My mother use to make Hamburger Steak with brown gravy and mashed potatoes. I mix it up occasionally in my kitchen and using the same basic recipe I add cheese...

Number Of Ingredients 7

1 1/2 lb lean hamburger meat
1/2 c yellow bell pepper finely chopped
1/2 c onion
1 tsp salt
1/2 tsp black pepper
2 Tbsp olive oil
1/4 c cheese sliced to fit

Steps:

  • 1. Mix all the ingredients together except the oil and the cheese. Heat oil in a skillet. Form meat mixture into 8 balls and flatten into patties.
  • 2. Slice cheese and lay a piece of cheese on 4 of the meat patties and cover with another meat patty. Seal by pinching edges together.
  • 3. Cook in hot oil on medium for 4 to 6 minutes on each side. Remove and plate.

1 tablespoon finely chopped onion
1 tablespoon ketchup
1 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
1/4 cup finely shredded cheddar cheese
2 hamburger buns, split
Optional: Lettuce leaves and tomato slices

Steps:

  • In a small bowl, combine the first 5 ingredients. Crumble beef over mixture and mix well. Shape into 4 thin patties. Sprinkle cheese over 2 patties; top with remaining patties and press edges firmly to seal. , Grill burgers, covered, over medium heat 5-6 minutes on each side or until a thermometer reads 160°. Serve on buns, with lettuce and tomato if desired.

3 pounds ground beef chuck
2 tablespoons plus 2 teaspoons Worcestershire sauce
Coarse salt and ground pepper
4 ounces blue cheese (or other soft cheese, such as Brie)
Oil, for grates
8 rolls or buns, split
2 cups packed baby spinach
2 beefsteak tomatoes, cut into 8 slices
Sauteed mushrooms
Grainy mustard (optional)
Roasted Red-Pepper Sauce

Steps:

  • Heat grill to medium-high. In a large bowl, gently fold together beef, Worcestershire sauce, 1 tablespoon salt, and 1 teaspoon pepper. Form into 8 equal-size mounds.
  • Shape cheese into 8 equal-size disks. Press a small well in the center of each beef mound. Place cheese in well; wrap beef around cheese, pinching to seal.
  • Lightly oil grates. Place burgers on grill; cover. Cook until grill marks are visible on first side, 4 to 6 minutes. Turn burgers with a spatula; cook until grill marks are visible on other side and meat is just slightly pink in the middle, 4 to 6 minutes more for medium-rare.
  • To serve, layer bottom roll halves with spinach, burgers, tomato, and mushrooms, if using, dividing evenly. Spreadtop roll half with mustard and Roasted Red-Pepper Sauce, as desired.

POOR-MAN'S STEAK (IE: STUFFED HAMBURGER)

This poor-man's steak is just a hearty stuffed hamburger patty. I've grilled onions and peppers and stuffed them into a hamburger patty with cheese. The result is delightful and delicious. #TexasHomesteader

2 lbs ground meat ((I used ground venison))
Chopped onions/bell peppers to taste ((I used about 1/2 cup total))
Chopped jalapenos to taste ((I used 3))
4 oz Cheese cut in a cube for each patty ((I used pepper jack cheese))
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder

Steps:

  • Grill the onions, bell peppers & jalapenos on a griddle coated with bacon grease & set aside.
  • Season ground beef with 1 teaspoon salt, 1/2 teaspoon of pepper & 1/2 teaspoon onion powder.
  • Separate the 2 lbs of ground meat into sections of just under 1/4 lb each, resulting in 10 halves (5 burgers).
  • Flatten meat sections & add the sautéed peppers & onions to the middle of half the patties. Add a small cube of cheese on top of the sautéed veggies.
  • Fry each side until done - about 5-6 minutes each side.
  • Serve them on a bed of fried potatoes and ladle on brown gravy.

2 pounds ground beef
1 teaspoon salt
1/2 teaspoon pepper
8 ounces blue cheese, cut into 1-inch cubes
8 ounces Pimiento Cheese Spread, recipe follows
8 ounces mozzarella, cut into 1-inch cubes
4 hamburger buns
Lettuce
Sliced tomatoes
Grilled sweet onions
Sliced pickles
Two 7-ounce jars canned, sliced pimientos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise

Steps:

  • Mix the ground beef, salt and pepper in a large bowl and form the mixture into 8 equal-size balls. Press a cube of desired cheese into the center of each ball and cover completely with meat. Form the balls into hamburger patties, about 1/4-inch thick. Grill burgers until desired doneness. Top with lettuce, tomatoes, onions and pickles as desired on a toasted bun.
  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise.

1 slice bread (day old) or 1 bun (day old)
1 lb choice 90% lean ground beef (10% fat)
1/2 onion, chopped (optional)
1 garlic clove, minced
1 egg
1/2 teaspoon dried oregano
1/2 teaspoon chili powder
1/2 teaspoon salt (or to taste)
1/8 teaspoon pepper (or to taste)
cayenne pepper, to taste
1/8 lb American cheese, grated

Steps:

  • Soak bread in water.
  • In a skillet, cook onion and garlic, if desired.
  • Strain water off of bread and crumble bread into meat.
  • Add eggs, onion, garlic, and seasonings.

1 can (6 ounces) pineapple juice
1 tablespoon Worcestershire sauce
1 small onion, chopped

STUFFING:
1/2 cup soft bread crumbs
1/2 cup shredded cheddar cheese

1/4 teaspoon dried minced garlic
1 tablespoon vegetable oil

Steps:

  • Flatten steak to 1/4-in. thickness. In a bowl, combine the pineapple juice, Worcestershire sauce, onion, thyme, rosemary, salt and pepper. Pour half of the marinade into a resealable plastic bag; add meat. Seal bag and turn to coat; refrigerate for 4-8 hours. Cover and refrigerate remaining pineapple juice mixture., Drain and discard marinade from meat. For stuffing, in a bowl, combine the bread crumbs, cheese, pecans, onion, parsley and garlic. Sprinkle stuffing over meat. Roll up jelly-roll style, starting with a short side. Tie with kitchen string., In a small skillet, brown meat in oil until browned on all sides. There's a great flavor to these cheese-packed burgers, with a subtle hint of spices. The person who posted this recipe said "we like to cook them on the grill but they can be broiled to perfection, too". I found this recipe in Reminisce Extra magazine. When I made these hamburgers I mixed the cheeses right in the burger mix. My family really liked these. I thought maybe these could use a bit more flavor.
