THE BEST FIREHOUSE CHILI
A friend gave this recipe to me and she got it off the internet as it was very similar to her husband's chile who happens to be a fire man. Refrigerate over night in pot before eating. Not essential, but I think it tastes better, as all of the ingredients blend and meld together nicely.

Steps:
- In a skillet, brown the ground meat, remove and drain well. In the same pan fry the onions, garlic, and peppers, until the onions are translucent and peppers begin to wilt.
- In a large stew pot or Dutch oven, add meat and vegetables and stir over low heat.
- Add spices and seasonings, stir.
- Add crushed tomatoes.
- Add kidney beans that have been drained and rinsed.
- Add beer, stir.
- Add water or stock (if needed) until desired consistency is reached.
- Bring to a boil, reduce heat to low.
- Simmer for approximately 1 ½ - 2 hours, stirring every so often.
- Serve over rice with a dollop of sour cream and shredded cheese.
FIREHOUSE CHILI
Steps:
- In a Dutch oven, heat canola oil over medium heat. Brown beef in batches, crumbling meat, until no longer pink; drain and set aside. Add onions and green pepper; cook until tender. Return meat to Dutch oven. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 1-1/2 hours.

FIREHOUSE CHILI
This is an excellent chili recipe. My husband is a chili lover and requests this about once a week in the Winter. It's a little on the hot/spicy side but you can adjust the amount of seasonings if you want it milder. I like to serve this with cornbread muffins and/or crackers. (Estimated prep time. Although it calls for cooking the chili 2 hours you can cook it on low for several hours).

Steps:
- Heat oil in a large pot. Brown together ground beef, onion and garlic; drain well.
- Add all the spices along with the Ro-tel tomatoes, tomato sauce, kidney beans and tomato juice. Mix well and bring to a boil.
- Simmer 1/2 hour uncovered and 1-1/2 hours covered. (If too thick you can add additional tomato juice or water).

SECRET FIRESIDE CHILI
One of my coworkers shared his secret chili recipe with me. Whatever you do do not share it with anyone, ok??? I grew up with kidney beans in the chili ...... I hated beans until I tried this chili with actual chili beans. This chili is great for chili dogs, over noodles or just topped with a little shredded cheddar cheese. I have an option written in the instructions for a tamer version for the weaker of heart.

Steps:
- Fry the meat, onions, green pepper and garlic until the meat is brown.
- Add the remaining ingredients (except Chili Beans).
- Bring to a boil.
- Reduce heat and simmer 2 hours.
- Add Beans and heat through.
- For tamer version use 1 T Chili Powder, 1 tsp Cumin and Mild (Reg) Chili Beans.
- Garnish with shredded cheddar cheese.

OLD-FASHIONED FIRESIDE CHILI
Comfort food is making a strong resurgence and this is one of those recipes, simple, yet oh, so comforting!! I found this in our regional magazine "Saltscapes"

Steps:
- In a large skillet, over medium heat brown ground beef together with onion, crushed red pepper, garlic and black pepper. Drain off any fat and transfer to a large Dutch oven. Stir in mushrooms, baked beans, kidney beans, (along with liquid), tomato paste, honey, carrots, celery, green pepper, red pepper, beer, and BBQ sauce.
- Bring to 350°F When bubbles begin to form arund the edges, lower the temperature and simmer for 2-3 hours. Delicious with homemade cornbread!

DAVE'S OLD FASHIONED CHILI
I have a 1994 edition of Colorado Cooks for Education. There are over 400 celebrity contributors, one of which is Dave Thomas, founder of Wendy's. Here is his recipe for chili. I think it's different than what is served today! I have not tried this recipe to compare, but thought it would be interesting to include it for all us chili fans.

- In a frying pan, brown ground beef. Drain. Add remaining ingredients and drained ground beef into a 6 quart pot. Cover and simmer 1 to 1 1/2 hours, stirring every 15 minutes.
- A note added: "Dave likes to add fresh, chopped onions on top of his chili serving.".
- My note: I'm guessing that by "small red beans" he meant pinto beans.
- This yields 16 (8 ounce) servings.
