175g ground almond
175g butter softened
175g golden caster sugar
175g self-raising flour
1 tsp ground cinnamon
1 large egg , plus 1 egg yolk
450g strawberry , hulled and sliced
icing sugar , for dusting
whipped double cream mixed with Greek yogurt (half and half is good), to serve

Steps:

  • Preheat the oven to 180C/gas4/ fan 160C. Line the base of a loose-bottomed 23cm cake tin with greaseproof paper and butter the sides.
  • Mix almonds, butter, sugar, flour, cinnamon, egg and egg yolk in a food processor just until the ingredients are evenly combined.
  • Spread half the mixture over the base of the tin in a smooth layer with no gaps - easiest to do this with two forks. Lay the sliced strawberries on top. Add the remaining cake mixture and spread it as best you can, but don't worry if a few strawberries peep through.
  • Bake for 1 hour (it may need an extra 5 minutes), but check after 40 minutes - if it is getting too brown, cover loosely with foil. The torte should be slightly risen and dark golden brown when cooked.
  • Cool in the tin slightly, then loosen the edges with a knife and remove from the tin. Slide the torte onto a plate and sprinkle with a dusting of icing sugar. Serve warm or cold, in wedges with dollops of cream and Greek yogurt.

1 (3 ounce) package cream cheese, softened
3/4 cup sugar
2 teaspoons vanilla
1 pint all-purpose whipping cream
2 (7 ounce) packages ladyfingers
16 ounces frozen strawberries
1 tablespoon cornstarch

Steps:

  • Whip cream cheese, sugar, and vanilla together.
  • In seperate bowl, whip all-purpose cream until stiff peaks form.
  • Fold whipped cream into cream cheese mixture.
  • Arrange Lady Fingers around sides and bottom of springform pan, standing Lady Fingers lengthwise around sides of pan.
  • Pour 1/2 of filling into pan, then a layer of Lady Fingers.
  • Top with remaining filling.
  • Topping:.
  • Strain berries and set aside, reserving juice.
  • In saucepan, bring cornstarch and juice to a gentl boil; spread sauce on top of cake.
  • Spread strawberries on top.
  • Refrigerate and serve when throughly chilled, removing springform pan.

1 teaspoon lemon extract

FROSTING:
3/4 cup shortening

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Line bottoms of two greased 9-in. round baking pans with parchment paper; grease paper., In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in extract. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., With clean beaters, beat egg whites on medium speed until stiff peaks form. Fold into batter., Transfer batter to prepared pans. Bake 20-25 minutes or until a toothpick inserted in center comes out clean and edges are golden, Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely. In a large bowl, beat shortening and butter until combined. Beat in confectioner's sugar alternately with extract and enough milk to reach a spreading consistency., Using a long serrated knife, cut each cake horizontally in half. Unsalted butter, for pan
8 extra-large eggs, room temperature, separated
1/2 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup cake flour (not self-rising)
2 teaspoons sifted baking powder
1 pint heavy cream
2 tablespoons confectioners' sugar, plus more for work towel
1 quart strawberries, washed, dried, and hulls removed

Steps:

  • Preheat oven to 350 degrees. Butter and line a rimmed 15-by-10-by-1-inch jelly roll pan with parchment paper; set aside.
  • In a large bowl, beat egg yolks and sugar together until light in color, about 1 minute; stir in 1/2 teaspoon vanilla. Add cake flour and baking powder; stir until well combined.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Gently fold into flour mixture.
  • Pour cake batter in prepared pan and spread evenly with a spatula or the back of a spoon. Transfer baking sheet to oven and bake until cake springs back when touched, about 20 minutes.
  • Meanwhile, set 6 strawberries aside for garnish. Thinly slice remaining strawberries. Place heavy cream in the bowl of an electric mixer fitted with the paddle attachment; beat on medium speed. Slowly add remaining teaspoon vanilla and 2 tablespoons confectioners' sugar. Continue beating until soft peaks form. Set half of the whipped cream aside. Gently fold sliced strawberries into remaining half; set aside.
  • Lay a clean kitchen towel flat on a work surface with one of the short ends facing you. Generously sprinkle dish towel with confectioners' sugar. Flip cake onto towel, remove baking sheet, and peel off parchment paper. Using the dish towel, roll cake away from you; let cool.
  • Unroll cake. Evenly spread strawberry whipped-cream mixture over surface of the cake and re-roll. Transfer cake to a serving plate and evenly spread top and sides of cake with reserved whipped cream. Cut reserved whole strawberries in half lengthwise and place on top of cake for garnish.

8 egg whites
2 cups sugar
1 1/2 cups finely ground roasted hazelnuts
butter (optional)
cornstarch (optional)
4 pints rinsed fresh strawberries, hulled and blotted dry
sugar
1 quart heavy cream
6 tablespoons powdered sugar
1/4 cup Grand Marnier
1 (10 -12 ounce) jar raspberry preserves
10 fresh mint leaves (optional garnish)

Steps:

  • For Torte: Preheat oven to 200 degrees F.
  • In a large bowl using electric mixer, beat egg whites until soft peaks form, about 3 - 5 minutes.
  • Gradually add sugar, beating continuously until all sugar is dissolved and egg whites form stiff glossy peaks, about 15 - 20 minutes. Fold hazelnuts into egg whites.
  • Spoon into pastry bag and pipe out three 9-inch diameter, 1/2-inch high meringue discs onto baking sheet lined with parchment paper or brown paper buttered and lightly dusted with cornstarch. Smooth meringues.
  • Bake until very lightly browned and firm to touch, about 1 - 1 1/2 hours. Let cool on wire racks in a dry place or dry in oven with heat turned off and door ajar.
  • For Filling: Reserve enough whole strawberries of uniform size to top on 9-inch disc. In shallow broiler pan, place whole strawberries and sprinkle with sugar. Place under broiler for 1 minute to glaze; set aside.
  • Thinly slice remaining strawberries and place in large bowl; set aside.
  • In another large bowl, combine cream and powdered sugar. Whip until almost stiff. Add Grand Marnier and continue whipping until stiff.
  • Spread one-third raspberry preserves over each meringue.
  • Cover each with layer of sliced strawberries, using one-third per layer.
  • Cover two discs with whipped cream leaving third disc for top torte.
  • Very carefully stack meringue discs in layers. Cover top disc with whipped cream. Decorate top with glazed whole strawberries.
  • Cover sides of torte with remaining whipped cream.
  • If desired, decorate with rosettes of whipped cream and mint leaves.
  • NOTE: This torte is meant to be enjoyed soon after making it as the baked meringue will lose it's crispness due to moisture of ingredients within layers.

1-1/2 cups thawed COOL WHIP Whipped Topping
12 small strawberries

Steps:

  • Heat oven to 350°F.
  • Cover bottom of 9-inch round pan with waxed paper; spray with cooking spray. Microwave 4 oz. chocolate and butter in large microwaveable bowl on HIGH 1-1/2 to 2 min. or until butter is melted, stirring after 1 min.; stir until chocolate is completely melted and mixture is well blended. Add dry gelatin mix and sugar; mix well. Blend in eggs. Add flour; mix well. Pour into prepared pan.
  • Bake 40 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool cake in pan 5 min. Loosen cake from side of pan with knife. Invert cake onto wire rack; gently remove pan and waxed paper. Cool cake completely.

1 pint heavy whipping cream

1 (16 ounce) package frozen strawberries

  • Strain strawberries and set aside, reserving juices. In a saucepan bring cornstarch and strawberry juice to a gentle boil. Remove from heat and let cool.
  • Whip cream cheese, sugar, and vanilla together.
  • In a separate bowl beat whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture.

1/3 cup oil
3 eggs
1 1/4 cups water
1/3 cup sugar

1/3 cup milk

1 quart strawberry, cleaned and hulled

Steps:

  • Preheat the oven to 325°F.
  • *Prepare an 8" or 9" cake pan lining it with parchment paper (or grease the pan).
  • Cream the butter and the 1/2 cup of sugar.
  • Add the egg yolks and vanilla, mixing well.
  • In a seperate bowl, mix together the flour, salt and baking powder.
  • Blend the dry ingredients and milk alternately into the butter mixture.

  • *You can substitute the cream with Cool Whip (or other) to lessen the calories and fat.
  • Top off the torte with the whipped cream just before serving, adding whole (or cut) strawberries as your final layer.

1 (23 ounce) package brownie mix
2 tablespoons water
1/2 cup canola oil
2 eggs
1 (14 ounce) can sweetened condensed milk (not evaporated)
1/2 cup cold water
1 (1 1/2 ounce) box vanilla instant pudding mix
1 (8 ounce) container whipped topping, thawed
1 quart fresh strawberries, hulled & sliced
melted chocolate (optional)

Steps:

  • Grease or spray two 9-inch round cake pans and the line with parchment paper, extending paper up the sides of pans, then grease or spray paper.
  • Prepare brownie mix by adding 2 tbls water, canola oil, and the 2 eggs - mixing evenly. Divide the batter evenly between the two prepared pans.
  • Bake at 350F for 20 minutes or until top springs back when touched.
  • Cool completely.
  • In a large bowl, mix sweetened condensed milk and water.
  • Beat in the pudding mix.
  • Chill for 5 minutes.
  • Fold in whipped topping.
  • Place one brownie layer on a serving plate and top with half each of the pudding mixture and strawberries then repeat with the 2nd layer.
  • Optional: drizzle top of cake with the melted chocolate to decorate a bit.
  • Refrigerate any leftovers.
