THANKSGIVING SKILLET PIZZA

Thanksgiving Skillet Pizza image

Transform your Thanksgiving leftovers into this irresistible pizza, with mashed potatoes taking the place of traditional tomato sauce. Cooking in a cast-iron skillet ensures a super-crispy crust.

Categories     22-Minute Meals     Thanksgiving     leftovers     turkey     Pizza     Potato     Sweet Potato/Yam     Cranberry Sauce     Mozzarella     Dinner

Yield Makes 1 (12") pizza

Number Of Ingredients 13

All-purpose flour (for surface)
8 ounces prepared pizza dough, room temperature
3 tablespoons olive oil, divided
1 1/2 cups shredded cooked turkey or rotisserie chicken
1/4 cup cranberry sauce, plus more for serving (optional)
1 cup mashed white or sweet potatoes
Kosher salt, freshly ground black pepper
2 cups shredded mozzarella, cheddar, and/or Fontina cheese (about 6 ounces), divided
1 cup cooked vegetables, such as green beans, Brussels sprouts, sautéed greens, carrots, squash, or mushrooms
1/2 cup sliced red onion
Pinch crushed red pepper flakes (optional)
Special Equipment
A 12-inch cast-iron skillet

Steps:

  • Place a rack in upper third of oven; preheat to 500°F. On a lightly floured surface, roll dough to a 12" round (if dough springs back, cover with plastic and let rest 5 minutes, then roll again, resting as needed).
  • Heat 2 Tbsp. oil in a cast-iron skillet over medium-high until very hot. Carefully transfer dough to skillet. Brush top of dough with remaining 1 Tbsp. oil. Cook, shaking pan occasionally and turning pan to avoid hot spots, until bottom of dough is golden brown and crispy, 3-4 minutes.
  • Meanwhile, toss turkey with 1/4 cup cranberry sauce, if using, in a medium bowl.
  • Remove skillet from heat. Using a large flat spatula, flip dough. Spread potatoes over dough, leaving a 3/4" border on all sides; season with salt and pepper. Top with 1 cup cheese, then turkey mixture, vegetables, and onion. Top with remaining 1 cup cheese and red pepper flakes, if using. Bake pizza until dough is golden brown and cheese is melted, 6-8 minutes.
  • Transfer pizza to a cutting board and cut into wedges. Serve with additional cranberry sauce alongside, if using.

EASY PIZZA POTATOES

Easy Pizza Potatoes image

Give the humble baked spud a makeover with this easy pizza potatoes recipe. They are simple to make and take barely any active time to cook.

Provided by Meghan Yager

Categories     Potatoes

Time 1h25m

Number Of Ingredients 16

4 large Russet potatoes, scrubbed and dried
1 tsp olive oil
1 tsp salt
1 cup your favorite pasta sauce
1 cup shredded mozzarella cheese
All-natural chicken sausage links
Pepperoni
Canadian ham
Onion
Bell pepper
Pineapple
Sliced olives
Sliced jalapenos
Grated Parmesan cheese
Red pepper flakes
Fresh herbs

Steps:

  • Preheat oven to 375˚F. Place one baking rack in the center of oven, with the other rack just below it.
  • Pierce the potatoes a few times, using a sharp knife. Rub the potatoes evenly with olive oil. Season the outside with salt. Place potatoes directly on the middle rack. Place a baking sheet underneath the potatoes on the second rack.
  • Bake for about 1 hour, or until they can be pierced easily with a fork. The exact baking time will depend on the size of your potatoes.
  • Remove from oven and let cool for 5 minutes, until they can be handled safely. Leave the oven on.
  • While potatoes cool, if using sausage, roughly chop links into 1-inch pieces. Heat the sausage according to package directions. I prefer to warm mine in a skillet over medium-high heat, but you can also warm in the microwave.
  • Slice each potato down the center and gently push inward from each end to open. Place potatoes cut side up in a 9-by-9-inch baking dish.
  • Add 1/3 cup of chopped warm sausage to each potato, if using, as well as whatever other toppings you would like to use, for a max 1/2 cup filling each.
  • Spoon 1/4 cup sauce over each potato, then sprinkle with 1/4 cup cheese. Place pan in the oven and bake another 5 minutes, or until cheese is melted. Serve warm.

SKILLET POTATOES

Skillet Potatoes image

Time 1h20m

Yield 8 servings

Number Of Ingredients 5

8 tablespoons (1 stick) butter
4 cloves garlic, chopped
2 russet potatoes, skin left on
Salt
3 sprigs fresh thyme leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 10-inch cast-iron or nonstick skillet over low heat. Add the butter; when melted, add the garlic and cook until soft but not browned, 3 to 4 minutes.
  • Slice the potatoes on a mandoline set to 3mm (about the thickness of 3 credit cards). Place the potatoes in a large bowl; add the melted garlic butter and sprinkle with salt. Toss well to ensure all the slices are coated.
  • Place the skillet used for the butter over low heat. Carefully layer the potato slices in the skillet, overlapping them in a circular pattern starting from the edge of the skillet and working towards the center. Continue until you have about five layers of potatoes.
  • Set a medium pot lid (6 to 8 inches wide) on directly on top of the potatoes. Then place a heavy pot on top of the lid to weight it down. Adjust the heat to medium-low and cook for about 15 minutes on the stovetop, then transfer to the oven and bake until the bottom is golden brown and crispy, another 15 minutes. (You can use a spatula to peek at the bottom to make sure it's golden brown.)
  • Remove the skillet from the oven and let the potatoes rest for 15 minutes. Remove the pot and lid, and place a plate upside down on the skillet. Using oven mitts, carefully turn the skillet over to release the potatoes onto the plate. Garnish with thyme leaves and serve.

ROASTED PIZZA POTATOES

Roasted Pizza Potatoes image

Provided by Bev Weidner

Categories     side-dish

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 8

2 1/2 pounds Yukon gold potatoes, cut into 1/2- to 3/4-inch bites (I used Klondike Goldust for these)
2 teaspoons dried oregano (or dried pizza seasoning)
Coarse salt
1 to 2 tablespoons extra-virgin olive oil
One 8-ounce block mozzarella cheese, grated
About 15 pepperoni slices
Pizza sauce, for serving
1 tablespoon chopped fresh parsley or chives, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the potatoes in a 9-by-13-inch baking dish and season with the dried oregano and a good pinch of salt. Drizzle with the oil and toss to coat with your fingers. Roast for about 1 hour. (I went 1 hour and 10 minutes, just for extra browning.)
  • Remove the potatoes from the oven and switch the oven to broil.
  • Sprinkle the grated cheese over the potatoes and arrange the pepperoni in a single layer over the cheese. Broil for 2 to 3 minutes; don't take your eyes off it (see Cook's Note)! This happens fast, and all we want is browning and bubbling, and for the pepperonis to crisp and curl. Serve immediately with pizza sauce and a sprinkle of parsley or chives!

  • Boil the potatoes for approx 12 min, you want them semi soft and easy to cut into thin slices but not too soft or they will break.. I peeled my potatoes but you don't have to. Once the potatoes have cooled down you can cut them into thin slices.
  • Preheat oven to 475F.. I used a 12 inch skillet, lightly brush a little olive oil on the bottom of the skillet.
  • First make the 2 ingredinet dough with the flour & yogurt. If you find it too sticky add a little extra flour and make sure you use flour on your surface and the rolling pin.
  • Roll out the dough so it is big enough to fit into your skillet, you don't want the dough too thick and if it is not a perfect circle it's ok you can fix the edges once you lay the dough into the skillet.

  • Add raw potato cubes to a large saucepan; pour in just enough water to cover them. Add a generous pinch of salt. Bring to boil over medium-high heat. Reduce heat slightly and simmer for 7-9 minutes, until potatoes are tender on the outside, but still firm in the center. With the lid, carefully strain out the water.
  • Cover saucepan with lid and, with potholders on each hand, grip the sides of the saucepan, securing the lid. Shake vigorously. Check to see if the potatoes look fuzzy. If not, shake again.
  • Add olive oil to a large, hot cast iron skillet set over medium heat. Add potatoes; with a spatula, gently spread into a single layer. Without stirring, allow potatoes to crisp on one side. Once crisp, turn with spatula and again spread into a single layer to crisp. Repeat process until potatoes are crisp on all sides, 15 to 20 minutes total.

  • To a floured work surface, add the dough and roll out into a 10 to 12-inch diameter circle. If dough is overly springy and resistant to rolling easily, allow it to rest at room temperature for another 30 minutes or so.
  • Flip the dough, turn the heat to low, add the pizza sauce (leave a bare 1/2-inch perimeter), evenly top with the cheese, pepperoni, cover skillet with a lid, and cook until the cheese has melted, about 2 to 3 minutes. Alternatively, if you prefer your cheese to be more browned + melted rather than just melted (which is what I prefer), place the skillet underneath the broiler for about 2 minutes, or until the cheese is as browned as desired. If you're broiling, watch it very closely so it doesn't burn.
