EASY APPLE COBBLER RECIPE

Easy Apple Cobbler Recipe image

This Easy Apple Cobbler has a super fluffy, deliciously sweet topping. The apples are perfectly sweet and spiced. This is a simple, easy fall dessert.

Provided by Adrianna Adarme

Categories     Dessert

Time 1h

Number Of Ingredients 18

2 honey crisp apples (peeled, cored and cut into 1/4-inch slices)
2 gala apples (peeled, cored and cut into 1/4-inch slices)
1/4 cup brown sugar
2 tablespoons granulated sugar
3 tablespoons all-purpose flour
Juice from 1 small lemon (about 1 tablespoon juice)
1 teaspoon vanilla paste or 2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground ginger
Teeny pinch of ground cardamom
Teeny pinch of ground cloves
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 cup granulated sugar
3/4 cup whole milk
6 tablespoons unsalted butter (melted)
1 teaspoon vanilla paste or 2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease or butter a baking casserole dish that's 9x6 or something comparable. Use what you have! And then set it aside.
  • In a large bowl, add the sliced honey crisp apples, gala apples, brown sugar, sugar, flour, juice from 1 lemon, vanilla and spices (cinnamon, ginger, cardamom and cloves). Toss it all together until combined. Add the filling to your prepared baking dish.
  • In a medium bowl, whisk together the flour, baking powder, salt and sugar. Add the milk, butter and vanilla; mix until combined. Pour the topping on top of the filling. It's ok if some of the filling is peaking through or it's not a totally perfect on top. I like it when some of the filling shows through. And then transfer to the oven to bake for about 40 to 45 minutes, until the filling is bubbling and the top is golden brown.
  • Remove from the oven and serve warm with cold vanilla ice cream.

APPLE COBBLER

Apple Cobbler image

The cinnamon biscuit topping in this classic cobbler is easy to make, and easily adjustable. Reduce the buttermilk by 2 tablespoons for a crumblier, more streusel-like topping, or add 2 tablespoons to make it softer and cakelike. The cobbler can be made ahead and rewarmed: Tent it with foil and warm it in a 325-degree oven for 10 to 15 minutes.

Time 1h

Yield One 9-by-13-inch cobbler (about 12 servings)

Number Of Ingredients 22

4 tablespoons/55 grams unsalted butter (1/2 stick)
6 to 8 medium apples (about 2 1/4 pounds), such as Honeycrisp, Granny Smith or Gala, peeled, cored and cut into 1/2-inch dice (about 6 1/2 cups/1000 grams)
2 tablespoons lemon juice (from 1 lemon)
1 1/2 teaspoons vanilla extract
1 cup/220 grams light or dark brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3/4 teaspoon fine sea salt
1/2 cup/100 grams granulated sugar
1/3 cup/45 grams all-purpose flour
Unsalted butter, at room temperature, or nonstick cooking spray
2 cups/255 grams all-purpose flour
1/3 cup/75 grams light brown sugar
1 tablespoon ground cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
6 tablespoons/85 grams cold unsalted butter, cut into ½-inch cubes
1/2 cup/120 milliliters cold buttermilk
1 large egg
1 teaspoon vanilla extract
Turbinado sugar, as needed, for finishing

Steps:

  • Make the filling: In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
  • In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes. (If you'd like to make it ahead of time, the filling will keep refrigerated for up to 3 days.)
  • Heat oven to 375 degrees. Lightly grease a 9-by-13-inch pan with a thin layer of butter or a coating of nonstick spray, and scoop the filling into the pan.
  • Prepare the cobbler: In a medium bowl, whisk the flour, brown sugar, cinnamon, baking powder and salt together to combine. Add the butter and toss well until each piece is coated fully with flour. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles a coarse meal; the butter should be almost completely worked into the flour.
  • Make a well in the center of the bowl, then add the buttermilk, egg and vanilla. Use a fork or small whisk to first beat the egg lightly, then stir all the ingredients together until well combined.
  • Using a spoon, drop the batter in large dollops all over the cobbler. (Most of the surface will be covered, but some of the filling should still be visible.) Generously sprinkle turbinado sugar over the surface.
  • Transfer to the oven and bake until the filling is bubbly and the biscuit topping is golden brown, 40 to 45 minutes. Cool at least 10 minutes before serving warm.

APPLE COBBLER

Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 15

2 1/2 pounds Granny Smith apples
2 pounds Fuji apples
1 1/2 pounds Gala apples
3 cups granulated sugar
2 cups all-purpose flour
1/8 teaspoon salt
1 1/2 sticks (6-ounces) chilled unsalted butter, plus softened butter for baking dish
1/4 teaspoon ground cinnamon
1/2 teaspoon freshly ground nutmeg
1 teaspoon grated lemon zest
1 (6-ounce) package sweetened, dried cranberries
1 large egg
1 egg yolk
1 teaspoon vanilla
1 (6-ounce) package sliced almonds

Steps:

  • Preheat the oven to 400 degrees F and butter a 9 by 13-inch baking dish.
  • Peel and core the apples and cut them into 1/4 to 1/2-inch dice. Try to get the apples pieces as uniform as possible to ensure even baking in the cobbler. Combine the apples with 1 cup of the sugar in a large bowl. Cover and set in the refrigerator while preparing the cobbler topping. The sugar will draw out some of the moisture in the apples, so the filling will be nice and thick.
  • Combine the remaining sugar with the flour and salt in a medium size bowl. Set aside 1/2 cup of the sugar and flour mixture to coat the apples. Cut the chilled butter into small pieces and work into the sugar/flour mixture using a pastry cutter, a fork, or your fingers until it forms a coarse meal.
  • Drain the sugar syrup from the apples and set aside. Combine the apples with the reserved flour and sugar mixture. Add the cinnamon, nutmeg, lemon zest, and sweetened dried cranberries to the apples and stir well to evenly distribute all the flavors. Pour into the buttered baking dish.
  • Lightly beat the egg, egg yolk, and vanilla and slowly drizzle it into the flour mixture. Don't worry if it seems a little dry at first. Continue to stir the mixture until the flour is completely absorbed into the egg. (You might want to get your hands into it and use your fingers to finish.) Take a small bit of the topping and roll it into a 1-inch ball. Gently flatten the ball into a disk and place it on top of the apple mixture in the baking dish. Repeat with the remaining topping, slightly overlapping the disks.
  • Bake for 35 to 45 minutes or until the juices are bubbling and the topping is a light golden brown. Let the cobbler rest for 10 to 15 minutes before serving. While the cobbler is sitting, coat the almonds with the reserved sugar syrup. Drain off the excess syrup and place the almonds on a buttered parchment lined baking sheet. Roast until the almonds are golden brown, approximately 5 to 10 minutes. Scatter them over the cobbler.
  • Tips: To make cutting the butter into the flour/sugar mixture a bit easier, try grating frozen sticks of butter on the large holes of a hand grater. You'll have small bits of cold butter which will help the coarse meal form quickly. Use a melon baller to scoop out the core of the apple halves quickly and with minimal waste.
  • Note: You will need approximately 8 to 10 apples total. .
