A light, crispy batter that turns golden and bubbly. Fantastic for frying fish, calamari rings, prawns, shellfish, pineapple or banana fritters and good old Aussie potato cakes.

Steps:
- Using a fork, mix the melted butter through the flour and salt.
- Add the soda water or beer and mix. Don't worry about the lumps of butter. They disappear while frying and make the crispy batter bubbly.
- To make Aussie potato cakes, take a large potato and cut into thin, large slices.
- Coat with flour and then dip into the batter before frying.

In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

- Mix all dry ingredients in a bowl.
- In a jug, make an even mix of the White Wine Vinegar and Soda Water/Beer.
- Add to the dry mix until the batter becomes the consistency of thick paint.
- Leave batter in the fridge to settle for about 45 minutes.
- Before battering your fish remember to coat fish in flour.
- TIP: I like to add coarsely ground black pepper to the batter. Probably about one teaspoon full. This acts as a kind of garnish/decoration when the fish is cooked.

MY PERFECT FISH BATTER
I've used dozens of recipes over the years, searching for the "perfect fish batter" for fried fish. The many variations of "beer batter" always fell short for me (kinda strange taste, but then, I don't like beer). Actual Tempura batter just didn't have quite the substance I wanted either, although it was closer to what I wanted. I can't even eat some of the gummy, nasty battered fish I've been served and have made. This is honestly the best fish I've ever eaten, bar none, and that includes everyplace on the Pacific coast I've paid to eat. This is light, puffy, delicate and sticks to the fish. The fish must be very cold and very dry. This will batter about 1 1/3 lbs of fish fillets. It's wonderful for shrimp too.

- Use a med. bowl, and with a wire whisk, whisk dry ingredients to be sure they are well blended. Have a large skillet ready with and inch of veg. oil nearly smoking hot.
- Squeeze half a juicy lemon into a measuring cup, and fill to the 3/4 line with ICE cold water. Mix quickly into the dry ingredients, till only small lumps remain. It does not need to be smooth. With tongs, drag each piece of fish through the batter till well coated on each side. Lay the piece in the hot oil, and continue.
- Do not crowd the pieces. You can do this in batches, keeping cooked fish on a rack in a warm oven. It will take a very short time, depending on the thickness of the fish. Do not overcook. Serve with lemon slices.

DAD'S FISH BATTER
My dad got this recipe from somewhere a long, long time ago in the 20's or 30's and passed it on to Mom and she passed it on to me in the 60's. YOU Just multiply the amounts according to how much fish that you have to fry. I tried to post a photo for the recipes but the '"'powers that be''" will not let it be posted on the recipes. So I will not do any post of photos here, no recognition for it.

- Sift dry ingredients.
- Add water and mix well. whisk until you have a smooth batter, if needed add a bit more water but do not make it too thin. (or use some beer if you like too.my up date1968).
- Use to coat fish or chicken filets. (not too thick or thin on the coating).
- Cover the fish completely.
- Deep fry until a nice golden brown.
- SOME TIP's: If you didn't have a deep-fryer to fry the fish in, A shallow fry pan can be use, And add some oil to the pan, and I was all way surprised the batter stayed on the fish. Excellent!
- I did some chicken tenders, then some fresh flounder fillets, then some shrimp. It was all incredible! Next time I will make some hush puppies, and it will be just like eating at the restaurant!
- This really was an excellent batter. I made it up an hour before I used it as I have heard that this makes batter 'stick' better to whatever you're frying. Anyway, it stuck. Light, crisp and not greasy.
- For fun I tried this on onion rings and I took some sweet banana peppers and split them and removed the seeds and battered them and fried to a golden brown, excellent. I think you could batter any thing with this recipe. THANK's DAD !
- NOTE: After reading some of the other reviews, they stated the batter was to running. I added a 1/2 cup of corn meal to the batter, also some garlic & onion powder to taste and/or fish seasoning. I also let the fish sit in the batter for 30 minute This made the batter a bit thicker on the fish and made it stick well. My entire family loved this recipe. I am also expected to make this recipe for my neighbor. She buys the fish I cook it. We now have an awesome batter for our fish. WE all Love IT.
