There have been so many nights when I craved lasagna but didn't want to get stuck with the usual leftovers. If you've felt the same way, this small-batch version solves all your problems! It's easy enough to throw together on a weeknight and is the perfect size for two (or three) servings.

1 tablespoon extra-virgin olive oil
1/2 small yellow onion, finely chopped (about 1/3 cup)
1 clove garlic, minced
Kosher salt and freshly ground black pepper
8 ounces ground beef
1/2 teaspoon dried oregano
One (12-ounce) jar marinara sauce
1 large egg
1 cup (8 ounces) ricotta
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh basil
1 cup shredded mozzarella
1/2 cup plus 2 tablespoons grated Parmesan
5 sheets no-boil lasagna noodles

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the onion, garlic and 1/2 teaspoon salt and saute until the onion is translucent and softened, stirring occasionally, about 4 minutes. Add the ground beef and use a wooden spoon to break it into pieces. Cook, stirring occasionally, until no longer pink, 4 to 6 minutes. Add the oregano and cook 1 minute. Stir in the marinara and let simmer while you make the ricotta mixture.
  • Lightly beat the egg in a medium bowl. Stir in the ricotta, parsley, basil, 1/2 cup mozzarella and 1/2 cup Parmesan until combined.
  • Begin to layer the lasagna, spread 2 tablespoons marinara sauce evenly over the bottom of an 8 1/2-by-4 1/2-inch loaf pan. Cover with 1 lasagna noodle. Spread on 1/3 cup of the ricotta mixture followed by 1/2 cup marinara sauce. Top with another noodle. Repeat layering 4 more times, ending with the sauce. Top the final layer with the remaining 1/2 cup mozzarella and 2 tablespoons Parmesan. Bake until the noodles are tender and the cheese is melted and bubbly, about 30 minutes. Let stand 10 minutes before serving.

All-Crust Sheet-Pan Lasagna image

Savor caramelized cheese and crispy pasta with every bite of this sheet pan lasagna that's all browned bits and crunchy edges. Add a pinch of red pepper flakes to the sauce if you like an extra kick of heat.

3 tablespoons extra-virgin olive oil, plus more for oiling foil
12 ounces sweet Italian sausage, casings removed (about 3 links)
2 cloves garlic, thinly sliced
One 28-ounce can whole peeled tomatoes, crushed by hand
Kosher salt and freshly ground pepper
One 15-ounce container whole-milk ricotta cheese (about 2 cups)
1 large egg
1/4 cup milk
1/2 cup packed basil leaves, roughly chopped
3/4 cup grated Parmesan
One 1-pound block whole-milk mozzarella cheese, shredded (about 4 cups)
12 flat no-boil lasagna noodles (7-by-3.5-inches each)

Steps:

  • Position a rack in the center of the oven and preheat to 450 degrees F.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, about 5 minutes. Transfer the sausage to a bowl with a slotted spoon and reserve the drippings in the pan.
  • Reduce the heat to medium. Add the remaining 2 tablespoons olive oil and the garlic to the pan. When the garlic begins to brown at the edges, about 1 minute, add the tomatoes with their juices, 3/4 teaspoon salt and 1/4 teaspoon pepper. Bring to a simmer and continue to cook, stirring occasionally, until the sauce thickens, about 8 minutes.
  • Mix the ricotta, egg, milk, basil, 1/2 cup of the grated Parmesan, 3/4 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Spread 2/3 cup of the tomato sauce across the bottom of an 18-by-13-inch sheet pan. Next, space out 6 lasagna noodles on top of the sauce, turning them to fit so there are 2 noodles across and 3 noodles down. (The noodles will expand when they cook.) Top the noodles with all of the ricotta mixture, all of the sausage, 2/3 cup tomato sauce, and half the shredded mozzarella. Add another layer of 6 lasagna noodles and top with the remaining sauce, mozzarella, and 1/4 cup grated Parmesan.
  • Lightly oil one side of a large piece of foil. Cover the pan with the foil, greased side down. Bake until the noodles are tender when pierced with a paring knife, about 20 minutes. Carefully remove the foil and continue to bake until the top is very crusty and brown, 10 to 15 minutes more.

Kosher salt
18 lasagna noodles
2 tablespoons extra-virgin olive oil
2 pounds bulk Italian sausage
1 pound ground beef
3 cloves garlic, minced
One 6-ounce can tomato paste
Two 14.5-ounce cans whole tomatoes
1 tablespoon dried basil
2 tablespoons dried parsley
1 1/2 cups cottage cheese
1 1/2 cups ricotta
2 large eggs beaten
1/2 cup plus 3 tablespoons grated Parmesan cheese
18 slices mozzarella
Ciabatta or baguette slices, for serving
Halved cherry tomatoes tossed with chopped fresh basil, for serving

Steps:

  • Cover a baking sheet with plastic wrap.
  • Bring a large pot of water to a boil and add some salt. Cook the lasagna noodles until al dente, 5 to 7 minutes. Drain, then lay out flat on the wrapped baking sheet until ready to assemble.
  • Meanwhile, heat the oil in a large skillet or saucepan set over medium-high heat. Add the sausage, beef and garlic and cook until the meat is browned completely, about 5 minutes. Drain off all but 2 tablespoons of the fat (if needed), add the tomato paste and fry for 1 minute. Add the tomatoes and crush with a spoon. Add the basil, 1 tablespoon of the parsley and 1 tablespoon salt. Bring to a simmer and cook for 25 to 30 minutes.
  • In a medium bowl, add the cottage cheese, ricotta, beaten eggs, 1/2 cup of the grated Parmesan, 2 teaspoons salt and remaining 1 tablespoon parsley and mix together well. Set aside.
  • Before or during assembly, cut or tear the lasagna sheets in half crosswise.
  • To assemble each loaf pan: Add just enough meat sauce (about 1/4 cup) to cover the bottom of each of three 8 1/2-by-4 1/2-by-2 1/2-inch aluminum foil loaf pans. Layer 4 half lasagna sheets, overlapping, over the sauce on each. Top with 1/2 cup of the cottage cheese mixture, spread evenly. Top with 3 slices mozzarella, then 1/2 cup meat sauce, then 4 half lasagna sheets, overlapping. Top with 1/2 cup cottage cheese mixture, spread evenly, 3 slices mozzarella and 1/2 cup meat sauce. Finish with 4 half lasagna sheets, overlapping, 1/2 cup meat sauce and 1 tablespoon grated Parmesan. The lasagnas can be baked right away, covered in foil and refrigerated for up to 2 days or wrapped in foil and frozen.
  • If baking right away, preheat the oven to 350 degrees F. Put the loaf pan on a baking sheet and bake until hot and bubbly, about 20 minutes. Serve with a couple of slices of ciabatta or baguette and cherry tomatoes tossed in basil.
  • If baking from frozen, put the loaf pan on a baking sheet, cover with foil and bake at 350 degrees F for 1 hour. Uncover and bake until hot and bubbly, an additional 20 to 25 minutes.

FREEZER LASAGNA

1 10-ounce box of lasagna noodles*
1 teaspoon olive oil
1 pound ground Italian sausage
1 24-ounce jar of Marinara sauce
3 cups full-fat ricotta cheese
2 large eggs
2 tablespoons dried parsley
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 pound grated mozzarella cheese
1/2 cup grated Parmesan cheese

Steps:

  • First, cook the lasagna noodles, if you're not using the no-cook noodles. Drain the noodles, toss lightly with olive oil and lay flat on paper towels.
  • In a large skillet over medium-high heat, add the sausage, and cook while crumbling with a wooden spoon. When the sausage is fully cooked and brown, stir in the Marinara sauce. Set the sauce aside.
  • In a large bowl, whisk together the ricotta cheese, eggs, parsley, salt and pepper.
  • Have the mozzarella and Parmesan cheese ready on the side.
  • It's time to assemble the first lasagna: add a small amount of red sauce on the bottom of an 8x8" dish, and smear it around to coat the bottom. Place 3 lasagna noodles on top--tuck under the ends of the noodles, or leave them sticking up to get crispy in the oven. Add a one-quarter of ricotta mixture and spread it evenly across the noodles. Top with one-quarter of the meat mixture. Add one-sixth of the grated mozzarella. Add another layer of noodles, making sure they face the opposite direction. Follow with another one-quarter of the ricotta mixture, another one-sixth of the mozzarella, and then one-quarter of the meat mixture. Finally, add another one-sixth of the mozzarella on top and sprinkle over 1/4 cup of the Parmsan cheese.( Basically, it's two layers of noodles, meat sauce, and ricotta cheese mixture, but three layers of grated mozzarella).
  • Repeat with the remaining ingredients into a second pan, preferably an 8x8" freezer-safe foil pan.
  • Preheat the oven to 350, and cook the lasagna for 30-40 minutes, until evenly hot and bubbling around the edges.
  • For the lasagna meant for the freezer, cover it with the lid, wrap tightly in plastic wrap and foil, and then freeze for up to 3 months. To eat, remove the lasagna from the freezer and let thaw in the fridge for up to 12 hours. Remove the plastic wrap and lid, but keep the foil on the top of the lasagna. Preheat the oven to 350, and cook the lasagna for 55-65 minutes, or until evenly hot and bubbling around the edges. If the lasagna comes straight from the freezer, expect 75-90 minutes of cook time, but be sure to keep it covered with foil the entire time.

Now that it's just me and my husband at most dinners, a big lasagna becomes a burden with the leftovers which I don't like to either freeze or eat for days on end This version is much smaller, but with all the same flavor you'd expect.

6 uncooked lasagna noodles (I use low-glycemic Dreamfield's)
8 ounces lean ground beef
1/2 cup freshly minced onion
2 -4 garlic cloves, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
salt
black pepper
1 tablespoon olive oil
15 ounces marinara sauce
1 cup ricotta cheese
1 egg
1/4 cup freshly grated parmesan cheese
8 ounces sliced mozzarella cheese

Steps:

  • Preheat oven to 375°F.
  • Cook noodles and drain.
  • Saute onion and garlic in olive oil in a large skillet for a few minutes then add ground beef, oregano, basil salt and pepper and cook until beef is browned, breaking up any clumped meat. Stir in marinara sauce and simmer over low heat for 15 minutes, making sure sauce doesn't get too thick.
  • In a small bowl, whisk together a lightly beaten egg with ricotta and parmesan.
  • In the bottom of a loaf pan, place about 1 cup meat sauce across the bottom. Top with two noodles, then top with half of the remaining meat sauce mixture. Top with another two noodles and the ricotta mixture. Top with the last two noodles and the remaining sauce. Layer mozzarella slices across the top.
  • Loosely tent pan with foil and bake for 45 minutes, then remove foil and bake another ten minutes, allowing cheese to brown.
  • Let sit for about 10-15 minutes before you cut into it.

CLASSIC AND SIMPLE MEAT LASAGNA

1 pound lean ground beef
2 cloves garlic, chopped
½ teaspoon garlic powder

1 (16 ounce) package cottage cheese
2 eggs
½ cup shredded Parmesan cheese
1 ½ (25 ounce) jars tomato-basil pasta sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Remove the noodles to a plate.
  • Place the ground beef into a skillet over medium heat, add the garlic, garlic powder, oregano, salt, and black pepper to the skillet. Cook the meat, chopping it into small chunks as it cooks, until no longer pink, about 10 minutes. Drain excess grease.
  • In a bowl, mix the cottage cheese, eggs, and Parmesan cheese until thoroughly combined.
  • Place 4 noodles side by side into the bottom of a 9x13-inch baking pan; top with a layer of the tomato-basil sauce, a layer of ground beef mixture, and a layer of the cottage cheese mixture. Repeat layers twice more, ending with a layer of sauce; sprinkle top with the mozzarella cheese. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the casserole is bubbling and the cheese has melted, about 30 minutes. Remove foil and bake until cheese has begun to brown, about 10 more minutes. Allow to stand at least 10 minutes before serving.
