SHEET PAN FUDGY CHOCOLATE BROWNIES
Steps:
- Preheat the oven to 350 degrees F. Lightly grease a large, rimmed baking sheet (12X18-inches) and set aside.
- In a large microwave-safe bowl, combine the butter and chocolate; microwave in 1-minute intervals, stirring in between, until the mixture is melted and smooth (don't overheat, it should be slightly warm, if at all). Add the sugar and stir until combined.
- Whisk in the eggs and vanilla, and mix until large bubbles pop at the surface - it will go from looking slightly curdled to really glossy and thick so keep stirring until you see the change. In a separate smaller bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the batter and mix once or twice. With dry streaks remaining, add the chocolate chips and mix until well-combined.
- Spread the batter evenly in the prepared pan.
- Bake for 25-30 minutes until edges are set but the middle is still slightly gooey. If you want extra dense, fudgy brownies, halfway through the baking time, carefully lift up the baking pan and let it drop on the oven rack to release any air bubbles (totally optional). Let the brownies cool completely in the pan (I like to refrigerate them after they have baked and cooled - easier cutting and ultra-delicious, and don't get me started on how incredible these are straight from the freezer).

- Preheat oven to 325 degrees. Butter and flour a 9-inch springform pan. Melt butter and chocolate in a bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat, and whisk in 3/4 cup sugar. Whisk in egg yolk, then cocoa powder and salt.
- Beat egg whites with a mixer on medium speed until foamy. Raise speed to medium-high, gradually beat in remaining 2 tablespoons sugar, and beat until soft, glossy peaks form, about 4 minutes.
- Fold flour into chocolate mixture with a rubber spatula, then fold in egg whites. Pour batter into pan, and bake until set, about 33 minutes. Let cake cool completely in pan on a wire rack. Remove side of pan, and dust top of cake with cocoa powder.

- 1. Preheat an oven to 400°F. Grease a 11x15 sheet cake pan (be sure it has raised edges).
- 2. In a large bowl, stir together the flour and granulated sugar.
- 3. In a saucepan, combine the butter, Crisco, water, and cocoa powder. Stir while bringing to a boil.
- 4. Pour over the flour mixture.
- 5. Mix together.
- 6. In another bowl, stir together the eggs, baking soda, buttermilk, and vanilla.
- 7. Add to the flour/cocoa mixture and mix together.
- 8. Transfer the batter to the prepared sheet cake pan.
- 9. Bake for 20-30 minutes.
- 10. Five minutes before the cake is done, make the frosting: In a saucepan, combine the butter, cocoa powder, and milk.
- 11. Heat and then add the confectioners' sugar, nuts, and vanilla.
- 12. Pour the frosting over the cake.
- 13. Allow to cool.
FUDGY BROWNIES

- Get prepared
- Arrange the oven racks so one is in the center position. Preheat the oven to 400°F.
- Spray the bottom and sides of an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper 8 inches wide and 15 to 16 inches long. Lay the paper in the pan so it travels up and over two of the sides. Spray the paper with nonstick cooking spray.
- Make the batter
- Pour 1 to 2 inches of water into the bottom of a small saucepan and choose a bowl that fits over the saucepan to make a double boiler. Make sure the water is not touching the bottom of the bowl; if it is, pour some water out. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
- Unless you are using chocolate chips, roughly chop the chocolate. Put the butter and chocolate into the bowl of the double boiler and melt them, using a heat-proof rubber spatula to stir and scrape down the sides of the bowl so the chocolate doesn't burn.
- Remove the bowl from the double boiler and wipe the bottom of the bowl so no water drips. Add the sugar, vanilla, and salt and whisk them in. Add the eggs one at a time and whisk until the batter is shiny and smooth, 1 to 2 minutes. Add the flour and stir with a rubber spatula until no flour is visible.
- Bake the brownies
- Using a rubber spatula, transfer the batter to the prepared pan. Use the spatula to smooth out the top of the batter.
- Place the brownies on the center rack of the oven and bake for 20 minutes, rotating the pan from front to back halfway through the baking. Remove the brownies from the oven and cool on a cooling rack. The tops will appear dry, but the insides will remain fudgy if you poke the center with a toothpick or cake tester. Holding the sides of the parchment paper, lift the brownies out of the pan and place them on a cutting board. Using a large knife, cut the brownies into 16 equal pieces.
- Store the brownies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.

- In a large bowl, combine sugar, flour, and salt; set aside. In a saucepan, bring margarine, water, and cocoa, to a boil. Take from heat and immediatley pour over dry ingredients, stirring to mix. Then add sour cream, eggs, and soda. Mix well (until uniform in color). Pour into greased and floured 11 1/2 X 15 1/2 -inch pan. Bake at 375 degrees for 25-30 minutes, frost cake while warm. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.

- Boil water with 3 tbsp of sugar and set aside.
- Combine all dry ingredients (first 5 ingredients) in a bowl, then add eggs,melted butter and vanilla until well blended, mixture will be thick.
- Butter a 9 inch microwavable pan or tupperware, even if its a tad smaller it's ok.
- Spread mixture evenly into the buttered pan.
- Very slowly pour water into the center of the mixture and do not stir!
- Cover well, with plastic wrap or lid.
- Cook in microwave on regular power for 5 minutes, check it to make sure it's set and if not put back in microwave for a couple more minutes.
- Sprinkle with powdered sugar and serve with your favorite toppings.
