THE HIRSHON 1950'S 'CROWN O' GOLD' MEATLOAF

Number Of Ingredients 13

1 ½ cups fine soft bread crumbs
1 ½ lb. ground lean (90/10) dry-aged wagyu ground beef, or use 1 ¼ lb. regular 90/10 grass-fed ground beef and ¼ lb. sweet Italian sausage meat, as you prefer - the original was 90/10 ground beef
4 egg yolks
1 ½ tsp. Jane's Krazy Salt or use 1 tsp. Kosher salt, ¼ tsp. freshly-ground black pepper, a tiny pinch of cayenne and ¼ tsp. thyme (TFD change, original recipe called for just kosher salt)
2 tablespoons Savora (strongly preferred) or use French's Mustard
1 ½ Tbsp. prepared white horseradish
3 Tbsp. finely-diced poblano green pepper, or just use an orange, yellow or red bell pepper (TFD dislikes green bell peppers)
2 Tbsp. French's Caramelized Onions
2 Tbsp. minced scallion (TFD addition, omit for classic recipe)
⅓ cup Sir Kensington's spicy ketchup *** Crown O'Gold Topping (Mustard Meringue):
4 egg whites
¼ tsp. Cream of Tartar
4 Tbsp. Savora (strongly preferred) or French's Mustard + additional dry English mustard powder if needed to give it some serious kick (optional TFD addition)

Steps:

  • Mix bread crumbs with meat. Combine remaining meatloaf ingredients separately and blend carefully by hand into meat-bread mixture.
  • Pack the mixture lightly into a 9-inch casserole and bake in a moderate oven (325 degrees F) 30 minutes.
  • To Make The Topping:
  • Beat egg whites until foamy; add cream of tartar and beat until very stiff, then fold in mustard gently.
  • Swirl on hot meat; return to oven; bake 20 to 25 minutes longer or until tipped with brown. Serve immediately.

1 tablespoon vegetable oil
2 ribs celery, chopped
1/2 cup chopped onion
1 1/2 pounds ground beef, or a combination of ground beef and pork
3/4 cup​ quick or old-fashioned oats
1/4 cup chili sauce, or ketchup
1 tablespoon​ Worcestershire sauce
1 1/2 teaspoon salt
1 large​ egg, beaten
3 tablespoons water, or milk

Steps:

  • Preheat the oven to 350 F
  • Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
  • In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
  • Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
  • Bake at 375 F for 1 hour.
  • Using 2 spatulas, carefully move meatloaf to a serving plate and slice.

This is my sister-in-law's recipe for meatloaf. She shared with me for a family cookbook. It is sweet so you might want to cut back some on the brown sugar, I only use about 3/4 cup. Hope you enjoy it

2 lbs ground chuck
2 eggs, beaten
1 cup breadcrumbs
1/2 cup ketchup
1/4 cup milk
1 medium onion, chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup brown sugar, packed
1/2 cup water
1/2 cup apple cider vinegar
2 teaspoons yellow mustard

Steps:

  • In a large mixing bowl, combine ground chuck, eggs, bread crumbs, ketchup, milk, onion, salt and pepper.
  • Mix well.
  • Place and form mixture into greased loaf pan or baking dish.
  • In medium bowl, combine brown sugar, water, vinegar and mustard. Mix well. Pour over meat mixture.
  • Bake uncovered at 400°F approximately 1 hour.
  • Let stand 15 minutes before slicing.

2 tablespoons extra-virgin olive oil, plus more for baking dish
1/2 cup finely chopped scallions (white and green parts)
1/4 cup grated carrots
1/4 cup finely chopped onion
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
2 teaspoons gelatin
2 pounds ground beef chuck
1/2 pound ground pork
2 large eggs, beaten
1/2 cup dried bread crumbs
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard

Steps:

  • To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
  • Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. Add to the cooled vegetable mixture, then add the beef, pork, eggs, and bread crumbs. Season with salt and pepper and mix just to combine. Coat a 9x13-inch baking dish with oil and form the meat mixture into a loaf.
  • To make the glaze: In a measuring cup, stir together the ketchup, Worcestershire, and mustard. Brush a little glaze on the meatloaf and bake until the internal temperature reaches 160 degrees F, about 1 hour 15 minutes, brushing three or four times with the glaze until you've used it all. Let meatloaf rest at least 15 minutes before slicing.

50'S CLASSIC MEATLOAF

Back in the 50's and 60's this was a weekly staple for family. If you want to fancy it up, substitute green peppers with 1/4 cup red peppers and 1/4 cup green peppers.

  • After meatloaf is done cooking brush with meatloaf glaze and bake another 10 minutes.
  • Let meatloaf set 10 minutes before serving.

2 eggs, lightly beaten

1 large clove garlic, pressed
1/2 cup minced sweet onion
1/4 cup minced green bell pepper
1 teaspoon dried oregano, crumbled
1 teaspoon kosher salt
Freshly ground pepper to taste
1 tablespoon Worcestershire sauce
1 package dry onion soup mix
1/2 cup milk
1 can (6 ounces) tomato paste, divided use
2 -4 strips bacon, cut in half (optional)

Steps:

  • Preheat oven to 350 degrees. 2. Combine ground beef, pork sausage, eggs, breadcrumbs, garlic, onion, bell pepper, oregano, salt, pepper, Worcestershire sauce, soup mix, milk and half the tomato paste. Gently mix only until combined. Do not overmix or the mixture will become tough. 3. Form into a loaf. Cover with the remaining tomato paste. Weave the bacon strips over the top. 4. Bake 1 hour. Allow the meatloaf to rest 15 minutes before slicing to serve.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.
