SIMPLE SAUCY POTATOES

These rich and creamy potatoes are simple to prepare for potlucks. This saucy side dish always gets rave reviews wherever I take it. -Gloria Schroeder, Ottawa Lake, Michigan

Number Of Ingredients 6

4 cans (14-1/2 ounces each) sliced potatoes, drained
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cups sour cream
10 bacon strips, cooked and crumbled, divided
6 green onions, thinly sliced
Chopped chives and coarse cracked pepper, optional

Steps:

  • Place potatoes in a 3-qt. slow cooker. Combine the remaining ingredients, reserving 1/3 cup bacon crumbles; pour over potatoes and mix well. Cover and cook on high for 4-5 hours. Top with reserved bacon and if desired, chopped chives and coarse cracked pepper.

3 (14 ounce) cans chicken broth
1 (20 ounce) bag Simply Potatoes O'Brien Hash Browns
1 (10 3/4 ounce) can cream of chicken soup
1/2 lb Velveeta cheese (cut into one inch cubes)
8 -10 pieces fried bacon (cut into small pieces)

Steps:

  • Bring chicken broth to a boil, then add hash browns. Boil for 10 minutes, then add soup and cheese. Stir until dissolved. Add bacon pieces to each bowl.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 stalk chopped celery
4 cups chicken stock
1/3 cup butter
1 (5 1/3 ounce) can evaporated milk

Steps:

  • Put all ingredients except milk and butter in crock pot. Cover & cook on simmer for 1 hr on stove. Stir in last 2 ingredients the last 30 minutes before serving. Add salt & pepper to taste. Garnish with shredded cheese, sour cream & bacon.

Special enough for a fancy dinner, but easy enough to fix for a weekday meal. With Simply Potatoes, they are easy to fold together. Surprisingly effortless and delicious!

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1/3 cup white cheddar cheese, shredded
3 eggs, divided
1 ounce prosciutto
1 tablespoon chives, chopped

Steps:

  • Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
  • Set oven to 375°.
  • Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
  • Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
  • Put the mixture into a greased mini-cheesecake pan. Sprinkle 2 t. of chives on top.
  • Bake for 25-30 minutes. Let cool for 5 minutes, then remove from pan. Sprinkle the remaining chives on top.

1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 quart fat-free half-and-half
1 lb breakfast sausage, browned

Steps:

  • Combine all ingredients and add salt and pepper to taste and cook over low heat until potatoes are tender. Sauce will thicken as it cooks. When serving, add baked potato type toppings as you choose. You can substitute heavy cream for a richer flavor but you add calories too! This can also be cooked in a crockpot on low all day while at work!

1 tablespoon garlic salt
1 tablespoon dried sage, rubbed between fingers
0.5 (24 ounce) container Simply Potatoes Traditional Mashed Potatoes
1/2 cup half-and-half

Steps:

  • Combine tomatoes, garlic salt and sage in 3 quart pot.
  • Heat to a boil, reduce heat and simmer 15 minutes.
  • Stir in mashed potatoes and simmer an additional 5 minutes.
  • In 2 batches, puree soup in blender.
  • Stir in half and half.
  • Cool soup, refrigerate, and serve chilled.
