS
Jennifer Owens doesn't know where her mother, Frances, first found the recipe for these ham buns, but they have been a part of her life since childhood in Easley, S.C. It may have come from relatives in Tennessee, as a similar recipe appears as "Hallelujah Ham Loaves" in "Dinner on the Diner," a 1983 cookbook from the Junior League of Chattanooga. The warm appetizer has won fans wherever Ms. Owens goes. Her mother's original formula called for raw onions, but Ms. Owens now sautés them. Use good smoked ham, either holiday leftovers or from the deli counter. As the buns bake, the butter pools at the bottom, toasting up the base of these irresistible bite-size sandwiches.

- Position racks in top and bottom thirds of the oven and heat oven to 400 degrees.
- Melt 1 tablespoon butter in a large skillet over medium heat and cook onion, stirring occasionally, until translucent, 8 to 10 minutes.
- As the onion cooks, split each flat of rolls in half, running a bread knife parallel to the counter as you slice the still-connected rolls. Once the onion has finished cooking, remove from heat and set aside. Place two sheet pans in the oven, one on each rack, to heat while assembling the rolls.
- In a large mixing bowl, combine mustard, poppy seeds and Worcestershire sauce. Add the remaining cup of butter and warm onion. Stir in cheese and ham until evenly combined.
- On a sheet of aluminum foil large enough to completely encase a flat of rolls, place one flat, and open like a book. Spread about a quarter of the ham mixture in an even layer over the bottom half of the rolls to the edges. Close the book, so to speak, laying the still-connected roll top over the ham-covered base. Wrap the rolls tightly with the foil, crimping the edges of the foil to enclose them. Repeat with the three other flats of party rolls.
- Divide the four packets between the two heated sheet pans. Bake until the cheese melts and rolls get toasty, 10 to 12 minutes. Unwrap and serve the flats on platters, encouraging diners to pull a bun from its brethren.

- In a small saucepan, saute celery and onion in butter. Add the tomato juice, ketchup, brown sugar, lemon juice, Worcestershire sauce, mustard and hot pepper sauce. Bring to a boil. This is one of my son's favorites. It's easy to make, and delicious. For a sandwich, add a slice of swiss or provolone on top at the last minute and throw the combo on some great homemade bread.

- Combine the pineapple juice, brown sugar (don't forget the extra tablespoonful!), mustard, lemon juice, onion salt, and soy sauce in a medium saucepan, stirring well. Bring to a boil, reduce heat. Simmer, uncovered for 5 minutes; stir frequently. Remove sauce from heat, and set aside.
- Trim any excess fat from the ham slices. Grill over medium coals for 20 to 25 minutes or until desired degree of doneness. While cooking, turn ham slices and baste every 5 minutes with the reserved sauce.
- Grill the pineapple slices over medium heat for 1 minute on each side. Garnish each slice of ham with two pineapple slices, and serve with the remaining sauce.

- Preheat a grill to medium heat.
- Place two 2-foot pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
- Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
- Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
- Put the prepared baking sheet on the grill and add 1 tablespoon of the butter. Cover the grill and let the butter melt, about 3 minutes. Spread the butter all over the baking sheet using a pastry brush and then pour on the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and cover the grill. Cook until the eggs are completely set, about 10 minutes.
- Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing onto the grill. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Cover the grill and cook until the cheese is melted, about 5 minutes. Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Serve with hot sauce.

WHOLE HAM ON THE BARBECUE
Yes, the whole thing, not just slices! Because I didn't want to put the oven on for 2 hours in this heat, I decided to try it. (I searched the site and the web, but to no avail!) The ham came out juicy and tasty...just like baked ham, really no barbeque taste. So, if it's too hot to have the oven on for hours, try it...it worked out well. I even fried pierogies in butter (in a foil pan) on the other side of the grill to go along with it!!

- Preheat gas grill on high for about 10 minutes.
- Sit ham on long sheet of heavy duty aluminum foil.
- Press brown sugar onto ham and wrap tight with foil.
- Wrap tightly with another sheet of foil.
- Lower grill temperature to low on both sides.
- Place ham on top warmer rack (or on lower rack, but place in foil pan so the bottom does not get too dried out).
- Shut grill lid and allow to cook for about 1 1/2 hours (no need to do anything else to it).
- Remove foil from ham over a pan so you don't lose the brown sugar juices.
