1 POTATO/2 POTATO & SAUSAGE



1 Potato/2 Potato & Sausage image

I thought of this recipe when there wasn't that much in the house to cook. Boy, it really turned out good.

1 lb bulk sausage, browned and broken
1/2 can(s) evaporated milk
2-3 thinly sliced white potatoes
1-2 thinly slice sweet potatoes
1 can(s) cheddar cheese soup
1/4 c flour
1/4 tsp salt

Steps:

  • 1. Mix flour and salt together. Cover bottom of casserole dish with sliced potatoes. sprinkle with half of the flour and salt. Put undiluted soup on top in dollops, layer with sausage. Put sweet potatoes over all. (Doesn't need to cover entirely).
  • 2. Cover with foil. Bake in 350° oven for about 1 hour. Pour evaporated milk over all, cover and bake another hour or until potatoes are tender. Serve with a salad and enjoy.
  • 3. You could add any other veggies or flavors you like to this recipe. Mushrooms? Rosemary? Acorn squash?

If you like meatballs or meatloaf, you would love this sausage. DH's great grandparents all came from Sweden so he grew up with potato sausage. Our family loves it! Fortunately when we are in Wisconsin we can buy the best potato sausage only about 20 miles from here. You buy it frozen and defrost it before baking. And when I was still working, I would set it up in my oven using a frozen potato sausage on time delay.

Steps:

  • Preheat oven to 350 degrees.
  • Line casserole with foil.
  • Cut a few slits into potato sausage.
  • Put into casserole and add 1/4 cup water.
  • Bake, uncovered, for 1 hour and 15 minutes.

3 tablespoons olive oil
1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

Delicious Swedish Potato Sausage (Värmlandskorv/Potatiskorv) made with ground pork, ground beef, diced potatoes, milk, and a few basic spices. Just like grandma makes them!

3 lbs ground pork
2 lbs ground beef
5 lbs potatoes, finely diced
5 onions, finely diced
4 tbsp salt
3 tsp allspice
2 tsp pepper
½ cup milk
sausage or hot dog casings

Steps:

  • In a large bowl, soak the sausage casings in water for 4-6 minutes. Rinse with cold water, then set aside.
  • In a large bowl, mix all the filling ingredients until well combined. Feel free to also grind the potatoes and onions along with the meat beforehand (using a grinder or grinder attachment) for a more uniform texture.
  • Stuff the potato sausage filling into the prepared casings using a sausage stuffer. Don't overfill the casings to prevant breakage. Once stuffed, tie the ends of the casings and make sausage links by twisting the casing where you want the links to end.
  • Prick the top of each sausage with a toothpick.
  • In a large pot, boil water (just enough to cover the sausages).
  • Once the water comes to a rolling boil, turn the heat down to a low simmer. Place the potato sausages in a single layer and boil for about 14-17 minutes, or until the sausage is cooked through.
  • Optionally, you can sear the sausages in a large skillet for golden-brown potato sausages. Add butter to a skillet on medium-high heat, and cook the sausages for 2-3 minutes per side, or until they are golden brown. ENJOY!

1/2 cup potato, shredded
1/2 cup onion, diced
3/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon allspice
1/8 teaspoon dried thyme

Steps:

  • Mix all ingredients together by hand.
  • Shape into 8 patties.
  • Fry in a lightly oiled skillet on medium-low heat until well browned. About 10 minutes per side. Cook on medium low to ensure slow and thorough cooking all the way to the inside.
  • Check the inside of one patty to ensure they are no longer pink inside.
  • Serve hot.

15 pounds potatoes, peeled
3 pounds onions, peeled
1 boneless pork shoulder butt roast (3 pounds)
3 pounds ground beef
1/3 cup all-purpose flour
5 to 7 tablespoons salt
4 tablespoons pepper
3 teaspoons ground allspice
1-1/2 teaspoons ground nutmeg
1/2 to 3/4 cup milk

Steps:

  • In a food grinder using the coarse disc, alternately process the potatoes, onions and pork. Combine with the ground beef. Mix until well distributed. , Combine all dry ingredients and sprinkle over potato/meat mixture. Add milk and mix well. , Sausage may be made into patties or stuffed into hog casings. Using immediately or freeze in serving-size portions.
